  • Every now and then everyone needs to treat themselves, even on a keto diet. Why not keep yourself in ketosis with these delicious keto donuts. This donut recipe will have a texture somewhere between a cake donut and a risen donut. The glaze is sweet and will harden enough that it won't make a mess. Enjoy!

    OMG!! Thank you for this video!! I made these tonight for the family and they were a big hit! I melted some dark chocolate with coconut oil for the frosting though and put some unsweetened shredded coconut on a few. I also added a teaspoon of Cake batter extract and yumm-o! I bought a mini donut pan from a thrift store for $1 the other day and this broke it in. 7 minutes one side and flipped them and 5 minutes on the other side and they came out perfect.

    I just made these. I left them in 18 minutes. They came out light but they are done. I am letting them cool before glazing. Yours look cakier than mine. I am excited to try them. Thank you so much for the recipe. I hit that like button. I just tried one. I did not let the glaze set lol. It was super delicious. Wow this is actually a decent donut recipe! Steps I did that were different are:
    - I used a cupcake tray with metal piping tips in the middle to make a hole. They didn’t turn out pretty but I do have a donut mold arriving in the mail in about 2 weeks!
    - I used a piping bag to place the batter into the muffin tray - so much easier than using a spoon!
    The glaze tasted amazing but I just didn’t cut it right 😭 you must have used a pale butter! Mine was very yellow 😂 and also the sugar is a bit clumpy even though I used a whisk to get rid of the clumps!
    Anyway this recipe is a keeper! My mum likes it and she doesn’t even follow keto. I'm off to make a second batch now!!!

    These look impressive! Will have to make them (no donut pan, though, so maybe I'll do drops on a sheet pan to make "donut holes" or something). A little bit of feedback for you, this is something I learned myself when making videos: you are very articulate and you enunciate your words well, but you speak *very* fast for a video. Unfortunately, quick speakers typically sound almost like they're sped up on camera, for some reason. But as I said, you're actually understandable -- few are, so kudos there! Either way, this recipe looks super good and the macros are pretty darn good.

    • @blacksheepketo
      @blacksheepketo  4 ปีที่แล้ว +1

      Yah I've always been a fast speaker. Even in person. If I try to slow it down I end up sounding condescending because you can tell it's not natural. So I end up just rolling with it. I agree though, the camera makes it sound faster, not sure why that is. I've also noticed that if I mess up a take too many times, it gets even faster because I know what I'm gonna say. I usually just wing it because it makes me talk slower because I'm thinking. What can ya do LOL, just practice I suppose. Anyway, thanks for the input and let me know how the donut holes turn out!

    • @blacksheepketo
      @blacksheepketo  4 ปีที่แล้ว +3

      I'd make them into a flattened ball shape, then fill them with whatever you want after they are baked using a piping bag. The chocolate glaze is easy, just add cocoa powder to the glaze in this recipe. Maple you could just add some maple extract. As far as filling goes, I'd have to do some thinking, but I'd probably start with cream, guar gum, and a sweetener.

      Of course. I actually use that trick in my bread recipes. It won't actually cause the bread to rise because it doesn't have an starches for the yeast to eat, but it will leave the flavor behind.

    Did the xanthan gum give it any type of weird texture or sliminess at all I know it sometimes can give an odd taste

      It only does that if you use too much. This one is very minimal. It's just so I could remove some eggs and get the egginess down. So in this case, you actually wont notice a taste difference or any slimy texture. Itll just stop it from crumbling. What I've learned really has that affect is Psyllium Husk Powder. That stuff adds a funny taste. Xanthan gum is relatively tasteless, but the texture can just be extreme if you use a lot.

    Have you tried any recipes using some kind of yeast to get a more leavened doughnut? Love the vids by the way. The keto pizza you helped me make turned out damn fine.

      Yeast is hard to work with on keto because in order for it to produce enough CO2 to leaven dough, it needs to eat sugars. You can add it for some flavor though.
      Thanks! I always appreciate the support!

      Using yeast isn’t a problem in keto, you can use (raw honey, maple syrup...) and the yeast will eat all of it during the activation process.

    • @blacksheepketo
      @blacksheepketo  4 ปีที่แล้ว +3

      Activation isnt the problem really. The bigger problem is the rising process. Once the yeast is active it still needs to feed in order to produce CO2. Since there arent starches in the keto friendly flours, you have to find a way to add it in there. It's not an impossible task, but the science behind calculating the exact amount of glucose that needs to be added for the fermentation process to take place isnt exactly straight forward. Some sugars, like honey, take longer to ferment. Whereas sucrose ferments very quickly. Basically the sugars turn into alcohol and carbon dioxide. There are too many factors to know that you're actually getting all of the sugar out. Time is also a weird factor. Fermenting something like alcohol works because it takes days/weeks to eat off all of the sugars. They know this because it stops producing gas, indicating that there is nothing else for the yeast to eat. So its not impossible on keto, it's just a very hard problem to solve with a lot of variables. You'd basically need to know the rate of consumption of the type of yeast you are using, the fermentation time of the sugar you are using, and the volume of CO2 that will be produced by the above factors. Then you'd have to time it perfectly to bake it while there is no more sugar to consume, but the dough hasn't fallen. Its actually quite an interesting math problem, but theoretically possible.

    if i used regular salt as oppose to pink salt, would it make much of a difference?

    • @blacksheepketo

      Regular table salt is a bit saltier in taste. That's about it from a pure cooking standpoint

    Those doughnuts look like they came from Dunkin Donuts. If they look that way then they must taste good.
