Ok, I made my Collards … AMAZING! I did take Chef Millie’s advice and made it my own. I added a tablespoon of raw apple cider vinegar and a teaspoon of sugar. But it’s the first time I used turkey necks. Will never use ham hocks again. Thank you Chef Millie!

I cook mine the same way, with boiled smoked turkey to release that extra smokiness, which in turn causes the meat to shred. Then I go in with my greens, seasonings, apple cider, brown sugar, and a few shakes of Texas Pete hot pepper sauce.

As an older Southerner. You actually can over cook collards. It's true most you can cook for hours, but it really depends on how tender the leaves are to begin with. This mostly depend on the time of year it is. Usually, if picked after the the first frost they are most tender. You don't want to cook these for hours
