For the chocolate-just heat the HWC, take off the heat and then add the chocolate. The heat in the cream will melt the chips and should be smooth and shiney😊

Friendly suggestion on the filling: Poke a hole down into the donut first to create space with a straw or skewer and move around to make a nice hole. What a great recipe for those times when you are jonesing for a Boston creme.

For ganache, heat the cream, remove from heat, pour hot cream over the chocolate. Let it sit for a minute or two and whisk. Second option is use a pot of boiling water with a glass or metal bowl on top. Water should not touch the bowl! That is very important! Add cream and chocolate to the bowl and whisk once it begins melting. Remove from heat. Dip the item directly into the ganache or pour over.
Do not heat the chocolate directly on the stovetop! That's why you're getting lumpy, matte chocolate with the oil separating out. It's too hot and separates.

    • @Solitude11-11
      @Solitude11-11 ปีที่แล้ว +3

It’s called seizing, two things cause it as MrsBrit1 said, overheating and contact with water. You can often rescue it from overheat by cooling as quickly as you can by putting in a cold bowl then adding some more chocolate solid and stirring that in, with a bit of oil if needed. If it’s got water in, add, bizarrely, boiling water a little at a time. It melts the granulation. Oil will often work too.

That's ingenious! I like the black label buns better than the Hawaiian ones, but that's the brand I like best.
I'm a fan of The Great British Baking Show, even though I can't eat that stuff on keto. Anyway, one of the previous judges, Mary Berry, was fond of pointing out that chocolate melts in a child's pocket. You don't need a lot of heat to melt it. As some others said, heat the cream, and pour it over the chocolate. Stir until it melts.
Those look great, I have to try this.

Also, to avoid the pain of filling them, you could just air fry the halves separately, put the chocolate on the top halves and pipe the vanilla filling onto the bottom halves, and then just gently set the top half on top of the filling for a more eclair-ish experience. Or fill with whipped cream and top with powdered sugar substitute for a cream puff dup.

I used dollar, or dinner roll size buns because I couldn't find hot dog buns and they worked too. Didn't need to slice in 1/2 ,just egg washed the top and sides of buns. Air fried at 400 for 5 minutes. After cooling filled with pudding and topped with chocolate. Did pudding and chocolate according to twins directions. They were yummy.

I just made these and they were so good considering how easy they are to make. I never would have thought to do do this. My filling didn’t get to the bottom 1/3 of the bun, so next time I will fill from both sides. Next time I will also scoop out some of the breading from the fatter side to make more room for the pudding, I seen this in another video and wonder how it would work in this recipe. This is a great base recipe for so many other creations, someone earlier commented on using hamburger buns and fruit filling for another kind of donut experience. I’m excited to explore other options with these buns. Thanks for sharing this fantastic recipe with us.

Yay! A flaky donut recipe! I saw something very similar on reddit a while back, where the person used the Franz keto hamburger buns to make jelly filled donuts. Maybe you could revisit this with that combo? When I have wanted donuts on keto, I used Swerve boxed keto cake mixes, I use the chocolate to make chocolate with chocolate glaze, or my second favorite, using the yellow/white cake mix to make apple cider donuts (batter is 1 box of the vanilla cake mix; about 2 packets of sugarfree apple cider instant mix; and about 3 tbsp of Jordan's caramel skinny coffee syrup, and outside is coated in coconut oil spray and dusted with cinnamon sweetener mix). These are both awesome and pretty passable 'cake' donuts! Thnx for the cool video and idea 💖

If you don't mind using the microwave I saw a quick fudge recipe that would also make a great donut topping. The recipe was 1 c chocolate chips + 1/2 c heavy cream then microwave for 1 minute & then stir. It will harden back up so it's best to do this just before you're ready to "frost" your donuts. For 4 donuts I'd probably use 1/4-1/2 c chocolate chips and 1/4 c heavy cream & microwave for 30-45 seconds. Once it's heated it will continue to melt as you stir it. Easy peasy & delicious.

Treat No. 2 is layering Catalina Crunch Honey Graham cereal pieces in a small container of your choice. Next, place cream cheese on top of cereal pieces (the cream cheese can be sweetened with a bit of Swerve Confectioners sugar to taste preference and a little bit of water or almond milk for ease of blending), followed by your choice of low-sugar jelly/preserves. If you like, top it off with a bit of whipped cream. Eat with a spoon. If the cereal pieces sit for a while and they soften a bit, it’s more like a graham cracker crust. They can be crushed to make a finer crust. It can also all be mushed together so the cereal pieces soften faster. Haven’t tried it frozen yet. I love that it can be made in only a couple of minutes, no fuss or baking. I made it today for the first time, so I want to experiment a little with flavored cream cheese (as long as they are low-sugar ingredients), as well as the toppings for the cheesecake.

Chocolate will lose it's shine if you overheat it and the temper is lost. I noticed several mentions of scalding the Heavy Whipping Cream and then pouring over the chocolate and letting the heat melt the chocolate or a double broiler method which would both work how ever I do have an extra comments to make.
Ganache should not break like that when you are cutting it should have a fudgier consistency so maybe a bit more heavy cream in the future to help with that. Also Keto chocolates tend to have other additives, that are not found in normal chocolate chips, these can change the consistency and melting properties so you sometimes have to take that into account. Or buy unsweetened chocolate and melt your sweetener of choice into the scalded heavy cream to get the consistency and sweetness you desire. As a side note if you decide to try Unsweetened chocolate you can also buy food grade raw cocoa butter to add to your unsweetened chocolate along with sweetened condensed heavy cream to get a more "milk chocolate" flavor.

I agree with MrsBrit1-Try a double boiler for your ganache. Half chocolate/half cream, and warm your chocolate first. This hot dog roll idea looks like a great hack. And the pork rind donuts batter in previous video was kinda thin, so you might try adding a tablespoon or so of coconut flour to thicken. That might make it easier to get rounder results. Love your videos. I am an identical twin, too.

I bought some keto dinner rolls for Easter but forgot about them. I thought I’d make bread crumbs for something and then BAM! You two show up with this recipe. I have ALL the ingredients too. I have some “dirty”SF vanilla pudding that I’ve had for a couple years too. Lily? Yep. I’m marking these and I can tell they’re gonna be awesome! ☮️

Mix some coconut oil in with the chocolate too make it smoother. Then you can just dip the tops in it to coat it

Thank you guys. This recipe is just what I needed. I was just looking up how to make donuts or where to buy some keto donuts last night and because of your video my life just got easier and I'm able to have donuts faster because I pretty much have all the ingredients Including the hot dog rolls, that brand is my favorite for all keto breads. Have you tried the new 5 seed keto bread made by the same company, Lewis Bake Shop? I love it, my favorite!! SO SO GOOD! Thanks again for sharing! ✌️💕

Hi girls. Just wanted to say that I tried this hack of yours. I'll tell you what. I filled it with sugar free chocolate pudding and used some hazelnut sweetener with it. Oh my oh my. It apsolutely settled my craving for a doughnut. Our town has the best . I only glazed the top ..thank you for sharing

Microwave Lily chocolate chips with 1-2 teaspoons coconut oil. It makes good chocolate icing.

You can use a propane torch to quickly melt the top of the ganache again and let it set shiny.

You girls are the best. Not only do you bring interesting and tasty (for the most part) recipes but you are SO FUNNY AND ENTERTAINING. I just recently started keto after have sleeve surgery and I'm loving all these great ideas.
I have one question...do you have a video (and if not could you) that explains the difference between all the sugar substitutes. I keep trying to find answers about that but everything I read says different things. Thanks.
