AB - Awesome video!! I do my greens in a crock pot on low overnight! Same ingredients you used and they are always a hit at the dinner table!! Smoked turkey legs are the bomb for collard greens!! I grew up in the south and mom & grandma always used pork (fatback, ham hocks, etc).
As a newly single man, and the son of an amazing southern cook who passed away before I could learn some of her cooking techniques, but I'm so happy I found Cookin and Grillin with AB! Its the sensitive dishes I'm learning the most from you. Like REAL collard greens, black eye peas, southern cabbage and sausage. And the two most critical dishes among black people - Potato Salad and Macaroni & Cheese!! But with your help, I know I'm gonna get there! You the man AB!!
This is exactly how my grandmother taught me to cook greens except for discarding the stems we love those they get real tender when you simmer greens low and slow and they hold a lot of valuable nutrients plus my grandma always used a mixture of mustards collards turnips and spinach and ham hocks with turkey neck and a whole lotta onion and garlic. I just use smoked turkey drums instead of ham hocks and turkey neck these days and it’s equally as good 😊

Exactly Ashley, my mom used to use the salt meat with the titty on it, of course I just use smoked turkey now, however I don’t use the chicken stock because that’s a lot of additional sodium and it’s not needed with the smoked turkey the flavor of the greens is gonna take on that smoke turkey, that backdrop flavor, also I don’t use the pepper flakes (though you surely can) I use a real jalapeño (Again always adding the nutrients when possible) and I like to cut it up kind of small or you can drop it in. I do that for my beans and sometimes my greens and the way he washes them, we wash ours from sink to sink and we don’t use the feel fingertip method, we make sure that they’re clean…by draining the water slowly after you cleared the sink, feel the bottom of the sink, if it’s clean and squeaky so are the greens, if it has dirt and grit in the bottom of the sink, your greens🥬 does as well…that process usually takes somewhere between 3 to 5 rinses from sink to sink, depending on where you got the greens and were they planted or did you purchase those from the store, but also when we pick them in the kitchen..we’re looking for 🐞 bugs and 🐛 worms on them, so we actually picked them in the kitchen, when you are breaking down that steam a little bit… but I’m with you, for the most part, we roll them and cut them and keep the stem and cook those too, because that’s where the lifeline of the nutrients are.

Making this for Thanksgiving this year in memory of my dad. He grew up one of 10 kids in Philly and my grandma hired a southern woman to help with the cooking and cleaning. That woman introduced the kids to southern food which my dad always loved
I remember when i switched from ham shanks to smoked turkey YEARS back when everyone was buying up the shanks. Best decision ever. Looks good my brother

I boil the turkey in chicken stock for a while until it's super tender and add apple cider vinegar and butter to the pot. I use all the same ingredients you use and some chili flakes. I like that slight lip tingle when I'm eating greens. Your recipes all look amazing!

First off, those are some Beautiful Collards! I live here in North Carolina near the farms and personal gardens.. We pull them out the ground First great frost. They grow bigger than a newborn baby! I use bacon grease and cook mine using smoked turkey wings or tails. We MUST wash them in white vinegar and salt 2-3 times. I use a little apple cider vinegar in my cooking asking with red pepper flakes for heat. Another Great Video, thanks🍴

this recipe is it! Never made collards myself ... just followed your instructions as best I could (no smoked turkey legs, so I used bacon) ... the softened onions are the absolute key! Delicious! This is now my annual tradition! Also the black eye peas!
The perfect recipe for collards! I mixed collards with turnip greens and kale and add ham, browned ham steak chunks, and a tablespoon of bacon grease since I didn't have smoked turkey wings on hand. Can't wait to try them. Cornbread goes perfectly with this! This man knows what he is doing!

That's how I've been cooking my greens since the 70s. You don't have to cook them with a full pot of water all day long (lol) like some people used to do!!
