How To Make SOUTHERN Collard Greens | Southern Collard Greens w/ Smoked Turkey Legs

- These authentic Southern Collard Greens are braised in a savory meat flavored and perfectly spiced pot liquor resulting in an amazing tender silky texture!
If you like collard greens you will love this recipe. These southern collard greens are simmered in rich and flavorful chicken broth with smoked turkey drumstick and smoked hickory bacon . They're perfect for Thanksgiving or any day of the week. The bacon and onions give them a wonderful flavor.
Ingredients
2 bundles collard greens
1 turkey drumstick
3 tablespoons unsalted butter
4 strips of bacon
1 tablespoon red hot sauce
1 small onion diced
1 pack my secret onion & soup mix,
2 tablespoons better than bouillon
1 teaspoon pepper
1 tbsp. minced garlic
1 tablespoons apple cider vinegar
1 tsp sugar
1 teaspoon pepper flakes
1 tablespoon chicken bouillon
1 teaspoon ground black pepper
1/2 tablespoon better than bouillon
8 cups chicken broth

I just made greens for the first time in my life using your recipe even though i fell short with a couple items i tweaked it and adjusted a few things and it still came out perfect i had 5 bunches of greens and used 4 cups of chicken broth filled the rest with water and i used 4 turkey legs instead of 2 and everything was a hit thanks to you ❤

Yes it’s southern but soul collard greens this is how it’s made in every black household minuse a few things u added unless u don’t eat meat or pork 🇺🇸🇺🇸🇺🇸✊🏿✊🏿✊🏿✊🏿but the meat traditionally u leave the bone for the flavor to . I’m not a bone person but it’s only right because that’s how I grew up

Have you tried the fried greens version?
All we did was after the greens were washed for last time (usually 4x) we blot dry the greens, fry some bacon, put bacon on a paper towel to drip dry, lower the heat in the skillet enough to be able to lightly saute' the greens. If some of the greens get a tad crisp is ok don't disgard. Next we prepare the greens similar to your recipe, instead of chicken broth we used pork broth or beef broth, crushed garlic, diced onion & a mild/medium heat chili pepper (we used serrano) finely chopped. And like you said in the video, depends what part of the south you from whether you use the chili pepper. And when our cousins had a good catch, we would also add seasoned crawfish when we added the bacon. I usually make mine without crawfish unless I make greens for Easter or thanksgiving then I add the crawfish as a holiday special treat 🥰

Wow! That looks good and it's different than what I grew up on as a southerner. We used fatback and smoked neckbones and smoked ham hocks. Our broth is made by those meats. Since fatback isn't healthy, I don't use it now as an adult. I use smoked turkey as a sub and it's always tiny green peppers because they're spicy as hell. Thanksgiving I'm having cornbread dressing, greens, turkey, turkey gravy, cranberry sauce, macaroni and cheese, yams and chess pie.
My grandma always put green red peppers in hers she kept them bagged up in the freezer 😋 thanks for sharing your recipe❤

Made this and it beats my old recipe, followed everything except cooked for close to 2 hours. Only issue I had was that I used reg chicken broth cause that's what I had. I suggest low or no sodium or better yet 4 cups broth and 4 cups water. Will make it again... And put a potato in the rest to get that salt out 😁

2 ingredients that take greens to the next level are: fresh ginger and diced green bell pepper. Please try this. I use all of your ingredients except the bacon. While boiling the smoked turkey , I julienne the ginger and let it boil with the turkey. I serve them with a jalapeño- cheddar cornbread with toasted cumin seed.The ginger adds such a brightness.
I will definitely give this a try next time I make collard greens again.

What is sad, is that when many people think of southern or soul food, they think it's all chicken based. Reality is that 90% of southern and soul food is pork based.
That’s because soul food was originally by enslaved Black people and white people just decided to change some of the recipes to make it into “southern” food.

I'm not trying to be mean or rude, but if you are worried about high sodium and or cholesterol, u shouldn't be eating southern or soul foods. They contain both high sodium and Hugh cholesterol

I’m sure it can be adjusted somehow even if it involves compromising the full flavor.
It certainly can be adjusted. Here’s a suggestion add the salt add the end of the cooking process. Us no salt chicken broth or water.

It is a concentrated food base made of cooked meat and/or vegetables
This is Alittle off from traditional soul greens but interesting twist .
We washed greens in the washing machine.
I gonna cook it both ways Chicken turkey or pork
Tastes the same good. If you no How to cook Soul food. Remove Pork for Health Reasons or end up with Gout. and CHF ect. I like my Greens full of meat and spicy. LOT OF PEOPLE CANT EAT PORK ANYMORE LIKE WE WAS BROUGHT UP ON. STILL TASTES THE SAME ..GOOD. BUT ITS STILL SOUL GIGI FOOD.
Those are not southern collard greens. Vinegar is a condiment usually served with hot peppers. I grew up deep south and that not. You don't use bacon if you are using smoked turkey. Turkey is for people who don't eat pork.
