The most impressive thing to me about the French is their appreciation for quality. Food, clothes, etc doesn't need to be fancy nor expensive, but it does need to be well made and aesthetically pleasing. Some of the best meals of my life were simple ham and potato gratins or homemade vichyssoise when I was in France. I found I didn't need to overeat like I do in America because I was so satisfied by what I had.
Well not all French are the same. i live in France and have been appalled at how many good French cafes have closed in the last 15 years. They have been replaced by...PIZZA parlours and fast food. Supermarkets, too, have a fraction of the whole food they used to stock. And it has been replaced by processed ready-meals. Workers no longer eat in a cafe for lunch. They grab a supermarket sandwich (sweetened bread etc) and eat in their van or car. And surprise surprise...obesity is massively on the rise.

I'm in the states and when I was working, even the scratch meals I put together just added to the burden of time crunch. Retired, I now have a bit more time but the complications of living suck away a lot of it. I think the meals prepared here look really delicious, but thinking about the cutting, chopping, peeling and eventual cleanup makes me tired!

It was 47° 'wind chill' 😂 so my take away is the water 💧 cucumber, ginger, lime... and sparkling Mexican mineral water. I will survive! a little less homesick 😌🙏 PS I head hunt chefs. I spent some time in the south of France (Corrèze) last year and it was by far the culinary experience of a lifetime. I ate each meal to my heart's content and came back to North America having lost weight! The quality of food is astronomically superior to what you will find in Canada and the USA. In France, I was no longer lactose intolerant and no longer bloated when eating bread, which I did every day! Well done, this brought back so many great memories, especially that fresh baguette!
Moderation: I grew up with european influences. My mom was born in the states. The rest of family were from Russia, England, Wales. Etc. NO PROCESSED food were in our house! Cooking from scratch. Lovely. Your mom looks stunning. Merci
My Grammy always had cereal or oats or toast with half a banana. To me a banana is breakfast because I always got the other half lunch was always a soup, a salad, a veggie sandwich like a watercress or dandelion sandwich, and she always used wine vinegar, then dinner always had a salad with whatever she made a roast or a pasta. My mom is also a gorgeous woman. Her diet is quite different, but still super healthy. Lots of legumes (lentils, beans, chickpeas), vegetable soups, salads, rice, eggs, olive oil of course and lots of water.
Yes - like your mom, lentils and other beans are a large part of my diet! The salad looked lovely - but I'd likely spread over ~ 3 meals! And I don't do much peeling .... I'm nearly 74 and have eaten this way for decades.
My mother was from Carignan France and she was the best cook! Iam half French. Growing up i ate some pretty strange foods such as escargot, frog legs, rabbit and many other things that my American friends never would consider eating. My mom is gone now and I miss her.

And the bread and peach and the chocolate…. @70 I can no longer eat like that sadly. I can eat maybe a 1/4 of the salad. My new lactose intolerance and lack of gall bladder now and all the new meds they have me on cause many issues with eating almost everything like more than a slice of Avacado, butter, oils, so I switched to GHEE, Greek Yogurt, and Avacado Oil spray….😢😢 I am learning a whole new way to eat than I did in my 60’s. I have always been eating heart healthy, lower carb, Mediterranean /pescatarian diet. I think its all the olive oil and walking, they sure eat plenty of bread I wish. Maybe more dark chocolate? My new fave is JOJOs dark choc protein peanut butter bars from Costco. I go vegan now if store bought to avoid lactose. Live on 1/2 banana, applesauce, frozen mac nut milk, pickles. Eggs, salads. Tuna. I think freshly baked bread from outside USA is key, no GMOs. Bale your own. Looking into Chickpea and follow the Pasta Grammar to see how others live outside us. Too much corn and things in the cos and milk I suspect but could be wrong. I am just happy to have lived a nice long happy life so far. I am only allowed single digit carbs at a meal for keto and weight maintenance. I am mostly chair bound so much smaller meals of course. Depends also on how long I can stand to prepare meals in kitchen. I try to do grocery unload, veg clean, prep and store in easy bento boxes for meal prep later in week nights for us. I'm laughing at myself because, for me, the potatoes are the point of salad Niçoise. Of course the combination of all the vegetables, fish, and eggs make a delicious meal, but when the boiled and sliced new potatoes mix with the olive oil, tomato juice, tuna juice, etc. they become transcendently delicious. One thing I like to add is capers. Delicious tiny bombs of salty, bitter, goodness.
Her salad looks absolutely amazing but it's not a salad niçoise ❤ A traditional salade niçoise does not have green beans and/or potatoes 🫣 Or vinaigrette !!! I know I sounds like an annoying asshole but as a native niçoise it bothers me! 😂❤

What we call French bread in the USA is nothing remotely like a baguette except in the shape. Just plain old regular white bread recipe used for every loaf.
I grew up at the German side of the German French border. My French is basic, but I have the same appreciation of good ingredients like French people. And there is no unhealthy food. Quality is important and moderation, but most of all enjoying food.
Im Scottish and i regularly make Salad Niscoise in the summer when thebtomatoes actually taste of something. Its a full meal in one bowl. Perfect. I love rose water on strawberries i might try orange blossom water. I cant get enough of the smell when youre druving past an orange grove.

I enjoyed this so much because it reminded me of my mother. She loved all things French and was fairly fluent because she minored in French in college. My parents went there many times. Her favorite place to visit was Aix en Provence. She absolutely loved it there.

The 60s today are the 40s of yesterday. Elegance in all the movements is enjoyable to watch. To summarize - cooking good meals is not a science but a selection of healthy ingredients and some hard work. Good healthy tasty food does not come "out of a box". My grandparents on my mother's side were from the Montreal area in Canada and were fully French. I also eat yogurt and fresh berries often for breakfast. I have it topped with granola. You know there is actually a town in Sicily where the language was changed by Provençal soldiers who came and stayed on. It is called San Fratellan. It is a gorgeous fusion of Sicilian and Provençal French. Also I love flavored water, plain water is boring I always put fruit like lemon or ginger, or pineapple in it.

I just put a few salad leaves and cucumbers and carrots, with some salad dressing. No wonder it is not filling or satisfying😳🙄🙄😆 I love you guys loads!!!🤗🤗💕🙏

And the bread and peach and the chocolate…. @70 I can no longer eat like that sadly. I can eat maybe a 1/4 of the salad. My new lactose intolerance and lack of gall bladder now and all the new meds they have me on cause many issues with eating almost everything like more than a slice of Avacado, butter, oils, so I switched to GHEE, Greek Yogurt, and Avacado Oil spray….😢😢 I am learning a whole new way to eat than I did in my 60’s. I have always been eating heart healthy, lower carb, Mediterranean /pescatarian diet. I think its all the olive oil and walking, they sure eat plenty of bread I wish. Maybe more dark chocolate? My new fave is JOJOs dark choc protein peanut butter bars from Costco. I go vegan now if store bought to avoid lactose. Live on 1/2 banana, applesauce, frozen mac nut milk, pickles. Eggs, salads. Tuna. I think freshly baked bread from outside USA is key, no GMOs. Bale your own. Looking into Chickpea and follow the Pasta Grammar to see how others live outside us. I am in Maui so do have some access to local grow farmers markets thankfully. Mahalo for this video, eye opening and your mom is beautiful! So slim. Like my mom was. Not like many of us in US now. Too much corn and things in the cos and milk I suspect but could be wrong. I am just happy to have lived a nice long happy life so far. Though giving up the red wine and chocolate and bread have me Hangry sometimes.😂😂❤❤😊😊 loved her last two recipes also but too many carbs for me sadly. I am only allowed single digit carbs at a meal for keto and weight maintenance. I am mostly chair bound so much smaller meals of course. Depends also on how long I can stand to prepare meals in kitchen. I try to do grocery unload, veg clean, prep and store in easy bento boxes for meal prep later in week nights for us. Her salad would last me and hubby a week! We could make Egg Salad and Tuna sandwiches, Tacos, Fajitas and many small lunches and easy meals with her lunch! ❤❤ Mahalo😊

I'm laughing at myself because, for me, the potatoes are the point of salad Niçoise. Of course the combination of all the vegetables, fish, and eggs make a delicious meal, but when the boiled and sliced new potatoes mix with the olive oil, tomato juice, tuna juice, etc. they become transcendently delicious. One thing I like to add is capers. Delicious tiny bombs of salty, bitter, goodness.

Her salad looks absolutely amazing but it's not a salad niçoise ❤ A traditional salade niçoise does not have green beans and/or potatoes 🫣 Or vinaigrette !!! I know I sounds like an annoying asshole but as a native niçoise it bothers me! 😂❤

What we call French bread in the USA is nothing remotely like a baguette except in the shape. Just plain old regular white bread recipe used for every loaf.
I grew up at the German side of the German French border. My French is basic, but I have the same appreciation of good ingredients like French people. And there is no unhealthy food. Quality is important and moderation, but most of all enjoying food.
Im Scottish and i regularly make Salad Niscoise in the summer when thebtomatoes actually taste of something. Its a full meal in one bowl. Perfect. I love rose water on strawberries i might try orange blossom water. I cant get enough of the smell when youre druving past an orange grove.

I enjoyed this so much because it reminded me of my mother. She loved all things French and was fairly fluent because she minored in French in college. My parents went there many times. Her favorite place to visit was Aix en Provence. She absolutely loved it there.

Her diet is fabulous, she eat lots of vegetables and finished every meal with a fruit. She even balanced a little bit of healthy dessert in between!!! She didn’t take anything out of a box to eat
No big steaks or chicken for dinner, just potatoes, tomatoes and herbs and always a fruit after. Medical Medium says ''don't eat ONE banana. Eat five.'' Fruit is so important.

I had the great fortune of going to France for the first time last year, spending most of a month in the country, including a ton of family history research. One of the treks took me to Provence. Some of my mother's family are from Moustiers-Sainte-Marie. I fell completely head-over-heels in love with the country.

I am a 61 year old woman from the US and have a recipe for this salad and it did have potatoes also. It looks very filling. I have some French ancestry. My grandparents on my mother's side were from the Montreal area in Canada and were fully French. I also eat yogurt and fresh berries often for breakfast. I have it topped with granola. You know there is actually a town in Sicily where the language was changed by Provençal soldiers who came and stayed on. It is called San Fratellan. It is a gorgeous fusion of Sicilian and Provençal French. Also I love flavored water, plain water is boring I always put fruit like lemon or ginger, or pineapple in it.
