  • I’ll teach you one way to cook Chicken Khao Poon, a traditional Lao coconut curry soup. THIS is my #1 favorite food of all time. If I could pick one dish to eat forever... this is it. I love how flavorful, rich, creamy and cozy it tastes. It’s perfect for fall and winter weather. And its also commonly served at parties in my family. In this video I chose to use chicken thigh and chicken feet as my protein. Stick around until the end to see how I cook the vermicelli noodle and prep garnish. This soup can be frozen for up to 6 months.

    Noodle:
    3-4 Pack Vermicelli Noodle
    Garnish:
    1/2 Small Green Cabbage
    1/2 Small Purple Cabbage
    1 Large Carrot
    Handful Mint Leaves
    3 Limes
    Broth:
    6 Quarts Water
    8 Chicken Thighs
    1.5 lb Chicken Feet
    1 Large Bamboo Tip (If fresh, boiled in 1 Tsp salt)
    2 Teaspoon Salt
    2 Lemongrass Stalk
    15 Kaffir Leaves
    2 Inch Galangal
    6 Thai Pepper
    1 Shallot
    2 Garlic Bulbs (1 bruised / 1 minced)
    1 Tablespoon Vegetable Oil
    2 Can Red Curry Paste
    2 Can Coconut Milk
    1 Can Coconut Cream
    3 Tablespoon Chicken Bouillon Powder
    1/4 Cup Fish Sauce
    1/4 Cup Padaek
    1 Tablespoon Oyster Sauce
    1 Tablespoon Sugar

      That's so sweet. Thank you. I try to keep my videos as short as possible. The TH-cam algorithm prefers long videos so many content creators stretch out the length of their videos to become monetized or generate more money. But, since that's not my #1 goal I keep it simple and short for a better viewer experience. :)

    Thanks for this, I was getting discouraged with how daunting this dish seemed but your version is worth a shot. I did lol at the end when you said "super simple"... About a dish with almost thirty different ingredients... 🤣🤣🤣

    I've never been much of a cook always had my parents cook authentic Asian food for me. I live on beach iN Oregon they have no Asian ingredients. I haven't had this dish for a year now. I'm going to give it a try tomorrow hopefully it comes out well😁

    Why didnt my khao poon have hardly any meat?? It was the fish one and seemed to be that way traditionally. Is thay right?

      Khao Poon can be made with chicken, fish, or pork. I've never had it with fish, but its common for it to be mostly broth and noodle no matter the meat you use. Also, the meat sinks to the bottom, so you have to scoop down to get a lot of meat.

    A super easy way to cook the noodles. Bring water to a boil, throw in your noodles, bring it back to a boil and stir so they do not stick to each other. I turn off the heat and cover it with a lid. It will slowly cook itself sitting in the hot water while I am doing other things. It takes about 15-20 mins depending on how you like your noodles.

      Thank you for the question. The lime leaf makes a big difference in the flavor. But, the easiest substitute is lime zest. It wont be exact but close enough.
