The only “food” that doesn’t have all the essential amino acids in some amount is gelatin which is missing tryptophan. You can’t use coffee grounds in place of instant. You’d have to use a coffee syrup or small amount of cold press concentrate. The grounds will just make it….chewy?

I love using the peppermint chocolate pieces that are usually available round the holidays for the chocolate tofu mousse. It’s a fantastic combo, if you like mint, but I wonder if other flavored chips would work, too? Butterscotch? White chocolate? Peanut butter & chocolate? Maybe chocolate with caramel or other flavor of instant coffee?
That's not silken, it's more like a soft/medium. Silken is coagulated in its own container, so it should fully fit the container with no water around it. It will look more like a custard when you open it. Simple Truth at Kroger sells it pretty widely, I think. That being said, it's good to know it still turns out great with a firmer tofu!
I live in Japan and we have silken tofu that has water in it lol so I don’t think it’s just one certain type of silken tofu. But I do agree that the one in the video is certainly not silken haha but it’s good to know it worked regardless

PLEASE try these 2 changes and give this recipe a shot, I really think you'll love it
I saw that silken tofu mousse going around and as someone who wants more protein (and iron) and loves chocolate I didn't try it because I was sooo skeptical that it could be delicious enough for the effort, so I'm going to finally have to try it now and try not to make it my entire life.

It’s fine as an indulgence, but it’s the most potent source of saturated fat of all vegan foods, which means it will raise your LDL (bad) cholesterol. Coconut oil and palm oil are the only foods I avoid (aside from animal products obviously)

Generally if you eat a well balanced diet and get a decent amount of protein, and drink a smoothie with protein powder daily as a supplement (not a meal replacement) you shouldn't stress too much about protein, even if you're workin out.

Yep coconut oil is pretty awful for you. Tropical oils like coconut and palm are solid at room temp which is a giveaway(high saturated fat content). That’s also a reason they are used so often in packaged/processed food.
I never got on the coconut oil train bc it seemed obvious it was a saturated fat. I've stayed with good 'ol EVOO, I just buy better quality olive oil now. Coconut oil is a better topical product for skin, but not taken internally.

I've watched The Jazzy Vegetarian make it with firm, curdy tofu but she uses a Vitamix. It shocked me.

The tofu I used wasn't even fully silken!! if you just have plain ole tofu that should work, maybe add a lil water/ plant based milk

I'm not vegan and tbh I don't think I can ever go full vegan, but so many of these recipes look so good and I wish I had the time and money to make them (broke college student lmao) I may not be able to ever go full vegan but I damn well wouldn't mind eating these vegan foods more than once in a while
edit to add real quick that I live in a dorm most of the week and don't have most kitchen appliances to make these even if I had the ingredients (no blender, airfryer, or oven)

Yep coconut oil is pretty awful for you. Tropical oils like coconut and palm are solid at room temp which is a giveaway(high saturated fat content). That’s also a reason they are used so often in packaged/processed food.
I never got on the coconut oil train bc it seemed obvious it was a saturated fat. I've stayed with good 'ol EVOO, I just buy better quality olive oil now.
Coconut oil is a better topical product for skin, but not taken internally.
