    I tried this with unsweetened vanilla almond milk! I only added an extra tablespoon of butter. It came out so good and is only 42 cal and 0 net carbs per two ounces! It came out with the same thickness and is so yummy :) Thank you!

      Hi Liudmila! Thank you for your question. First, to make condensed milk properly, it must be done over low heat. The time can vary between 10 to 25 minutes. The difference is on whether you are using gas or conduction heating, and how well you can control your heat. If the low setting is still too hot, the mixture will bubble and evaporate more quickly, but that could also cause burning on the bottom of the pan, which will ruin the taste. So, just use as low a temperature as will maintain a light simmer, for best results. Also, the hot liquid will thicken, once it starts cooling. Cheers!

    Also, at the 1:06 point in this video, I use the term "confectionery sweetener," which has led to some confusion, as noted in the comments. To clarify, this refers to one of my usual sweeteners, which is Lakanto Gold, a monk fruit/erythritol blend sweetener. I am NOT using, and never do use, any of the sugars, such as white, cane, coconut, agave, etc., because all of these have a high glycemic index.     I just tried this and it is INCREDIBLY DELICIOUS! I filled a jar and had a little left in a small bowl. I added an ounce of cream cheese and. Voila it is pudding. Absolutely delicious. This is my new fat bomb!

      Hi Jeffrey! Reading your comment made me LOL, because before my family began to appreciate that the recipes were as good as sugar-laden or carb-heavy "SAD" recipes, I would make a dessert or entree and just give it to them without letting them know it was keto. After, they would tell me that they liked it, and ask me how I changed the recipe, because it tasted better - I would 'fess up and say it was keto. Although three of four (adult) children are still not keto, they now enjoy the recipes that I make and post, and actually choose to make them when they are hankering for a particular recipe. And sometimes, just letting your family enjoy something healthier, without the specifics, is OK in my books. I'm glad that you are enjoying my keto recipes. Have a wonderful day! Cheers!

    I am so happy I made this. I never thought I could have Vietnamese style coffee on keto but now I can. I was out of vanilla so I used a little maple flavoring and it is delicious. I also used a powdered stevia blend I get from Aldi.

    Thank you-I’m going to try making this tonight. My husband is from Costa Rica and made me fond of a Spanish brand sweetened condensed milk called La Lechera (“the milkmaid”) that he stocks in the house, but we got into a very bad habit of adding it into our morning coffee. Glad this is sugar-free!

      Hi Jmp-vices&virtues! I have noticed that many South/Central American treats use a sweetened condensed milk as an ingredient and flavor. I absolutely understand why - so tasty! When my son was in high school, he did a one-month exchange in Costa Rica to improve his spanish, and loved the treats in Costa Rica.
      If you're using it as a creamer, don't boil the Sugar Free Sweetened Condensed Milk as long, and keep it at very low heat, to keep it more liquid. By the way, I have a free e-cookbook, that uses this condensed milk as an ingredient in some dessert and treat recipes.     I imagin making it in a slow cooker or a Dutch oven will be even better ( to prevent burning the cream).

      Hi Sabrina! I think that using a slow cooker or a Dutch oven is an interesting idea, and I am sure that it would work, however I have found that a heavy-bottomed frying pan on a stovetop to be the best method, because you can more accurately control the temperature either by increasing or decreasing as you need to keep a proper simmer. I have made this many times and, thankfully, have never burnt it on the stovetop, but I do recommend staying nearby to keep an eye on the pan as you're cooking.

      @@annapatty4608 I wish I had my original recipe unfortunately I don't. It's going to take me some time of researching and trying to remember how I made it. I know it was condensed milk and chocolate chip morsels the semi-sweet ones. And I can't remember what else it may have been, butter ? I don't know.

    Thank the Lord you came up with this recipe. I miss my avocado shake with condensed milk... yumm! I will make it this week and will let you know. You made me so happy! UPDATE BELOW:
    UPDATE: Thank you for the recipe :--)) I just made this and came out really good just like the condensed milk. It's not as thick as the canned condensed milk but the flavor is just as good. I simmered for half an hour and I made mine extra sweet.
    TIP:
    I buy 100% Monk fruit sugar and Erythritol separately. This way I can mix them up and make my sugar even sweeter by putting more 100% Monk Fruit. I put in the blender until it becomes an icing sugar. When I let my husband taste REAL sugar vs. the one I made, he thought the NON sugar I made is the REAL sugar because it is sweeter and NO after taste like stevia. You also save $$$ by doing it this way. DON'T buy the one that is already mixed and then they call it Monk Fruit sugar.

      In asia, it's very simple (adjust these according to your taste), in a blender, just put one or two fresh avocados (remove the pit), around 1/8 cup of condensed milk, about a cup or more of evaporated milk (there maybe some keto evaporated milk recipe out there). If you think its thick mix more evaporated milk or any milk of your choice. This is my favorite shake!

      @@KetoMealsandRecipes hello again! I made it this morning and went to get it out of the fridge and it’s a thick consistency kind of like icing. My fridge temperature is normal. Did I do something wrong? It’s still very delicious but it’s not a flowy consistency.

      Hello again! When you are using some of the keto sweeteners, the sugar free sweetened condensed milk will solidify in the fridge. For some things, you can use it "as is" but to re-liquify it, heat the amount you need over low heat, stirring constantly, to restore the original texture.

      Yes you can, but cook it long and slow, to make sure that the xylitol has completely melted, and there is no grittiness. Have a great day!

    Try this recipe on the low setting of a slow cooker. Or use a double boiler to not have to babysit it too much.

      Hi Lindsay! Interesting ideas - thank you for sharing! It's not so much about babysitting but the stirring it from time to time that is required, and you'd also have to do that in a slow cooker or double boiler, and you do want the evaporation to occur, but slowly. The double boiler is most useful for things like melting and liquifying chocolate, and other delicate things that you don't want to scorch. I think it would take too long to make the SCM using a double boiler. Have you tried the slow cooker or double boiler?

Yes, I really like freshly-made sweetened condensed milk as an ingredient in other recipes, and I agree with you the tartness of the lime against the sweetened condensed is a really nice combination. I use use the sweetened condensed milk especially in no-bake cheesecakes and no-churn ice creams. Cheers!

    What is sugar free confectioners sugar? What makes it sweet?

      Hi Nieshawn! Yogurt works best in a no-cook cheesecake-type recipe, and in some baked goods, but I think that it is too acidic to make the sweetened condensed milk, and you would kill all the good bacteria in the yogurt by cooking it.

      Hi Angela! I keep mine in the refrigerator in an airtight container for a week. It does harden in the cold, but it will melt in a hot liquid, or take what you need, and reheat that amount either on the stove top on very low heat, or in ten second bursts in the microwaving, stirring between.     I find the ideal way to make this. Is by using an induction cooker the single one. and an extension cord so then you can put it on a coffee table and sit down and relax and watch some TV while stiring and oh dont forget the cup of coffee too.because you could be stirring for up to an hour. Just sharing a tip from someone who's getting on a bit saving the old back and legs lol

      Here is a tip that I'd like to share with you. Make him a few treats, find out what his favorites are, and then when he asks for it again, say "Here is the recipe, my dear..." My guys have learned to cook after they have really wanted something, and I didn't have time to make it, and sent them to the recipe video and blog printout. After their first couple of successes, they now frequently cook for me, and I love it! Cheers!

      Hi Maria! I do use a double boiler for re-liquifying my sweetened condensed milk and keeping it creamy and smooth. However, when making the sweetened condensed milk, I do not use a double boiler because I actually want the liquids to evaporate to condense into a condensed milk, and the double boiler isn't conducive to that because it would take too long.       Hi Elisabeth! I actually did an experiment to see how long it would stay edible and healthy out on the counter in a jar. In a reasonably cool room, it was perfect for three days. I'm pretty sure it was ok on the fourth day (at least I didn't get sick). On the fifth day, there was a start of mold around the inside rim of the jar.
      Did you know that you can put it in a jar or ice cube tray and freeze it? I freeze it in one ounce cubes and, once frozen, put it in a larger container, putting parchment between layers. You can then re-melt over either a double boiler, or on VERY low heat. Just stir or whisk frequently as it is melting, and it reconstitutes to a lovely, silky consistency.
      Since there are no preservatives of any kind, the bacteria love the creamy mixture if is is left in a warm place, where they can munch on it. I hope that my suggestion will help you! Cheers!

      Hi Ana! As you know, butter is highly concentrated milk fats and proteins, and the reasons that I use butter are:
      1. It provides a creamy, velvety texture
      2. It gives the sweetened condensed milk a really nice taste and
      3. It reduces the amount of liquid that I need to get the fat ratios right for this recipe, and therefore reduces the cooking time to get the right viscosity.

      Hi Gammy 60! One thing that I forgot to mention is that allulose is about 80% as sweet as table sugar, so you made need to adjust to achieve the same level of sweetness. But a 1:1 substitution will still give you the texture just not as sweet. I wish they imported it to Canada - that would make my day.       Hi Sheqs! Actually, if you are on keto or low-carb, no you cannot, since coconut sugar is still a sugar, with all of its metabolic effects, and is not a keto sweetener. If you are not on keto or low carb, it is up to you whether you use coconut sugar. It will work in this recipe.

And money wise not practical. Looking for ways to really stick to food that is practical financially and not to be wasteful and help reverse my diabetes. Been using coconut sugar as subs. Why does everything for low carb so expensive? Hehehe anyways thank you.

I would love to help you with figuring out a low carb/keto diet for you that could help with your T2D, but please make sure that you are followed by a doctor, especially if you are on medication.
      If you don't mind me asking, what country are you in? I can try to find sweetener alternatives for that country. One of the best things that you can do for yourself is to start reducing the number of treats and desserts, to reduce the craving for sweet tastes.       Keto Meals and Recipes re doctor, yes i am always consulting them. Now it is a bit hard but it is okay. I am currently on Janumet XR. And Iron and Vit C. My hair is fallng off due to my weight loss. I was diagnosed recently of type diabetes end of Feb 2020. So It was really a struggle for me.       Hi Debbie! First of all, YUM! If you like sweet coffees, it could be used as a very sweet cream, but what I would actually do to make it a flavored coffee, is take a quarter cup of heavy cream, and one or two tablespoons of the sweetened condensed milk, stir well, and use that as a creamer.       Hi D.A. Risse! I think that a double boiler would slow it down too much, because you're not just melting, but evaporating liquid.     Does the erythritol recrystallize in this, even when powdered? I find it an irritating property when used in high proportions! Maybe I'll try mixing Lankano with Allulose to reduce the erythritol concentration. Allulose alone is too expensive.

      Hi Ella! I find that if I cook it on very low, and very slow, although it does become a solid, it still stays quite smooth and velvety. I agree that allulose would be good to use, and also I agree that it is very expensive, and hard to get in some areas. I cannot get it locally.       @@KetoMealsandRecipes I made your recipe last week using only about 20g of the allulose and the rest with powdered Lakanto gold, and it did NOT get grainy. It did turn creamy eventually (not pourable), but while it was still pourable, I just had to see if lime juice would thicken it up like for key lime pie, AND IT DID! Even now, for a quick snack, I heat some cream with this condensed milk (I do not measure), and melt some chocolate into it. Makes for a wonderful chocolate sauce, or thickens to a creamy truffle, depending on what ratios were used. Wonderful recipe... I'm making more!

    I used cottage cheese with water blended to make the consistency of heavy cream. Allulose works best because it caramelize like sugar. So it's less calories and higher in protein.

    I see the light! While I appreciate this recipe Intensely (lemon icebox pie of my youth is now back within reach), the eureka moment for me was the "Confectionery" sugar method suggestion of grinding to powder form. I have no idea why that brilliant idea never occurred to me. (could be I lack in the brilliant department). I can't thank you enough for insisting on referring to your ingredient as that. I kept hearing you use the term and I was thinking woman, you can't use confectionery (powdered sugar) in Keto!! You crazy woman you! : ) I kept running through my ingredient roll a dex in my mind while watching and all I could come up with was arrow root and cornstarch. It just never occurred to me that you were grinding/making into powder form/the monk fruit sweetener. Bravo, bravo, bravo you are simply brilliant! This has opened the doors to so many possibilities in my keto kitchen laboratory! Thank YOU! XO (I used to open the can as a child and just spoon eat the contents. Not a care in the world. I do love it so!)

      Hi Edmund! In our area, the cream containing 35% fat is called heavy cream or whipping cream. What you want is any cream that has at least 35% fat, or more. Preferably, you are looking for a cream that does not have additives such as dextrose, or various gums. I hope this helps - Cheers!

    I have stevia drop . If I add few drops does it work? I mean do you need the solid version of sweetener to create the final product?

    Quantities and time was accurate. It's the holidays, I made a quad batch. It still only took 1 hour. I used an 11" wide by 3" deep chicken fryer for my large batch. Thanks for the fantastic recipe.

I use the term "confectioner's" or "confectionery" to mean "ground to a fine powder," so when I say "confectionery sweetener" it means that I have ground my sweetener to a fine powder.
