    This looks more subtle and sophisticated than Greek dolmades with cabbage,
    which are excellent in their own way...

    Amazing as always, Ryusei-San! Stuffed cabbage rolls are amazing. In poland they are called "Gołąbki" and in germany "Krautwickel". I am very curious how the japanese version tastes. Now i can try and make them myself!

    I love cabbage rolls, I often make some during winter ! I don't usually add dashi, just a little bit of water and cover with a lid. This way the juices from the cabbage and the meat make a very tasty broth 😊 I will try adding shitake next, it's a very good idea and must be delicious!

    Very similar to how my german Oma taught me, she added rice to the meat mix to absorb the flavours and stretch the meat. When frying the onions I add some water after the oil and before the salt and place a lid so the onions steam/poach first and then fry, rather old school but it produces the results I like.

    Cabbage rolls are a part of my culture…with tomato sauce. However, these looked so good that I must try in the future. I think it is a great idea not to put rice in them (as we do) but instead have rice on the side. Also a good suggestion about using the tip of the knife to remove the stem of the mushroom.

    This looks delicious! I love cabbage rolls, we ate them often when I was a child because my mother's family is Polish. We actually have all of the ingredients right now, except for yuzu ,however I think I can use fresh lemon peel. It's not the same I know 🙂. I grow citrus as a hobby and next spring I want to add a yuzu tree to my collection - so someday we *will* have our own yuzu. Yuzu is still hard to find in the US outside of major cities like New York or Los Angeles.

    Absolute genius 💡👑 I’ve been „experimenting“ with cabbage rolls a lot recently and found out that flavour-wise, savoy cabbage or arrowhead work best for me. The traditional sauce for cabbage rolls in my part of 🇩🇪 is quite heavy and not very pretty: it’s a thick gravy with lots of onions and diced bacon. I prefer a light tomato sauce and will definitely try yuzu❣️

    Ooo I'm so happy you gave us your recipe for cabbage rolls! I've tried to make them before but I could never figure out how to get the cabbage leaves off without ripping them terribly, so I am so grateful for your tips!! I usually steam my cabbage rolls and dip them in a spicy sauce, but these look delicious and I will definitely try it 😆 And your plates that you use are always so pretty and unique :D I love your videos, Ryusei-san!     Nice vid and recipe, Ryusei. I have had Japanese cabbage rolls in Japan, the mother of a friend made them very much like yours. No yuzu though, but well green chili with yuzu to go. In Sweden they are made very much like you do, but with rice in the patties and then baked in the owen with sugar syrup and butter on top for 45 minutes. Here in Romania we make them from fermented cabbage and we call them sarmale. Most people also add in rice with the meat mix, I do not. Most of the time they are eaten just boiled in an iron pot with a chicken bouillon, but a fancier version is with the rolls in layers between tomato sauce and sour cream in a clay pot and made in the owen. Many ways to make cabbage rolls, I agree with some comments that Polish golabki are excellent. Arigato!

    Great video, as usual. Yuzu is hard to find outside of Asia. Will try the lemon. For the second soy sauce you use, can Chinese dark soy sauce be substituted?

    What vegetable filling can i use instead of meat, which I don't eat. Maybe I can use mushrooms and carrots? Does firm tofu work?
