Looks delicious. What I do is get a jalapeno pepper or two and I just lightly score them and leave them whole and gently stir the pot. That way you get a lot of pepper flavor without all the heat as my wife doesn't like real spicy so I just put the pepper on my plate. I also put celery into my beans. Being a New Orleans native we put the Trinity in just about everything. I have never met a pea or bean I've never lived😋😁👍 !!!
What a great suggestion on the jalapeno. We're fans of that pepper flavor, but too much heat is not something we're fans of. Like you, beans are a staple for us!
Hey there Taswell. We don't sell produce like that from the farm, but you can find cowpea seeds (beans) pretty easily online. It would be more expensive for us to ship some to you then it would cost through Amazon, crazy as it sounds.
Woohoo, I’ve been waiting for this, it looks delicious. What can we use as a substitute for the ham hock since we can’t eat pig products and I’m trying to eat more plant based for religious and health reasons and thank you for sharing.
Hey Daniel, that's a great question. We actually went vegetarian for some time and made this without the meat and it was still good. From what I recall we added bell pepper, carrots and liquid smoke for flavor. Still very good. Oh and beef would still be a good substitute. A fatty cut would do wonders for this.

Were the cow peas dried and then you were soaked overnight?
Yes, they were harvested dry and then re-constituted overnight much like you would any other black eyed pea you might purchase from the store.
