Thanks for showing how they prepare the batter and explaining the crispy thing in your description. I’ve never seen that before and I’ve watched lots of videos of jianbing being made. It seems like there are many variations for jianbing. This one look especially delicious and filling. I like the videos where the crepe machine spins around.
I've seen other videos showing jing bing being made, and they didn't explain what the crispy stuff in the middle was. Well, I now know it's a crispy fried dough, so thank you for mentioning what it is. I'd love to visit this side of the world one day and try some of the foods you put on your channel. :)
The refined powder is kneaded into dough with water and a little salt. Some merchants will add some sesame seeds and roll them into thin slices, Cut into pieces and fry in oil pan.

看到开头是绿豆面就要点一个赞!白面吃着黏糊,糊嘴。绿豆面才干爽香脆。白面便宜且熟得快所以很多地方都是用白面摊。不过这家是纯绿豆面的,可以适量添加白面粉。另外天津有的煎饼摊和面时会放一点羊油,以去除豆腥味增加香味。煎饼不论是夹果蓖还是果子都好吃,我个人喜欢夹果蓖的。

正宗的是各種雜糧面,聽長輩說燕麥、高粱、小麥、大麥、玉米混合叫做煎餅,內容隨個人家庭喜好包裹著吃。

我是北京人,专门去吃过这家店。是的,样子看起来还算像,但说实话味道非常令人失望,完全不是煎饼果子的味道,很奇怪单薄的甜味,对北方人来说就难以下咽的难吃。。。又试过其他几家自称正宗的煎饼店,情形都差不多,只有一个大陆人的摊位还可以吧,其他不是口感不对就是味道怪甜,我放弃了。。。
@@snowflake_xyzabc 大概是配合我們台灣人的口味,台灣早年糖業發達,尤其南部的農人和勞工喜歡吃甜一點的東西補充熱量。還有在稻米很貴的年代,許多人的主食是番薯,也是很甜的食物。現在雖然生活條件改變了,飲食習慣還是留著。台灣人去大陸常會覺得食物太鹹太辣。
@@commenter4898 正宗的天津煎饼果子应该主要是甜面酱味道,我吃过台湾的甜面酱也不够甜,应该甜一点总之是一种又甜又咸的香味。

天津煎饼果子会在绿豆面里面掺一些棒子面(玉米面)。你们做的是改良了的煎饼,不过比天津煎饼更加有营养而且还有蔬菜,并且不像天津煎饼那么咸,真材实料,值得推广。
一个好好的煎饼果子被做成了这样,真是浪费

In south India where I am from, mung bean crepes are popular . We eat them with a side of coconut chutney and or sweet and sour ginger chutney . Yum!

我也是耶!印象中的煎饼果子就是在上海吃的那种放生菜、火腿肠、鸡蛋、脆皮、很香的。面皮好脆的

真是改良版的了,第一次见加芝士的,哈哈
薄脆好像还不够薄,天津叫果篦儿,能透过去看见人影的那种,在天津的外地人做的最棒,天津的煎饼摊子附近一般都有个油条摊儿,油条(果子)薄脆(馃箅儿)都是卖10个拿10个,一来不压货,二来新鲜够脆
补充下,天津的不会放蔬菜,只放葱,可选先放-熟葱,或者后面放-生葱,北方是大葱,有的人喜欢熟的,不会有口气,还不会损失香味。有的会加一些黄豆面或者小米面(总之千万不要加面粉会变黏答答的不爽口),更传统的会用羊骨头汤和面,不过现在很少有这么讲究的了
餡料算是因應台灣的台式口味😂

這家的辣醬,辣度比較直接/尖銳,不是重慶小麵或是湖南剁椒那種複合辣。
炸菓子部份是目前高雄最好的,外帶10分鐘後才吃,不硬不糊爛不皮艮。
可以自備雞蛋。

NICE and very good
薄片或者叫脆饼或者叫薄脆!但这个只是吃法之一。其实煎饼果子一直有两个流派,脆饼流派和油条流派!个人觉得油条更好吃!这家居然用的是绿豆面,还蛮正宗的!但是包的东西实在是有点魔幻。
其他的餡料挺台灣化的,連法式可麗餅都包這些
@@kgame_ 是的,而且三个鸡蛋着实有点多!标准的煎饼果子就是鸡蛋甜酱辣酱榨菜油条或者脆饼!大陆还有包里脊肉,香肠土豆丝辣条的我已经觉得很魔幻了!这家居然完全是超出了我的想象!
我倒覺得這家店挺跟得上潮流的,起司玉米還加黃金泡菜,完全對年輕人的口味
