[Ingredients] 3 servings
◎Caramel Sauce
40g granulated sugar
2 tbsp water
◎Custard Base
300ml milk
vanilla beans
2 whole eggs
1 egg yolk
40g granulated sugar
◎Topping
whipped cream
3 cherry
[Instructions]
1. In a small saucepan, heat granulated sugar and 1 tbsp of water over medium heat until the sugar dissolves and starts to bubble. Reduce the heat, keep cooking until it turns a deep amber color. Turn off the heat, add 1 tbsp of water, and mix.
2. Pour the sauce into pudding molds.
3. In a small saucepan, add milk and vanilla beans, warm until just before boiling.
4. In a large bowl, add eggs, granulated sugar, and strained warmed milk, whisk all together.
5. Strain the custard mixture, pour it into the pudding molds.
6. Heat with a torch to remove air bubbles on the surface and cover each mold with aluminum foil.
7. Place the molds on a heat-resistant tray, pour hot water at 60°C/140°F to a height of 1/4 of the mold.
8. Bake in the preheated oven at 160°C/320°F for 30-40 minutes.
9. Let the molds cool at room temperature, then refrigerate for 1 hour.
10. Served topped with whipped cream and cherries, if desired.
