  • I'm not the biggest veggie burger fan, I never have been, but these 4 recipes are the ones that made me realize that there were vegan veggie burger recipes that I could LOVE.

    BLACK BEAN BURGER
    15 oz black beans, 1 can, drained and rinsed
    ½ cup jarred roasted red pepper, finely chopped
    1 cup fresh broccoli, minced
    ½ cup red onion, minced
    1-2 cloves roasted garlic
    ¼ teaspoon cayenne pepper
    ½ teaspoon cumin
    1 teaspoon salt
    ¾ -1 cup flour or cornmeal (or more if it is still too wet - if using cornmeal
    ¼ cup nutritional yeast
    1 tsp Balsamic Vinegar
    1 tsp Tomato paste
    MUSHROOM LENTIL BURGER by Rachel!
    1 tablespoon chia seeds
    3 tablespoons water
    3 tablespoons olive oil, divided
    8 oz mushrooms, finely chopped
    1 tablespoon soy sauce
    ½ tsp turmeric
    ½ tsp cumin
    1 tsp vegan worcestershire sauce
    ½ teaspoon smoked paprika
    1 small onion, diced
    2 cloves garlic, minced
    ½ teaspoon salt
    ½ teaspoon pepper
    1 ½ cups lentils, cooked
    1 cup oats
    SWEET POTATO AND WHITE BEAN BURGER
    1 medium sweet potato, roasted and peeled
    15 oz white beans, or navy beans, drained and rinsed
    1 small yellow onion, finely chopped
    1 teaspoon garlic powder or roasted garlic
    kosher salt, to taste
    freshly ground black pepper, to taste
    ⅓ cup nutritional yeast
    1 teaspoon red pepper flakes
    ⅓ cup fresh parsley, finely chopped
    1 tablespoon lemon juice
    ¾ cup oats (I ground mine up, but that’s up to you!) use more if you want them firmer.
    canola oil, as needed
    PORTOBELLO MUSHROOM BURGER
    4 large portobello mushrooms
    Extra-virgin olive oil, for drizzling
    Balsamic vinegar, for drizzling
    low-sodium soy sauce, for drizzling
    Sea salt and freshly ground black pepper

      If you look at their other comment on this channel it's at least clear that they incorporate more meat replacements now.
      It takes time to rethink things you grew up with. And having alternatives helps people to make it easier.
      I'm not sure if a comment like yours helps people like them (more emotional in their decision for example to watch Merle's videos).
      For me it helped because I'm very rational and negative emotions make me want to destroy the other person with facts (and therefore research it even more).
      But people that are here for the vibe might close up, not come back and not think about it.

    Great variety of vegan burgers. You can try making Indian veggie burgers. They are originally vegan and delicious. The general one is a potato patty with veggies, aromatics and spices. You will absolutely fall in love with these!

      @@birdsaflyin Use aromatics like ginger garlic paste, green chilii paste. Spices - Garam masala, cumin powder and dry mango powder.

      The Indians probably make the best the best veggy food, a country which is the only country whih is vegetarian well was, untill the American marketing men with McDonalds, KFC and subway cometh! Try the Lentil 4 lentils orange, kidney bean, moog dhall Channa ni dhall. Sorry I dont know what they are called in the West. They are like falafel. you can add, chick peas, and play with the porportions. A doloph of creame fresh and even wild rice blitz up after a soak and boiling with ginger garlic works incredibley well. Mint corriander and tomatoe chutney is a nice addition.

    To make a drier burger you can roast the beans in the oven to dry them out before mashing them into the patty mixture, and oatmeal too works as Merle mentions.

    It's so strange to me to hear those statistics and yet I can still walk in to a ton of restaurants and have only a few boring options on the menu. Don't get me wrong...I've been a vegetarian longer than you've been alive Merle😁 and the changes in the culture have been drastic, but I'm still mindblown that so many businesses are not seeing the opportunity in serving such a huge customer base. Hopefully the trends will continue in the right direction though and the world will be a little better for it.

      YES!!! i used to be a vegetarian a few years ago, but now i just don’t eat red meat or pork. & i always say how all these restaurants are missing out on so much money if they offered a variety of foods for different diet restrictions. gluten free, keto, vegan, etc. for ppl like me who only eat poultry & seafood! they could offer turkey meat or chicken alternatives. idk man. hopefully positive changes continued to be made. 😇

    The 1st one is the very first vegan burger I' ve ever made or eaten. It is absolutely delicious and very satisfying! I didn't miss the ground beef and that's saying a LOT. I was just diagnosed with Alpha Gal allergy to beef, pork, & dairy. I cannot say thank you enough for this amazing recipe! It has given much hope & yummy enjoyment! I've shared these with friends who do eat meat but loved these very much too.

    Mmm! The lentil and portobello burgers get my vote to try first!
    I like to use vital wheat gluten as my binder and a little TVP for vegan burgers. It adds a nice chew.

    I can attest for the portabella, red wine or balsamic are great. Added with some cooking sherry, msg, garlic and onion powder, smoked paprika, and olive oil. Let it marinate at least 24 hours but I prefer around 3-4 days. I recommend grilling it if possible.

    I really have to make the portobello mushroom burger at the end. There was a restaurant in my area that has been closed for more than a decade now and they made a bomb portobello mushroom burger that is close to the recipe you showed us, so now I need to try it. Thanks for another great video!

    Can't wait to try all of these. Love the little drop of knowledge about protein. One of the first things people always ask for some reason, and yet I once read a doctor mention that they couldn't find a single case of someone being protein deficient from their diet. But there are so many health reasons to not eat meat, and the same people can care less about that.

    I agree. Finding a good veggie pattie is tough. I personally dont mind them, I love some of them, hate some, some I loved and they disappeared from the store's shelves which was quite sad for me... But for the most part i don't mind them. I appreciate everything that you do and it is soo helpful but I'm lazy lol. I don't think I could ever be bothered to make my own, tho I do see the appeal! Always so happy to have another video from our reigning vegan queen and can't wait for the next one!! 💖🥰

    3:16 I never tried a bowl. I usually do a produce bag after fire roasting, but any method that traps the steam really helps get the skin off.

    What’s your take on adding liquid smoke to the burgers? Also the old bay dry seasoning is 🔥 on everything. I bet the black bean would be so good with it!
    I made a “burger with my grape leaf filling, chopped up cukes and lettuce, vegan Mayo and pepperoncini on a small pita! Yum.

    Here's a thought could any of the first three be adapted, perhaps, as some kind of vegetarian MEATBALLS? Because I just had a pasta & meatballs dish for dinner, and so the idea comes to my mind very rapidly.

    I still eat meat, but I've cut it back to pretty much just chicken and turkey.

    If you have an instant pot, you can make the portobello mushroom in there…super super easy, quick and less cleanup. Put it in upside down (stem side up), and drizzle whatever marinade you want. Add just a little water to the bottom of the pot (enough to get the steam to seal the instant pot) and cook on high for about 7 minutes. Rapid release, done. Cook more or less as you see fit. The simplest recipe is just a drizzle of soy sauce, balsamic and garlic powder. Easiest thing ever!

    I'm a bean burger gal myself. I have a fail safe base recipe that I add and change up as required. 1 can oats, 1 can red kidney beans, 1 can chickpeas, tablespoon black bean paste, tablespoon tomato puree 1 small onion and garlic powder. Blitz in food processor then good to go - I add different veggies and herbs/spices as fits. They're always a crowd pleaser :)

    I wish that info about not needing so much protein but needing more dietary fiber was getting out there. SO many people eating way too much protein and thinking it’s healthy. Or thinking if they cut back on meat they won’t be getting enough. It’s so frustrating.
    Anyway, lol I would want to try the sweet potato burger first. Looks delish!

    It’s suggested that if you use aluminum foil line it with parchment paper. Aluminum is way too dangerous to wrap your food in. We don’t want you to become goofy or dead. Thanks for sharing.

    One tip: instead of spreading mayo to the bun, spread it on the burger so that the bun stays dry to the end. It won’t slip n slide. Love the recipe. Will tryhem😊

    I've been considering making a veg burger with tempeh, tofu and various veggies / beans as I noticed that tempeh as a very ground beef like crumble to it, and baked tofus just got a great firmness that'll really soak up whatever sauce I throw in it

    1/2 an avocado topped with cheese. Melt in a grilled/broiler. Pop on a toasted roll with lettuce, tomato & mango chutney. 😋

    I'm genuinely always interested in the one that gives me the most nutrients and calories. Due to the fact that I don't have much time to eat during the week and I need to make sure I reach my daily calorie intake.
    With that said, the mushroom and lentil one caught my attention the most. 🍄

    Topo Chico is the best sparkling water ever and I live in Italy full-time now and have since 2019 and even though we have an abundance of absolutely amazing sparkling water here that goddamn topo Chico is still the best and I miss it dearly because it’s from Mexico and I’ve never seen it anywhere here in Italy. Please enjoy topo Chico if you can get it, it’s amazing.

    The different veggie burgers i had, once chewing in mouth along with saliva moisture
    the texture is mushy like just eating a bean sandwich.

    My current favorite way to make veggie burgers is to make Beyond Meat smashburgers using the techniques shown on "Guga Foods". But I do want to give these a try as well.

    The question I have; not sure if it has been asked, can the non mushroom varieties freeze well for ease on those days when you just need some quick yumminess but don't want to cook? This has given me some great ideas thank you x

      Since she didn't answer, I will - yes! 🙂 Just freeze them seperated on a parchement-lined pan like she shows here, then once they're set and won't stick together, pop into a ziploc, tupperware, or double-wrap in plastic. To cook, let thaw on the counter - prob about 30 min or so - and cook.

    Cookinghack that’s a world of difference
    Spread can of beans on parchment bake in oven 350 till they crack and kinda turn ashy. Now they are already dehydrated and makes the burger not as mushy with less work

    From my early vegan days I don't remember veggie burgers ever being dry or bland. In fact I could describe then as being flavorful, moist/wet and mushy which I understand are all traits some people might dislike. They were usually made with a number of vegetables, typically some kinds of grains and legumes and a number of spices unlike beef burgers that just taste like plane beef

    This isn't a veggie burger, per se, but you can use it as one. Japanese tofu patties called ganmodoki. It does use egg and corn or potato starch as binders, but you can use vegan egg sub or just omit and add more starch, though it may be a bit crumbly. There are a lot of recipes out there. The only advice I have is that freezing, then thawing again, my block of firm or extra firm tofu seems to make squeezing the water out of the block much more easy. You can use the patties in a burger, if you season them appropriately, or you can simply eat them plain. One of my favorite vegetarian options (yeah, I use the egg).

    Merle your content is EXCELLENT! You provided us with 3 delicious, nutritious burgers and one mushroom burger. I'm sorry, whatever the opposite of "stan" is, that's what I am for portobello mushroom burgers. First of all, I am not a mushroom person. I think they taste ok, but the texture gives me the hibijibis (sp?). Whenever I go to a non vegan restaurant and I find out my only option is a portobello mushroom burger I weep. I still respect that you offered a variety of ingredients across your 4 burger options.

    The portabella mushroom is probably my go to... but mushroom prices are up to $4/lb for white button and $5/lb for mature portabellas in the hudson valley... So black bean or lentil is gonna have to do.

    I really would like to make the mushroom one but my wife hates mushrooms 😭 Guess I'll just have to make another one of these some time instead. I've been eating a lot more pescatarian and vegetarian th last weeks, since I just haven't been finding much meat at lowered prices (they sell food that's about to expire soon at lowered prices here, so I mainly buy meat that way). Funny how that works out. Need more vegetable burgers in my life anyway

    You are not only funny but a lot of fun preparing meals...I’m going to the supermarket right to get the ingredients...I’m going right now! I am going to try the roasted red sweet pepper burger first. Also u would turn a meat eater in to a vegan. You have really encourage me to go more plant based...less meat and fish and more veggies...small baby steps to veganism. Thank u.
