You forgot the Tare for the mazesoba, in the videos of the man who created this dish in his restaurant in nagoya you can see him mixing a shoyu Tare alongside the aroma oil. After all mazesoba is soupless ramen meaning it doesn't have a soup but it does have a tare.
I noticed a huge mistake in your recipe... it needs even more green onions! Joking... The bonito flake trick is great... because it can get into all kind of nooks and crannies especially if made even finer. It's just easier to wash your hands (and glass dish.)
@AaronandClaire Blender washing is easy! Rinse, put back on the pedestal, add soap and water, add the top, choose your settings, rinse and you’ve got a clean blender buddy 👍🏽

There's no particular brand that is best. You can easily find thick Japanese-style ramen noodles (similar to udon noodles) at your local Asian grocery store or Chinese ramen noodles will also suffice. Sometimes, the noodles are already pre-cooked, so there's no need to boil them in water first if that's what you prefer. Popular brands include Nissin or Ichiban.

@@AaronandClaire That is great Idea!! I am going to try this one. I live in the US and my Korean store has seeds for Korean radish, scallions, perilla leaves and others like Chinese broccoli. There is no English on the packages but I am getting them in the garden anyway. Very excited for these!!
It would be more honest to include the spices and sauces to the ingredients at the beginning... they are the difficult Part to have in storage as non-asian😅

That looks not too unlike a Jejuan dish known as gogi guksu. Seriously would recommend trying it, not too unlike Okinawa soba in a way
