    i love how you char the aromatics before boiling 👌 that's how my friends in Savannakhet do it. but we don't do the kaffir lime leaves...though, it sounds like it would be more yummy. sending love ❤

    This was absolutely amazing!!! Hats off to you! You blew every amazing SE Asian noodle soup I've had out of the water. This is my new favorite soup! Girl, you rocked this dish! Somebody who can seriously cook taught you for sure! I took the tip to use cilantro roots and just added chicken bones (and then removed) rather than bouillon for more flavor. I halved the recipe and wish I didnt. Amazing! I didn't half the noodle recipe though. Anything else you'd use them with?

      Glad you enjoyed it! Thats a great question. We never have leftover lol! But I imagine you could freeze the noodles and keep them about a month. When you freeze, I'd arrange them in thin layers. The broth can also be frozen.

    Cooking the noodles separately rather than rinsing them and throwing them into the main soup pot is a good idea. It keeps the noodles from bloating in the main soup pot. I am going to attempt to make these noodles now. We usually buy them at the Vietnamese grocery store that also carries Lao items.

    Don't forget to use cilantro root for the broth or simply just the stem :) it'll add a huge depth and aroma to your broth

      Hello. Yes, my husband is Lao. I love to cook for my family and Lao food is my favorite. I learn a lot watching my in-laws cook and from tasting their food. It’s easier to get it right when you know how it’s supposed to taste ❤️❤️❤️

    I messed up yesterday I put 4 hot cups of water exactly maybe I left it 1 2 minutes before I washed the bowl to mix is that what happened so I never ate it it was too soft and kept coming apart 😖 grrrr
