    This was a disappointment.. says "nut free and gluten free" and then the first ingredient was Coconut flour.

      Coconut is not a nut it is a fruit from the "drupe" family

    I tried making your naan bread. The amount of oil is missing. Plus, it was very liquidy. I tried cooking it like a pancake, but it taste was very bitter. I had to throw it out. Sorry, I thought you want to correct your recipe.

    Would you be able to cook the pita pocket on the stovetop also? Or an air fryer?

      Yes you can do either or. In an air fryer it might turn out more of a crusty tortilla but still would taste yummy

    Janet,
    I need help on this recipe. I made it exactly as you said. The dough was somewhat sticky. When I rolled it out, it stuck to the parchment paper. When I tried to lift it off, it fell apart. I use rolling, pin rings, so I know it was the correct thickness.
    I ended up throwing most of it away. But I did shape a few pieces to taste. It could work.
    If I hadn’t been in such a hurry, I probably would have thought about adding just a little bit extra coconut flour. What do you think?
    And I was wondering if you ever tried not sealing one side of the circle and using a whole 6 inch circle to stuff the pita. 3 inches is very tiny

      Yes this would work as a 6 inch pita. This dough is a sticky dough. If it is too sticky I would suggest adding small amounts of coconut flour. Sometimes rolling the dough a little thicker helps with this recipe. The more the dough in this recipe stretches the stickier it becomes. I do have another flatbread recipe that can also be used as a pita if you would like to check that out.       @@JanetsDeliciousLowCarbKitchen thank you so much, Janet! I really appreciate this.. I had several recipes that didn’t work for me last week trying to make something for a spanakopita wrap. It’s very frustrating to spend a lot of time making something and then it won’t work out. Especially for someone who has been doing low-carb for four years.
      Should I use the same technique of making two flatbreads and pressing them together? Or should I just fold over the flatbread like a taco.

      @@judysbakeryandtestkitchen1654 Folding it over like a taco would be the easiest. Keep the dough attached to the parchment paper and use the paper to guide the dough when folding it. This will make it much easier.

      Coconut is a fruit belonging to the drupe family. It is often labeled as a nut on food labels because some people who have tree nut allergies have had reactions to coconuts. However this is very rare.

    I tried try the first one it was a hot mess. I wasted ingredients trying it. It was crumbling so I wet it still no help . it would not stop crumbling would not lift off . it was humid at the time

      No unfortunately coconut flour cannot be substituted for any other flour. It is very unique in how it reacts to liquid SUPER absorbent

    Can you use Psyllium Husk Powder in place of the xanthan gum or flax?

      Yes you can use psyllium husk powder instead of xanthan gum in this recipe however as a general rule it is not a one for one substitute. Also keep in mind any substitutes may change the texture and taste
