Making crunchy and delicious wedding style vegetable pickle!

  • Vegetable pickles are the perfect accompaniment to any meal, especially in the winter months when rich hearty meals can be brightened up with a fresh crunchy and hot side of mixed vegetables. This is my recipe for vegetable pickle, requested by a number of viewers!
    Ingredients
    1/4 cabbage sliced this
    1/4 cauliflower cut into florets
    3 carrots, julienned
    200g green beans
    A handful of green chillies (to your preference)
    100g Bhor
    100g Figs
    1.5 Lt white spirit vinegar
    8 cloves garlic
    1 tbs pickle masala
    1 tbs pure chillie powder
    1 tsp sugar
    1 tbs salt
    3-5 cups of oil
    Store for 3 days to a week to allow pickle to "cook". Perfect served with Biryani or kitchree or any vegetarian meal!

    Maa, you are great. I love your recipes. Please do not use newpaper to dry the vegetables. The ink used in the newapaper print is toxic. Wax paper should work just fine . Thank you

      I prefer to add the salt to the pickle itself. Soaking the pickle with the salt would require additional salt as we drain the vinegar and dry the vegetables. Adding the salt to the pickle also allows you to taste and then adjust if it is less.

      Hi yes, mutton goola or Amathungulu in Zulu grows along the east coast of South Africa. We must try to get our hands on some, there isn't a formal cultivation and trade in the fruit. You have to almost find the plants and pick the fruit yourself.

    Instead of using newspaper for placing veggies in sun , use waxed paper or parchment paper or even brown paper.

      If it is in air tight container then you can keep it for a couple months in the fridge. However one tip is to never use a wet spoon when dishing out the pickle. The vegetables will lose some of their crunch with time though as well.

      You can add baby onions - we do this for our vinegar pickle.
      Kumquat and lemon we usually do separately as they can be quite strong flavours. Did you see the recipes we have for both?

    Can I use raw oil in mango pickle. As you do with vegi one. I got a few mangos . I will like to try to soak pickle. Please advise. As we always cook our oil and allow it to cool completely but I see you say it won't keep vegis crisp. So need to know if I must use cold uncooked oil for mangoes too.

      Either way works. If you leave the mango pickle to rest in the sun or a warm place the uncooked oil will also slowly "cook" as the pickle soaks.

      In theory it can, but the pickle needs some time to “set” - for the spices to get into the vegetables and the salt to seep in. It tastes better if it is given about a week before tucking in.

      If you have kumquats, wash them, make a slit about a third deep so the oil can get in. Soak in vinegar overnight, then drain and dry (not in sunshine). Cook you oil and then let it cool. Once your kumquats are dry, put back into a dish, add pickle masala, add salt if the pickle masala doesn't have salt, add a small amount of sugar, crushed garlic, pure chillie powder and then add part of the oil and stir through. Let it stand after mixing and then place into container. Top the oil up until kumquats are covered. You can also add green chillies to the pickle.
      You will have to adjust quantities according to how much kumquats you get.

      Hi Rosy I wrote out the recipe becasue I'm not sure when we will get green pawpaw again:
      I had one large green paw paw - I peeled and removed the seeds and cubed into about 1cm cubes.
      Then soak in tap water for about 2 to 3 hours to draw out the "milk" from the paw paw.
      Then drain thoroughly and soak in vinegar (enough to cover all the paw paw) overnight
      The next day drain and then let it dry (not in the sun)
      In the mean time boil about 1 1/2 cup oil and then let it cool completely.
      To the dry paw paw add 2 tbs pickle masala, 1 tsp pure chillie powder, 1 tsp salt (but if the pickle masala has salt adjust accordingly), about 12 cloves whole garlic, 2 cloves, 1/2 tsp sugar and mix it all up.
      Then add cooled oil to the mixture. For about the first 24 hours keep out of the fridge and mix every so often. On the second day you can store in air tight container and put in the fridge.

    What is bhor ? What kind of figs ? Very interesting . Would like to try .

      Bhor is an Indian berry that is dried after it ripens. With a very large seed. I'm not sure which figs exactly - we buy both from the Indian spice shop down in Durban and use them as is.

    I made Jalapeño , its very easy but depends on the " heat " u prefer .
    However it is very yummy! steamed or not?

      Yes that's definitely adjustable to your own preferences.
      For the vegetable pickle we only soak in vinegar and we don't steam the vegetables.
      For chillies pickle we do a quick cook. Let me know if you'd like the chilies pickle recipe.

      Sometimes the paper towels can get soft and disintegrate when they get too wet but will definitely give it a try with the next batch!

      Yes you can - be sure to have a wire rack below it to allow air flow so it can dry properly.

      No the bhor and figs are optional. Bhor is sometimes called Indian dates or Indian plums and is a fruit that is dried and we usually get them in the Indian spice shops. A real favourite especially in sweet and sour sauce/pickle that the kids would enjoy after school!
