    [Ingredients] 6 inch round
    200g cream cheese
    20g unsalted butter
    50ml milk
    3 eggs
    30g cake flour
    10g corn starch
    1 tsp lemon juice
    60g granulated sugar
    30g raisin
    [Instructions]
    ◎Preparation
    1.Line a round pan with a greased parchment paper with butter. Put the raisins in the bottom.
    2.Separate 3 eggs into egg yolks and egg whites. Place the egg whites in the freezer.
    ◎Make the Batter
    1.In a medium bowl, add cream cheese, unsalted butter, and milk. Melt them in a water bath until smooth.
    2.Add egg yolks, mix well with a whisk.
    3.Sift together the cake flour and cornstarch into the bowl, and add the lemon juice.
    4.Strain the batter to make it smooth.
    5.Mix dried egg whites and granulated sugar. Whisk to make a meringue until soft peaks form.
    6.Add the meringue to the batter in 3 portions and mix gently with a whisk until there are no white lumps. Be careful not to overmix.
    7.Pour the batter into the round pan. Lift the pan a little and drop it several times to remove air bubbles. Gently stir with a skewer to remove more air bubbles.
    ◎Bake
    1.Place the pan in an oven tray filled with hot water and bake in a preheated oven at 190 ° C / 385 ° F for 20-25 minutes (until the surface is lightly browned). Then open the oven door for about 10 seconds and rotate the mold if there is uneven baking. Drop the temperature to 110 ° C / 230 ° F and bake for another hour.
    2.Once the cake is cooled down, turn the pan over and put it on a plate. Ready to eat!

      焼き上がりにオーブンからすぐ取り出すと、急激な温度の変化で萎みやすくなります。扉を少し開けて10分ほど置いてから取り出すと膨らみをキープできます😺
