Chicken Gizzards - so healthy and very tasty!

  • hicken is a healthy choice and did you know that chicken gizzards are one of the most nutritious parts of the chicken? Very high in protein, low in fat and many vitamins and minerals (including B12 - good for your brian health). Besides all that, the bonus is that they also are very tasty!!
    Chicken Gizzards
    Ingredients
    • About 1 ½ lbs of chicken gizzards
    • 3 TBSP extra virgin olive oil (EVOO)
    • 1 clove of garlic, minced
    • 1 large onion (preferably sweet onion, but not essential) sliced thin, then diced (yield should be about 1 to 1 ½ cups)
    • ½ cup of dry white vermouth (or dry white wine)
    • 1 ½ TSP paprika
    • ½ TSP curry powder (optional but highly suggest using it)
    • ½ TSP tobacco sauce (or to taste) (alternate - use a chili pepper or chili flakes)
    • Salt to taste
    • Optional - more vermouth or wine to de-glaze frying pan
    Method
    • Wash gizzards in cold tap water and pat them dry - set aside
    • Put EVOO in a frying pan and add garlic - cook 30 seconds
    • Add onions and cook till translucent
    • Add vermouth (or wine) and cook 1 minute
    • Add paprika, curry powder, and tobacco sauce, stir in to incorporate all ingredients, cook for a minute or 2
    • Add gizzards, and toss them/mix them, to ensure they are all coated
    • Continue to fry on med heat, stirring every so often, until cooked
    • Remove from pan and into your serving platter
    • Optional: add a bit of vermouth back into your pan and on low/medium heat, deglaze pan and then pour all that de-glazed flavor over the cooked gizzards

    Thank you Ivo! I am a 1st generation German here in Australia. I remember my mother making this stuff. NOTHING was ever wasted on a chook. This looks delicious 👍👏👏👏👏😍🥰😚

    I made this today. Very good.
    As a child, I was the gizzard gal when my family butchered chickens. It was my job to clean them. Brings back memories.

    Followed your recipe mostly but traded the alcohol for chicken stock. Next time will cut the curry in half but it was good. I make fried gizzards often and love those since I was a kid. Thank you for sharing this. 🙂

    How many glizzard is the maximum per day?

      ... suggest about 100 grams but remember, these are also high in cholesterol so daily is not recommended 👍

    If you would have cooked them Low and Slow they would be tender... high heat makes them tough and rubbery.
