This is what's for dinner tomorrow! My Mom used to make boiled chicken gizzards when I was much younger (in the 70's). My Dad and I would "fight" over them but no one else in the family liked them so Dad and I always had a fair share. Just a few years ago I was looking for a card for someone and happened to see a card that read "So she gave her Dad a birthday kiss in spite of the fact that he'd just eaten a gizzard, and she wasn't even sure what a gizzard was." And even though my Dad has been gone since the early 90's, I bought the card just because it made me smile at the memory. Thank you for this recipe, Jackie.
Just a heads up...so u dont gotta waste a whole gizzard..when u see that green hard skin all u gotta do is peel it off..it comes right off very easily...
J was screaming at her through the phone everytime she threw one away. ALL Of the gizzards have that green thing in them. Those are the ones that slipped pass the " cleaner" so they still have the green thing attached to it. But it pulls off just like you peel a banana. SOOO EASY TO PEEL! I can't believe she been throwing gizzards away all these many years bcuz of the "green thing". SMH!

I love gizzards, livers as well, try Campbell's GOLDEN!!! Mushroom Soup on them the final 10 minutes of boiling you will hurt yourself, especially with that rice 😋💯🙋💞

Yeah it's great. All kinds of ways her tenderizing process works. Buttermilk or just milk even makes gamey meat like venison less rich. Strong fish less fishy. Didn't think about boiling gizzards and hearts tho before buttermilk. Yogurt will kinda do the same thing too. But that's the real deal. Really changes the flavor profile and makes the whole dish able to be used in a myriad of ways. After that process, I have a friend who basically prepared them with a hot sauce like wings. Microprocessing pork rinds down to crumbs as the breading before frying in oil or butter also. Her way of doing it just opens up a ton of possibilities.

Hi Jackie I love gizzards with my vegetables in them. Like onion, garlic, ginger, spring onions, bell pepper and salt/pepper/chicken seasonng. Last 30 minutes of cooking I add with bok choy. Let it cook. Then I can eat it over rice or potato. Great job!

My mom was from the south, she used fix this when she didn’t feel like cooking. The only thing she did different was she would make a batter and add it to the pot, to make it thicker. I make me some today. I love this dish!!!

The way my mom always cooked ours growing up was just like you did by boiling them with onions and then she would deep fry them and they are so tender not chewy at all you should definitely try breading them and frying after boiling them down for a few hours

House Seasoning Blend: 1 Cup Pink Himalayan Salt 1/4 Cup Granulated Garlic 1/4 Cup Black Pepper 1/4 Cup Granulated Onion 1/4 Cup Paprika 1/2 Cup Dried Parsley Flakes 1 Tablespoon Rubbed Sage Mix these seasonings together and use it to season your favorite dishes before cooking 👍🏼

Not sure but no matter how many you cook it’s still going to take hours before they are tender. You’ll have to start cooking and check every hour for tenderness as you go. I might try them in a crockpot for a new recipe sometime the first of the year because nobody eats them in my house but me.

This is a Schultz-Ufer convection pot and I love it. It’s German! I lucked up and found it at Marshalls some time last year. I always look for more when I’m shopping but I haven’t had any luck. Whole sets are expensive!
My Aunt Lois used to make boiled chicken gizzards and they were the best I ever tasted. I still think about them til this day. Some people hate the way they look but my family loved them over rice.

Yes that was just a thickening roux with either flour and water or cornstarch and water. It’s gives gravies their body.

The hearts are so delicious and super tender. Love when grocery stores have a whole pack of hearts to themselves. Not fond of chicken livers though.

I found out with some meats you have to taste the gravy not the meat because adding more seasons I have made my gravy to salty

Salt and vinegar helps to clean better than plain water.
