    [Rainbow Cake Pops Ingredients] 15 servings
    ◎Rainbow Cake
    60 g unsalted butter, room temperature
    80 g granulated sugar
    1/2 tsp vanilla extract
    1 large egg
    pinch of salt
    120 g all-purpose flour
    1 1/2 tsp baking powder
    120 ml milk
    food coloring
    100 g white chocolate
    65 g whipping cream
    ◎Coating
    200 g white chocolate
    sprinkle
    [Instructions]
    1. In a large bowl, whisk unsalted butter and granulated sugar together until fluffy.
    2. Add vanilla extract, sugar, and egg, and mix well.
    3. Combine all-purpose flour and baking powder, sift half into the bowl, and mix. Add half the milk and mix. Sift in the rest of the flour and mix well, then add the rest of the milk and mix.
    4. Divide the batter into 6 bowls, and color them in rainbow colors. Pour the batter into the cupcake liners.
    5. Bake them in the oven preheated to 350F for 18 minutes.
    6. When the cakes cool completely, crumble them.
    7. In a small saucepan, heat white chocolate and whipping cream over medium heat and melt the chocolate completely. Do not boil.
    8. Divide the chocolate mixture evenly between the cake. Stir until the cake is fully coated in the chocolate mixture.
    9. Place a sheet of plastic wrap, and stack small discs of each color of cake on top of each other in order of the rainbow. Wrap the plastic wrap around the cake and shape it into a ball. Place in the freezer until firm for 20 minutes.
    10. Melt the white chocolate for the coating in a hot water bath. Dip the tip of lollipop sticks into the chocolate, and stick one into each cake pop. Return them to the freezer for the chocolate to set for 5 minutes.
    11. Dunk the cake pops into the melted chocolate, gently tapping the lollipop stick to remove any excess chocolate. Decorate with sprinkles onto the top of the cake pops.
    12. Stick into a cake pop holder, and fridge for the chocolate to set.
