    I’m 14 and haven’t seen my friends in a while so I’m throwing a tea party with them. I’m the host and I’m trying to do like a fun sorta fancy thing. I’m doing this all on my own and I’m really exited. This was very helpful thanks!

      Sounds like Americans have better and more complex taste buds and the English would sacrifice flavor for tradition. Iced coffee and tea are both great and it just depends on the moment regarding hot vs iced .

    Mixing cranberries and chicken together feels like something altogether unworldly. I have never ever considered cranberries and chicken as sandwich fillings. But i do appreciate the time you've taken to provide this insight and recipe, and I AM looking to make some finger sandwiches for a tea party as a way to reconnect with my childhood self :)

    I go three bars to a sandwich and butter both slices lightly. Bagel with lox, shmeer and capers is also perfect.

    Wipe your knife between cuts so you dont transfer filing stain when slicing. Wrapping sandwiches with messy fillings in cling film and slice through the film to stop filling oozing out. Always use a sharp bread knife to stop flattening your sandwiches and saw dont press down.

    I make these for work functions a lot. For slicing, use one of those electric carving knives. Works awesome!

    Although you did leave out the roast beef/horseradish combo.
    I'd also never put cranberries in the chicken, nor cucumbers in the salmon, but no dramas.

      Quite similar to Coronation Chicken sandwiches, but I would use dried cranberried instead of fresh. It's the same concept really.. chicken and a dried fruit with mayo.

    High tea anyone 😉 so good so many variations to enjoy simply mouthwatering & you can experiment with different fillings. Crustless is best save the crusts for Sunday roast dinner stuffing 👍 so going to make all of these sandwiches to entertain my friends at afternoon tea ❤

      Priscilla afternoon tea and high tea are not the same thing. High tea is a light supper early in the evening, before dinner time, instead of having dinner.

    fresh cranberries were extremely tart, use dried cranberries or raisins instead.

    I'm in the uk, I would certainly use a bread knife when cutting the sandwiches and you wouldn't lose some of the filling as you did in the first sandwich, the knife you used wasn't cutting through well enough, because it wasn't a bread knife. Sorry, just an observation.

    You might also trying freezing an unsliced loaf of bread. If you then butter a slice before you cut it. You can get a very thin slice of bread which is more appropriate for a tea sandwich rather than a honking great lumberjack slice.

    Your chicken filling is not cut finely enough. It will all spill out on peoples clothes. Why dont you cut off the crusts first?

    It's called afternoon tea! We don't call tea sandwiches tea sandwiches! We call them finger sandwiches and we have them at afternoon tea!

    If you refrigerate the sandwiches for a few hours before you slice them, you will get a cleaner end result.

    You just brought back some wonderful childhood memories for me.....my uncle brought back from England an English War Bride.....she was so sweet and taught us all how to have afternoon tea......my aunt and uncle are both gone now but I still have my wonderful memories of a woman that gave up every thing she new for the love of her American soldier....they were married until he died in the 90's and she fallowed a few years ago...I think I will go make tea......Thank you so much....

      please somebody find ja rule in America around 4 people work. Regular word days are 9 am to 5 for people who work in offices, other people here work 2 jobs just to make ends meet. Many companies give their workers only part time work so that they won’t have to pay their employees health insurance.
      At 4 pm most people in the US are working no time for coffee nor tea. Maybe a coffee on the go while working if anyone had time to go get Starbucks. It’s crazy

      @@CasianaCarmazan These sandwiches would be for High Tea, not afternoon tea. Normal afternoon tea is tea and a biscuit. High Tea is more of an event, usually involving the Ladies Who Visit or some special occasion, normally on a Saturday or Sunday.

    Make cream cheese mixture overnight then sit out for room temp. All the flavors will marry. Make a more potent sandwich. Cut cucumbers place on paper towel with light salt to remove the water. Works well for tomatoes sandwiches too!

    Love your kitchen! I cut the crusts first, personally, I find it easier to cut into a plain stack of slices than it is when they're all made up into sandwiches; plus, that way the crusts remain perfectly clean when I re-use them to make croutons or powdered bread crumb in the oven.

      I wouldn't, the filling wouldn't be as exact as when it is cut into. the crusts are also yummy to eat, just not when served with the dainty ones :)

      It does seem wasteful to cut the crust with the filling already in there - you end up losing quite a bit

    I'm definitely not a coffee drinker, as my husband is, I do love my tea, hot or iced. I have always loved going to quaint little tea rooms. I so enjoy learning all about the different English teas. High tea, etc. I never get too fancy, but to me there's nothing more satisfying than a hot cup of tea, and a good book on a rainy day. Or for that matter a sunny day, cloudy day, snowy day, or any other day for that matter. I make the cucumber tea sandwiches, chicken salad sandwiches, as well as stuffed cherry tomatoes, scones with a little jam. How soothing is that.

      Linda Swoveland I’m living in the southern U.S. currently, and they LOVE their iced tea down here. So whenever I drink normal, unsweetened, hot tea and read a book my friends always question why I do it. I also love the rain, I’d go read in the rain if it didn’t get the book wet and ruined. I’d love to move back to Washington state, or go to the U.K.

    I love tea sandwiches so much. We used to have them at bridal and baby showers. Everyone had their specialty sandwich. The most recent shower I went to was held at a restaurant, I missed the crowded living room and busyness. Hopefully it makes a comeback, young people have no idea what they are missing.

      Diane Moril, the pumpernickel bread is more conducive to making circles and has a small crust. It wastes little bread and is perfect taste wise for cucumber sandwiches.

    I used to work at a catering company. And found out all the catering companies in my town used the same bakery for Tea Sandwich bread. It was one that had a bread slicer that sliced extra thin, so you could have more delicate sandwiches. They would slice the bread lengthwise so you could make more sandwiches with less work. You just need to phone the bakeries in town to see who has the extra thin bread slicer. Also if you do find the bakery, they usually like you to order the bread a day in advance as it is considered a specialty item.

      I worked in a bakery and we regularly received orders for Pullman loaves sliced thin and lengthwise. We knew they would become tea sandwiches.

    Yes you can make it a day before. Refrigerating it doesn’t mean it will dry it if you wrap and seal it in Saran Wrap to keep the moisture in. Also, light buttering of the bread somewhat helps prevent the bread from being soggy. The butter becomes more solid when refrigerated hence becoming a barrier. Refrigeration holds everything in more solid which helps keep it together once you cut/slice up your sandwiches on the day of event. I used costco roasted chicken for the chicken sandwich and it actually tasted good. I hope that helps.

    I also add a small amount of lemon juice to the cream cheese and some chopped chives, for the cucumber sandwiches.

      thank you, Jacqueline (my Godmother's name !!), I will follow your advice since I have no lemon but lemon juice in the fridge, and my garden full of chive ! Dill is sweeter though, and I will probaly use the dried one. for I am invited to a tea party tomorrow and I will bring tea sandwiches to our host !

    Another favorite of mine (maybe not original to the UK) but cream cheese softend, stir in well drained crushed pineapple and spread on a quality raisin bread. Love the look of your sandwiches. Thank you for sharing your ideas.

    I’m English born and bred, and I have never seen a recipe like that chicken salad! I guess it’s kind of closest to a coronation chicken sandwich here - basically chicken in curried mayo with sultanas and coriander. A very old fashioned recipe. Not sure what pumpernickel is either, but looks interesting! Oh, and I do love a good old Lipton peach iced tea, as well as the usual bog standard tea we drink here. So refreshing in the summer.

    Love a grand tea time!....my mother God rest her soul, would put the crusts in a plastic bag and keep in the freezer until she made poultry stuffing for Sunday dinner ....also saved every margarine wrapper in a bag in the fridge for lining the large cake pans for baking matrimonial cakes and such....with eleven children she was quite an amazing woman and cook! I have inherited her good China so I’d better do her proud!💕

    Will definitely try the Chicken, Cranberry & Watercress -yum! You make all of this look so easy. I took my Mother to Afternoon Tea at the Huntington Rose Garden in Pasadena, CA this year. They served simple open faced Cucumber Dill sandwiches, Smoked Salmon and the Egg salad just like yours. $67 per person! Now with your video I am going to throw my own party. Thank you.

    I.would cut the edges of the bread first. At least that was how I was taught in school. I would also cut the bread rounds before filling. Too much waste and too messy.

    These are wonderful!😍 Squares sandwiches at a private home and rectangular if in a hotel. I've been to afternoon tea gatherings with my grandmum as a child, so many times I lost count. I must agree with you that egg sandwiches are the best for me.❤

    The egg salad sand, ESPECIALLY, imo, goes so well with a cup of Lapsang Souchang. The smokiness plays off of the creamy egg salad so well.
    I have one Persian cuke left until next grocery shopping....I think I know how I’ll enjoy it at midday tomorrow!

    I always cut my crusts off when the bread is frozen so there are clean lines. The bread thaws so fast that it doesn’t add any wait time to serve the sandwiches, but it does keep the bread from collapsing under the weight of its filling and the knife. It’s also very important to blot those cucumber slices with paper towels to remove as much water as you can before adding to sandwich ☺️

    I’m English and I love afternoon tea, but I have to say , iv NEVER eaten chicken with cranberries 🤢 but the rest are spot on sir , try adding some mustard cress to your egg yummy 😘

      Yeah I think it's a very American thing to add random fruit to chicken salad. I've never seen it personally either but I've seen American videos where they add grapes as well.

    My husband (a big outdoorsman) and son in law (outdoors but more kayaking...hiking)
    were at our house doing outdoor work...I invited them to join my daughter and I for high tea at Gourmet Girl cafe...both had never had high tea.
    It was well received!
    Not that they would do it often it was really enjoye by all. Now they know why we like it so much.
    I like all your sandwich choices and presentation!!!

      I like the afternoon vs the high personally if the main differences are the sweets n crap at high. Afternoon seems more savory and light?????? Just my observation.

      Maxine Jacobson absolutely right. High tea is a very early evening meal of a plated main course with bread, butter and tea. We wouldn’t have dinner afterwards but instead a very light supper. High tea has rather fallen out of fashion but afternoon tea is hugely popular. Every year I’m taken for AT as birthday treat. We have some very fancy AT places in Scotland. Always a treat.

      I like chunkier fillings because that gives a little variety. They shouldn't all be mush on the inside

    Ah yes, when ladies actually took the time to make dainty sandwiches and tea cakes to have with coffee and tea in relaxing social gatherings. It’s nice that men are also into this tradition. Seems people are so busy with their social websites and texting that they’ve forgotten what it’s like to meet face-to-face and have a real conversation. I’m a pariah because I don’t have a Facebook account. 🙁 We need to bring back the social graces. Lovely sandwiches.

      I totally agree Mom Granma that people just don't seem to catch up face to face much these days. My family/friends and I seem to be the exception. My Mam always held 'teas' for friends and family and consequently I do the same. A nice afternoon tea with small sandwiches and small cakes, served on my best china plates, cups and saucers - you just can't beat it. Best wishes from the UK. X
