Add oil ontop then keep for 3 to 4 days and save
There is a spice company in Durban that makes it, it's called Osmans Pickle Masala. I have used it and it gives the perfect taste. This Masala is all in one,just add salt and oil.

So you have achar in 32 days? This is far too long. With your soaking in 14 days and another 14 days with no preservative added, the mango will smell and taste 'off'. Achar can be made in just 2 days!

You possibly experienced one type and then thought you knew it all LOL. The big round orange yellowish mangoes which you probably think only grow in the Caribbean we have them too

I had a Latin restaurant there for like long time, me and my partners were always frustrated for the lack of products you have, We always struggled to find the things. No good avocados either, (most of the restaurants even used frozen avocado paste), limes are very expensive and not always available, very limited variety of sea products too, most of them frozen, and the problem is that South africans presume they have everything whish was ridiculous to hear, they really have no idea how limited they are.. I mean, serious! Cape Town might not be all south Africa but come on guys, CT is its presentation letter at a Gastronomic level, a Culinary reference and its a Shame! Comparing to LATAM markets, you don't pass!

Atchar salt is MSG and atchar dye is some sort of Paprika oleoresin. I hope it helps!
