OLD SCHOOL SMOTHERED CHICKEN GIZZARDS/GIBLETS WITH WHITE RICE

  • This is my easy simple way to make tender flavorful smothered chicken gizzards and white rice
    Old School Smothered Chicken Gizzards
    1 lb chicken gizzards/giblets
    1/2 cup flour
    1 onion, sliced(optional)
    3 cups water
    Kosher salt and white pepper
    Hot buttered rice, for serving
    Heat oven to 325 degrees F.
    in large pot add gizzards and water and salt and pepper
    simmer for 2 hours or until gizzards are tender
    remove gizzards from liquid(save liquid for later use)
    Heat a large pot (dutch oven is what i use) oven over medium high heat. Season the gizzards on all sides with a big pinch of salt and pepper. Add flour to a bowl and dredge the gizzards through the flour, dusting off excess.
    Add oil to the skillet and when hot, brown gizzards on both sides, about 2-5 minutes total. Remove to a plate Add the onions and sauté until tender, about 5 minutes.
    Add flour to remaining oil and brown Reduce heat, add the reserved liquid to pot and simmer 5 minutes add the browned browned gizzards and any of its juice that may be on the plate, and cover with a lid.
    Place in oven for 30 minutes to an hour. on 325 degrees and
    serve over hot buttered rice.
    Serves 4-6

    I’m a 30 y/o mother. My grandaddy was a hardworking country man down in SC. He was the smartest, coolest and versatile man I ever met. One time he cooked some bbq short ribs with bell pepper and it was the most tender thing I ever had. He passed about a few years ago when I was just starting my family. I’m able to go in the kitchen full force now and Following your recipes is giving me that old school vibe I wish he was here to do. Thank you for sharing your wisdom.

    Good morning Chef. My mom used to cook this for my dad. My dad was from the country and my mom was a city girl. She also learned how to cook Ox tails and chitterlings and greens for him. We didn't eat this all the time but it was a special "treat" for my dad.

    I LOOOVVVVE Them gizzards with white rice, and i love pig skin and pig feet, pig ears, pig tails (which i never tried!!!), and pig intestines, soooo Onolicious..aloha from oahu hawaii marty

    Never heard of this meal before, only fried gizzards. When making gravy I always saute green peppers and onions in mine. Looks good .😊

    Old school cooking only thing missing was some vegetables added to that maybe some bell peppers or onions definitely got to have some parsley and some garlic but other than that that was on point❤yummy 🔥 ❤️ 👍🏽

    I grew up with this, but it was mashed potato from scratch with gizzards and gravy... i tried asking my mom and she doesn't know what she use to do, but explained it like biscuits and gravy, which takes seconds. I'm following yours but i know it's only going to be better cuz she never cooked them this long.. im using 4 cups water with mix beef and chicken stock bouillion so I'm going to lightly season once their done simmering, depending on how salty my stock turns out. But I'm pumped.. my girl doesn't like my food i crave. Gizzards, liver and onion, blood sausage, gritwurst... all that. I still have yet to try chitterlings though, but i see ppl going crazy for em at my grocery store.

    I cooked my 1st Thanksgiving dinner at 5yrs old with my Granny Madea telling me everything to do. She taught me everything I know, but I never learned how to make her gizzards and gravy nor her giblets gravy before she passed when I was 17yrs. I've tried several recipes since then, but nothing has come close to her recipe until now. Your recipe is simple and it's tasted exactly like my Madea's. Thanks for creating this channel. You're bringing the true taste of old school soul food back to those who really LOVE good food.

    I was raised on Liver and giblets in and out of gravy. I cook it now for my family, have done it for years myself. My family loves them too. Passing down the chain of foods is what it’s all about. Looks delicious.

    I grew up eating gizzards and gravy too. I'm the only one of our siblings that still love to eat them. The only difference is, I put them over buttered biscuits. I tell my wife this is gourmet but, she doesn't believe me!😁

    Chef Jeffrey, this is a meal we grew up with in the country. My mom would put it in her cornbread dressing, and it takes good. We loved chicken gizzards and fried chicken liver. Those was the good old days. I can taste your gizzards, rice and gravy. Thanks for sharing. Stay safe.

    Chef this one of my favorite things. My grandmother would make smothered gizzard and gave you a choice with rice or mashed potatoes

I have some in the freezer, I will try to make some soon.I did your barbecue neckbones & they were so good.I had a few left over,I had some ground beef left, so I browned it up & with some mixed vegetables, &tomato soup mix,I made a soup & I put the rest of the barbecue neckbones that I had leftover & I had a delicious soup.
