Is there a way to use only 1 keyboard but hit a button to make the 1 keyboard switch between manuals? Maybe even pedal?

I also tried loopMIDI and got the same results.

Your Grandorgue screen is different that mine (3.1.2138). I don' have all those chrome switches at the bottom. Anyway, my midi keyboard is detected, with or without loopbe1 program running, but the program won't play a sound when pressing the keyboard. If I press the virtual keyboard with my mouse, I get a sound. Any advice?

You need to configure the midi keyboard in Grand Orgue. Right click on the virtual keyboard and in the dialog box press detect midi. Then press any note on your midi keyboard and it should automatically detect it! All the best! 😊
