Excellent skills.... but I'm a little leery of all the water the cabbage might retain after soaking, despite draining. Nobody wants a hot crispy tonkatsu cutlet sitting in a puddle of water....
Its takes about 30mins to drain dry. When I use a machine to cut it. I place the cabbage in a sieve then poke a few holes at the bottom to oet it drain also at a angle.
“The knife is not pulled this side” what does this mean?
Use only a pushing motion to cut the cabbage. Dont pull it towards yourself

Don't waste food, just rinse it.
it's not wasting food to remove the outermost layers of a plant that's typically grown using pesticides.
Not everything is rinseable for Gods sake

Can you please tell me the name of knife you are using? Or link it here please? It looks like the blade is straight - not curved. When I look online they all seem curved which makes cutting more difficult. Thank you

This uses a Usuba knife. Usuba knives are mainly used for cutting vegetables, and have a blade length of 20 cm(7.9 in).
