I’m a mushroom lentil burger girl! I totally agree with how meaty they can be. I use wheat gluten as my binder. My “secret” is to use raw and cooked mushrooms. So I can make a dryer mix that holds together, then the raw mushrooms cook and release their juices. I want to try adding beet powder to see if we get that pink colour. I don’t like that, but it would just be fun to see if I can do it!
Do it!! Its neat how the beat powder will be pink then brown up as it cooks!!! I love the way mushrooms work in a burger, sounds like you already have an incredible recipe going!
@@SauceStache I have a bit of a challenge for you, we had some years ago a great vegan small market they had a dry mix you could buy in their bulk section we always bought a lot and we weren't even vegan then! Well they closed. The mix. was grains, seeds & nuts primarily, some dried beans as well. So we keep trying to duplicate it. No joy! The mix is dry but ratio is 1 cup dry mix ½ cup boiling water let stand 15 minutes firm burgers or brown in scramble fashion in a pan. The ones we tried never formed plant "meatier was more like batter so tasty but very flat thin burgers. The mix they had was great! I'm sure it had beet powder as it was pink prior to cooking and tastewise it tasted more of seeds and nuts that we loved it made great burgers! All dry mix great part? We'd buy enough for like a blender full, keep in a freezer bag, good over a year. Anytime we wanted burgers We'd grab a cup add ½ cup boiling water let it sit 15-20 minutes make burgers and cook.

I just made the mushroom burger and holy crap. My partner and I were blown away by how good it was. I thought it would taste super mushroomy but the flavor was actually so subtle. I've never thought about adding whole oats into my veggie burger- and will probably not do so BUT tapioca might me a great touch! Will give it a go next time :D

Can you tell me why when I cook ling oyster mushrooms they are rubbery? I've cooked them 4 different ways, stove and oven, 45 min to 1 1/2 hours and still rubbery. Help please. 🙂 thanks
I was making a veggie burger almost exactly like that first one, but what i found is that you dont want to add any liquid at all, in fact it'll be a lot less mushy if you dry off the beans by grilling them last minute w/ the onions and mushroom
Thank you for 3 burgers recipes. They all look great. Bob's Red Mill also make TVP and TSP. I've made a veggie chili with it. Pretty tasty as it takes on the flavorings you use with it. I'm definitely going to try these burgers out.
Thanks for all these. I've been tinkering with this here in mexico to try and offer a legit vegetarian burger as options are limited. Some of these things like Methoceluose are hard to get but most of these variants I have. Today I was cooking the mushrooms and the textures Soy first in the oil because they absorb a lot and that way I get a savory texture base. Is there a reason not to cook oil into this so we can get more of a hamburger profile.
I could not wait to watch this video after seeing the notification, especially considering I could not do it yesterday right after the release :D I must say, from time to time I just want a simple veggie burger and I love to get new ideas :D My go to base id lentils but I must say, mixing up the legumes always yields the most interesting and satisfying texture(I usually blend a small part of the ingredients smooth to bind to make the binding easier) . Amazing recipes man! Love your channel! It's so great to see so many people thriving in a vegan life! I made the Toronto Planta recipe, and it was great indeed. Then, just like you, I worked my way tweaking it to my taste. The best combination I got so far was this: -Black beans, green peas, carrots, onion, cabbage, spinach, oats, wheat and rice flower (salt, pepper and spices to taste). The beets' flavor is too strong, I replaced it with carrots and it gave a nice colour and a softer taste. Another thing I did that made all the difference in the world, was the use of everything fresh, nothing canned or pre cooked. I did a huge batch, and froze the patties. They keep the flavor very well after defrosting.

I don’t know if you’ve taken a look at them yet, but I highly recommend you check out king oyster mushrooms as scallops! I know you’ve used them before in a few videos, they’re super versatile mushrooms. The recipe on Goodful was delicious. I highly recommend!!
Super-easy vegan jerky: Butler soy curls hydrated with any jerky marinade (soy sauce, liquid smoke, maple syrup or brown sugar, smoked paprika, garlic powder, red chili flakes, etc.). Play with proportion to you liking, slow cook in oven or air fryer.

Try using peas in a burger. I make a nice pea and avocado with mushrooms burger. I use tapioca starch for a binding for my burgers though. I have celiac disease so I can't have gluten. I am also allergic to wheat. I had to stop eating red meat 15 years ago because I am allergic to beef and pork as well. I also am allergic to apples and bananas as well grapefruit. I suffered origin failure three years ago from my food allergies. I can eat fish and chicken as well as turkey though. I tried going full vegetarian and vegan but my health conditions don't do well with just veggies and vegan food. I need extra nutrition so I added fish and avocado oil as well chicken and eggs for protein. I love spinach and greens so I eat lots of salad. Also, cooking salad is healthier than eating raw salad so I do cook my spinach and greens before making my salad. I also like cooked carrots in my salad. I also make my own dressing. It's healthier to home cook your food because you can control what you eat. Processed food causes health problems and I have almost died from processed junk. I speak to my doctor's about my diet. They do have me on a special diet. You are an inspiration for me. I am learning how to make better decisions for my body. Thank you. ❤️
Hi again Saucie, Just have to say; Last week or the week before, my new Kove headphones arrived! It was a long wait, but sooo worth it! I am still excited, I just loooooooove them! I can’t believe that I got them for only $99, shipping to Norway included! The sound quality is really impressive, I must say, they’ve made me go «WOW!» more than once, even if I only tried them with music briefly a couple of times this far. One thing I also really love, is that I can use them with a cord if I want to. I bought a long extention cable on aliexpress, an all pretty fabric covered one and also a hard headphone case for travelling to use instead of the bag. And, the memory foam makes them sooooo comfy. I easily get pain in my ears from headphones, but not these and I probably had them on for 3-4 hours (fell asleep while watching YT vids) once, which never has happened before, it would simply be impossible, because they would hurt after a little while... If beans are not cooked they are 100% toxic and you should be dead in a week! Watch the movie into the wild, he ate dried beans uncooked and died at the end of the movie, from what I know all legumes " MUST be cooked.

Yes!! I used the Aquafaba liquid from the chickpeas!! Aquafaba is a better binder per weight than black bean liquid! I wanted less liquid and more bind! The super wet black bean burgers are the ones that fall apart easier
After doing the video on MSG, why aren't you adding them to these burger recipes? Would it taste even better if I added some, do you think? (just made the 2nd burger, waiting on it absorb the moisture, can't wait!!!)
Just wanted to say it's pretty genius to have taken the labels completely off the cans. Obviously, you won't have to deal with whatever copyright (?)/logo use & whatnot, but I also think it's helps people to not think that they have to have some _particular_ brand or style of things. Love your channel! Might become vegan some day. I already don't eat meat hardly, so we'll see.
Where does one get that much mushroom powder? Amazon sells 2 or 3 ounce packages for around $10 or more. And they have added salt. Too expensive. I thought about dehydrating store bought mushrooms but I don't have a dehydrator and the lowest temperature on my oven is 170°F.
In the US, Trader Joe's sells a mushroom powder in their spice section that is cheap. BUT, if you really want to save money, just buy dried mushrooms and use a high-power blender to grind them up into powder.
Mark could try to make a vegan version of Cajun gravy? Popeye's has a decent one I guess. I remember enjoying putting it on mashed potatoes, baked potato wedges and french fries.
Any suggestions for what to substitute for the potato protein? (A late-developed intolerance means eating potato or potato derivatives results in multiple days of pain. I miss potatoes so much.)

you gotta try dried beans instead of cooked! soaks up all the water and maintains texture.
If beans are not cooked they are 100% toxic and you should be dead in a week! Watch the movie into the wild, he ate dried beans uncooked and died at the end of the movie, from what I know all legumes " MUST be cooked.

I just found your channel and have been binge watching! Love the food science! I spent a lot of time researching the potato protein- it seems a fairly new item and very hard to find except an expensive order from Europe. Wondering if your scientific mind can figure out an easily purchased substitute for everyday people?
Another Great video, I made hybrid burgers with beans, tvp, mushrooms, everything, the kitchen sink, no vital wheat protein though. I thought you had to knead and boil that ingredient to activate it?

I could just cry. I tried a few time to make veggie burgers (several years ago), like a legit, not fake meat veggie burger, and I failed over and over. This sounds so good😋 So glad you are here! I was always afraid to check out vegan channels due to all the attitude that seems to come from, I'm sure, the nuts of the community. - As a vegan, decently close to meat and cheese and egg is very very good and hard to find in itself.
- perfection cannot be expected but pretty darn good is well appreciated.
- Oil marination is a key in vegan meat I think. A really good oil.
- You even used beancurd sheets. I want to explore that stuff.
- A good vegan chain resterant. You could do it. It is the future. Mad-cow is not.
- Your stuff looks very good.

I enjoy "vegan burgers", because mushrooms & carmelized onions rock my world & "whatever" they are smothering is just the supporting actor for me.
That said, the bun shown in your thumbnail is probably not "vegan" due to eggs in there. Many are allergic to eggs! I recommend a vegan "wrap" instead of a bun. Hey, whatever floats yer boat! Mucho amore' everyone!

Is there a reason why you rinsed the beans? wouldn't the starchy bean water help the burger bind up?
Yes!! I used the Aquafaba liquid from the chickpeas!! Aquafaba is a better binder per weight than black bean liquid! I wanted less liquid and more bind! The super wet black bean burgers are the ones that fall apart easier

After doing the video on MSG, why aren't you adding them to these burger recipes? Would it taste even better if I added some, do you think? (just made the 2nd burger, waiting on it absorb the moisture, can't wait!!!)
Just wanted to say it's pretty genius to have taken the labels completely off the cans. Obviously, you won't have to deal with whatever copyright (?)/logo use & whatnot, but I also think it's helps people to not think that they have to have some _particular_ brand or style of things.

How many patties does the mushroom recipe yield? I just can't seem to find it on your site. Planning on making them tonight!
Where does one get that much mushroom powder? Amazon sells 2 or 3 ounce packages for around $10 or more. And they have added salt. Too expensive. I thought about dehydrating store bought mushrooms but I don't have a dehydrator and the lowest temperature on my oven is 170°F.
In the US, Trader Joe's sells a mushroom powder in their spice section that is cheap. BUT, if you really want to save money, just buy dried mushrooms and use a high-power blender to grind them up into powder.

Instead of using whole oats in the burger recipes, is it possible to use oat flour, or will that change the consistency of your burgers?

Any suggestions for what to substitute for the potato protein? (A late-developed intolerance means eating potato or potato derivatives results in multiple days of pain. I miss potatoes so much.)
