  • Donny Sirisavath of Khao Noodle Shop in Dallas, TX is making Khao Poon, a popular Lao noodle soup made with vermicelli noodles and a spicy, fragrant coconut broth. Donny’s recipe comes together with ingredients like lemongrass, red curry paste, fish sauce, makrut lime leaves, galangal (a relative of ginger), dried chilies, and much more. He creates a rich soup and incorporates the noodles along with a variety of fresh toppings.

    Never seen anyone make it like that before. I wonder what parts of Laos his family is from because kao poon seems to be different for every village.

    I'm cooking this tonight. Swapping the fish sauces (vegan) for a reduced mushroom stock that gives that umami well enough in most recipes. Any plant based suggestions that mimic shrimp paste?

      One usually eat with some kind of protein. many make this basic dish with chicken. Canned tuna can be found anywhere on a pinch. Or you can boil up fresh fish and mince it. He didn't go to hell to get that can of tuna. Who said Lao food was all vegetarian and vegan? I think substituting chunks of tofu would work too. Lao food involves a lot of minced fish, such as a steamed fish soufle called Pa Mok
