Thank you for this recipe.My mum used to make it this way but she used to fry mustard seeds, turmeric powder,curry leaves,black pepper corns, jeera and garam masala in a little oil and pour it over the pickle while its still sizzling and mix everything together and then bottle it in an airtight glass jar and store it in a warm dark place.This trick actually causes the pickle to ferment better as and prevent it from getting mouldy, as opposed to storing in the fridge.

You bring back so many memories of her and I so wish I could have ANY of these meals..... unfortunately in Australia we have lots of people from all over the world but nowhere can you get these original South African meals... There's one ingredient that can't be bought from shops..the love and joy in preparing this food for family.I have tried to do a few but I would rather be at your kitchen table....live long and please pass your skills to your children...Thank you so very much

Interesting variant! I will try this way. I know it another way, with mustard seeds and fenugreek roasted in sesame oil, as well as turmeric, asafoetida, cumin, chili powder, too. The dehydrated mangoes then go into that flavored oil.

Hi there, I would suggest adding more mangoes, cut and dried without salt before adding to the pickle. You could also add chillies which will make the mango pickle hotter or carrots cut and dried like we would do for veg pickle. The carrots will draw some of the saltiness but may not taste great themself

Hi. Yes you can freeze the completed pickle. I would suggesting reducing the oil though and only coating the mangoes. When you defrost the pickle again you can add additional oil. The mangoes will soften through the process though.
Thobashnee Naidoo,you can freeze green mango for pickles,but when you defrost them,they will become lumpy,coz of extra water from ice,just put them in the sun or dehydrate them,then put masala

I see you put with out heating it.
No heating of the oil necessary - the hot oil will cook the mangos and make them soft/lose their crunchiness

We leave it out at room temperature. The salt is to try to extract much of the moisture from the mangoes.
When you say rinsing out the salt, do you mean rinsing with water or just draining it out? Thankyou.
We rinsed with water because otherwise the salt becomes too much

Yes if it hasn't started to ripen then you can still use the mangoes, as long as it's still firm.

Yes we like the pickle to have some bite to it. Maybe not tough but firm. It will however soften with more time.

We like the mangoes to be crunchy once the pickle is set. But a lot of people do sun dry the mangoes as well. Up to your preference.
