    Hi I made it once with I believe rice flour and plain coconut yoghurt which is a bit sweet. I believe it was 3/4 cup flour and 1/4 cup yoghurt. I flattened them into small round balls and cooked in the air fryer. I was amazed that they became pockets! I can’t eat gluten or would love to try these. Cheers!

      That's so interesting! I wonder if I could use some combination of coconut flour and coconut yogurt. Wouldn't that just be perfect :-) Thanks for the comment!

    I thought I was being quite original with the flatbread recipe I came up with last week, looks like you did it first lol. Though mine isn't a dough, it's a batter for super thin flatbreads. The golden flax really is a powerhouse for keto baking.

    Hi Mary I’m a fairly new subscriber and I love your content especially since I’m vegan and also believe in a low carb lifestyle… I also live your tofu series I can’t wait to start making my own… especially the pumpkin & hemp heart tofu as they seem delicious and very keto friendly with the higher fat content and lower carb! .. I’ve been binging all the tofu videos now I’m learning about your Leto breads

    Hmmm.... I wonder if you could do a series of "will it seitan?" Like you do with "will it tofu". Instead of using wheat, would rice, oats or spelt work just as well?

    #reciperequest - is that doing it right? - Could you do or point us toward some bean-based low carb sliced or melted cheese substitute that's some combination of easy, inexpensive, good, and at least usable a lot like cheese? (If it's simply a tofu variation, that's fine by me.)
    Also, are there ways to refer to nut or plant based cheese substitutes that sound better than "nut cheese"? That just squicks wifey out something fierce.

    After watching this one, I gonna binge the rest of your keto recipes now.
    I'm not on keto (only vegan), but my mom is living low-carb, and as much as I want to cook/bake for her, I'm having such a hard time finding recipes that are both suitable for her and my own diet... Your videos definitely help on my quest to make an inclusive family dinner one day 😊

    These look great! I love the idea of putting gluten in there to bump up protein. But our national public health department here in Norway say we should eat flaxseed sparingly because of the high cadmium (heavy metal) content. So any suggestions for substitutions? I'm not keto, so might try oat flour.. 🧐Are you using flax for the binding ability, or more as a bulking agent?

    What's your experience on keeping the raw dough rather than freezing leftovers? Does the dough change much as it ages?

      The dough actually gets better in the fridge. There's a bit of flavor development; though it is subtle.

    Hell, I'm not vegan or even vegetarian myself, but I have been following your channel for at the very least a year since the start of your "will it tofu" series, it has sparked an interest in trying vegan diets on me...I already do MMA and cyclism, and I'm very sure, or actually...spot on sure that if I try slowly switching to vegan diet overtime it will help me with my both slightly overweight body (5'8, 182lbs) and my spine problems (this is mainly a direct cause of motorcycle accidents btw).
    I only have one life and I'm already 28 years through it, so why the heck not? Greetings from Venezuela.

    I really love the style of the video you created for this recipe as well as your narration - it's clear and concise as well as being entertaining - but not in an annoying way. LOL Thank you for a great video! I've been keto for a long time, but have not tried making pita - I'm worried that a pocket won't form . I'll have to give it a try

    I'm trying to reduce my calorie intake, so I was excited to try this out. I ended up with something more naan-like than pita, but it's delicious and satisfying! Going to try the bread version once I get an oven thermometer.

    Thank you! Mine are in the 90 minutes waiting period. You said it can be refrigerated for a few days , what about freezing them? It will freeze better after cooking them? Can be frozen the dough balls before?

      I haven't tried freezing the dough but in theory, it should be okay. I find it more convenient to cook them first and then freeze however. You can simply leave them at room temperature to thaw, reheat in a toaster or microwave a few seconds and they will be soft and pliable again.

    I used to buy regular pita bread for lunch boxes. By the end of the pack they'd be a bit stale. So I'd bake the last 2 topped in any slightly watery sauce with cheese on top. The water content would almost steam the bread back to life and eventually you got a cheeky pita pizza at the end of the week. Here's some sauces I've tried that worked. Katsu curry, pasta sauce (any Italian inspired sauce that's got more water than pizza sauce works well. I liked the garlic and mushroom one from Aldi.) butter bean alfredo sauce and gravy because poutine but pizza.

      Indeed, I believe it can be roti and naan. I think the key to this rolling out this dough is to let it rest a long time so the gluten can really relax. Thanks so much for the comment!

      I just roll them out between some parchment paper. No need to wait for them to come to temperature. Just cook a little longer.

      Very similar. The pizza dough recipe has a bit less gluten and a bit more fiber.

      No, it doesn't taste like seitan. Also, I choose the Anthony's brand of vital wheat gluten as it has the least "gluten-y" taste imo

    I am not vegan, nor will I ever be (health issues prevent me because of my serious gut and auto immune issues) but you have inspired me to get a tofu press. We made sprouted tofu today. We are giving the pulp to our adopted ex battery ladies, they are loving it! I can't absorb plant protein or iron but the rest of my family can, so we are looking into some meat alternatives to supplement our diet due to the rising cost of groceries.
