I agree. Stuffed mushrooms are a 1950's thing! My mom has a great recipe and she was married in 1959. Her recipe uses the stems and sherry-no cheese and no olives. Thanks for the recipe...and BTW...I love cooking with my mom too!
My mom has a super 50's version - cream cheese, minced bacon, onion & mushroom stems. They always got snapped up. She is the queen of cream cheese appetizers (Upper Midwest!) - the other one is dill pickles, dried and slathered with cream cheese and then wrapped in corned beef, chilled and then cut into "coins". It sounds a little gross, but they are a little bit of salt heaven and went as fast as the stuffed mushrooms.
John, your recipes are so alluring and yet accomplishable for most people regardless of their cooking expertise. Your demeanor is so gentle and polite which is hard to find these days. You have a soothing presence. Best wishes for this channel. I love it!
I love when you and your mom cook together! You have the most awesome recipes! I wish I could cook with my mom again. She's limited due to disability. But when I have the extra time I enjoy cooking something special for her.
Just made this with dinner, husband says more, more, more. nothing else is needed for dinner. just make only these & many, many more! So delicious! Thank you so much for sharing!
Thank you and gracias to your Mom. The recipe is insanely good. I used baby portobellos because they looked the nicest at the store. I had left over stuffing so I used your Mom’s suggestion. I added chopped up the stems to the stuffing mixture and baked it in ramekins. Great snack too!
Those look amazing and sure they taste just as good. i made mushrooms stuffed with artichoke, spinach and mushroom stems with cream cheese, mozzarella and parmigiano reggiano. And they were delicious. the only thing i'm missing is my mom being there to help. Thanks John and mom.
I make them as a main course. I start with large Portobellos. Ingredients: cream cheese, 4 cheese pizza blend, either diced ham or Polish kielbasa (Italian sausage works great too), sometimes I add some ricotta cheese, and parsley. Brush the mushrooms with some olive oil, stuff (i like them a bit overflowing) top with a bit extra cheese. Then it's on to the grill at 400 until golden brown. I'll try yours if you try mine!
This is the first time I have watched your show. TH-cam recommended it to me for some unknown reason. I am not a cook and do not watch cooking shows BUT I will be forever thankful that TH-cam did. I had stuffed mushrooms only one time years ago that were stuffed with sausage. I loved them but I have been vegetarian for a long time and now I can't wait to get to the store for mushrooms, cheese, and olives. I am shocked that this is your mom. I thought you meant to say sister but I see in the comments that she is really your mom. I am hitting the subscribe button and also the "like" and will now binge read your past vids. Who knows, I may learn to cook. Thank you.
Very very cool to see your lovely mother in another video. I'm using fresh crab as my main stuffing ingredient but I like to see what you have to say. You have helped me dial-in many recipes. Peace
John growing up Italian I had this every Thanksgiving and Christmas they.. Are... My... Favorite!!!! You made me hungry and to have your mom in the video brings back memories of my mom. 😊
I made these for Christmas since my Aunty loves stuffed mushrooms. They were good as long as you like olives cause it was definitely olive heavy and their taste was pretty strong and distinct but if you like olives then it would be a good recipe for you. I made double the recipe and then I cut up the stems and sautéed them in a little bit of butter to add them to the filling. His mom is definitely right in that you don’t need to add any salt cause all the other ingredients have salt in them already. This wasn’t really for me since I’m not a big olive fan but my aunty seemed to like them so if all the ingredients sound good to you then I would definitely recommend this recipe.
Loving your show, and now your beautiful mother...adorable!! I've been baking for over a decade (not professionally), but you've really opened my eyes and have inspired me to try some fantastic things! Love from Minnesota!!
I made this for my mother and I one night...it was AMAZING! Highly recommend, super super easy & amazing flavor! Thank you so much for the recipe, I will be using this for parties in the future :)
Delicious! I usually add chopped/minced chives, minced thai chilies, ' chopped/minced walnuts, and top with grated havarti-jalapeno cheese, or a strong cheddar!(works with swiss, smoked gouda, any cheese you prefer! )
I'm trying mine with the havarti and smoked Gouda, with a hot sausage, spinach, tomato and bread crumbs. Tomorrow is my birthday so I'm going all out on this dish! I'm glad I saw your comment, great minds think alike!
I always have too much stuffing for my mushrooms so I take the smaller end of a melon baller and scoop out a little of the mushroom inside to make room for the filling.
Thanks for sharing your mother's recipe, it is delicious. I was lucky I had a can of garlic stuffed mushrooms and all the flavors worked together for this treat.
😍😘😘 this look delightfully scrumptious, you're mom is such down earth lovely gorgeous lady with nice accent, it's such a treat to see you team up with your mom
I have stuffed mushroom in my oven right now! Hot Italian sausage, scallions, chopped mushroom stems, mascarpone and Parmesan cheeses, Panko bread crumbs.... the mushroom caps are big white button ones, which were marinated in olive oil and Marsala wine while I cooked the filling. I will def try your recipe!!
I love your recipe with the addition of olives! When I make them (especially in giant batches) I mince the stems and add them into the stuffing mixture...they really help to expand the filling to stuff even MORE mushrooms! Keep your great videos coming. PS Plz tell Rita HI!
My boyfriend is allergic to olives and we don’t have any dairy or meat so we subbed some artichoke hearts for the olives and a little soy sauce and garlic for the Worcestershire and added a pinch of salt turned out great! Used a vegan cheese as well. If you find the mushrooms get too juicy/watery maybe add some bread crumbs to help absorb that
Mmmmm, don't these look good! Going to give them a try, but might add in a bit of cream cheese. One of my favorites has cream, ham, fresh bread crumbs and a few other ingredients. Another has sauteed onion, mushroom stems, celery, breadcrumbs etc. The possibilities are endless! 🍴👍🍴
Great recipe, making these tomorrow for a low-key bachelorette!! Also, you're killin' me with the Herend Rothschild Bird, just casually in the background - it is so so beautiful!
Would this filling suit bell peppers? My partner doesn't like mushrooms but I've always fancied making stuffed mushrooms and know you can do it with peppers too :)
Love when y'all cook together!!..Haha @snarf them down!!! They look very gouda hahaha..I love when you use the big fancy words like "surreptitiously" lol
I prefer to take a small spoon and dig out the “ gills” on the inside. I find that when I compared one with and one without, the mushrooms with the gills were a little bitter. I also use larger mushrooms (3 1/2”, 9 cms.) that allows me to make even more powerful fillings like with chopped shrimp of crab meat.
Hi, Preppy!! Is that your name? 😃 I made your Swiss meringue buttercream frosting today and for the first time it came out perfect!!! And I’m in love with it 😍 Thank you so much 😊 I have a 4 years old daughter, she loved the meringue itself before I added the butter. I will never be disappointed with American buttercream anymore because from now on I will only make this one 🙂 I am subscribing you right now 😄
This is very different from the recipe I’ve used in the past (which has been very popular), but I want to have what you’re having. 😉 did I mention that I love a man who considers what goes with a martini? Very important.

He is so adorable. I love how agreeable he is with his mom. She is the boss in the kitchen today.
I just love when you cook with your mother. The stuffed mushrooms look amazing.

So delicious! Thank you so much for sharing!
Such a beautiful mother and son.....I loved watching the bond between the two more than the stuffed mushrooms

I would have added some of the stems into the filling.
I was thinking the same
Definitely

Leave out olives and put in chopped artichoke hearts or asparagus tips
I love when your mother visits. The recipe looks wonderful! Adding mushrooms to my shopping list!
