    I made your perfect keto flour mixture with almond flour from your last update. I put it to what I consider the ultimate test and made America’s Test Kitchen “dream biscuits” (TH-cam). I used your 1:1 perfect keto flour to their white flour, added 1 tbs baking powder, 1/4 tsp baking soda, and 1.25 tsp salt, and 2 C heavy cream, as per their instructions. As my first experiment, I used the NSKF as a 1:1 substitute for all-purpose flour in “The Best Blueberry Muffins” from the Food Network. Thank you Victoria for this 2.0 flour with bamboo fiber. For Thanksgiving I made the dream biscuits that Wesley highlighted his TH-cam channel with the 2.0 flour. They were so delicious. They tasted like absolutely normal biscuits. They will replace the usual keto “cornbread” biscuits I used to make for Thanksgiving. My only issue was that they wouldn’t brown on the top but they browned on the bottom. Thankfully I had enough 2.0 flour to make a second batch and at the midway point of baking the biscuits I flipped them so they were brown on both sides.

      Donna S, I recently heard someone talking and it really struck a chord in me. Instead of say what the "missed most" about the person, they said "what I will remember the most is..." . I love that! Missing is mourning (and there is a place for mourning but I don't think our loved ones, or the Lord, would have us STAY in that state) but remembering can be a celebration and opportunity for thanksgiving. It just was a "yes!" moment for me. I will keep remembering and giving thanks for my loved ones until I can see them again! Blessings, dear ones!

    Hello again! Victoria, I have a couple of questions. I am unable to get the bamboo fiber so I opted to use the oat flour. In comparing your past " Perfected Keto Flour" to the "New Standard Keto Flour" I see the bulk of the flours are opposite. The bulk of the PKF is Almond Flour (with a cup of oat flour) and the bulk for the NSKF is the Oat Flour (with a 1 1/2 cups of almond flour). Does one out perform the other? If not what are the primary differences in the outcomes of the finished baked goods? or choosing one flour over the other? I look foward to hearing back from you and THANK YOU for sharing all of your hard work!!!!!

    Hi, Victoria. I want to make sure I use this flour properly. I understand that if a recipe calls for 1 cup of all-purpose flour, I should use 84g of NSK flour. But what if the recipe lists the flour by weight? Is it truly 1g NSK equals 1g all-purpose? Thanks!

    • @victoriasketokitchen
      @victoriasketokitchen  ปีที่แล้ว

      Hi Steve! Ok so it’s cup for cup NOT gram for gram.
      So some math may need to be done.
      For example
      A recipe may call for 1 cup/120 grams white flour
      That would equal
      1 cup at 84 grams new standard keto flour

    • @victoriasketokitchen
      @victoriasketokitchen  ปีที่แล้ว

      If the recipe list by grams and they are using white flour you would need to divide the weight by 120 grams of white flour get the amount of cups and multiply that by 84 grams. I’m so sorry to be complicated but this is a cup for cup not gram for gram flour because the absorption power of this NSK flour is greater than white flour by gram.
      And because white flour is more dense than NSK when both are in a measuring cup.

    • @SeriousKeto
      @SeriousKeto ปีที่แล้ว

      @@victoriasketokitchen So if a recipe called for 100g of white flour, I'd use 70g of NSK? I'm just using 100 to make the math easy.

    • @victoriasketokitchen
      @victoriasketokitchen  ปีที่แล้ว

      @SeriousKeto to be exact 67.2 grams

    • @victoriasketokitchen
      @victoriasketokitchen  ปีที่แล้ว

      @SeriousKeto because 100 grams of flour is 12.8 tbs and so 1 tbs of NSK flour is 5.25 grams so it’s
      12.8 x’s 5.25 equals 67.2

    Unfortunately I found out too late that the scale we have in the kitchen isn't sensitive enough to measure such a small amount of xanthan gum. Since I piled all the ingredients in (as shown in the video) there was no recovery once I plopped in a small scoop of gum and the scale didn't register a change. Next time I'm going to weigh each ingredient separately. Then, when I know they are all the perfect amount of grams, mix them together. So what should be 430 grams of flour (used Bamboo and Almond options) in my first batch of flour ended up weighing 425g. No way it's 5 grams short of Xantham Gum (at least according to my wife who was watching the process). Still going to use this batch to try and make "Dream Biscuits" (like High Falutin' did). Hopefully they turn out. If not I'll know the learning curve got me again!

    I'd just like to say that this recipe has saved the keto diet for me. I have sausage and biscuits twice a week now. I don't know if you take requests or suggestions, but I like to thru hike (actually there are a lot of backpackers/thru-hikers who eat keto) and it's nearly impossible to stay in ketosis on the trail. Could you come up with a few recipes that we could make while hiking? I'll give you the run down on what I am working with. As a man who averages about 20 miles a day on trail I have to eat about 5000 calories a day to keep my energy up. The proteins I have readily available are tuna and chicken packets, and texturized soy protein but I have trouble getting enough fats in. I put ghee and MCT oil in my coffee, I put olive, avocado oil and mayo packets on the protein but it's still hard. Homemade fat bombs melt in the heat and make a mess. I would like something that tastes good and I could prepare ahead of time to take with me or that I can prepare on a hike which means I am only working with boiling water as a cook source. Any help would be much appreciated, thank you.

      @@agolfiend I will, thank you for the advice. I tried her white cake in the microwave, but something went wrong and it grew out of the cup 🙈. I am not so much into sweet, but I love bread.

    The biggest question is who has checked their blood sugar after this recipe does it work?

      Probably not. But portion-wise, ie for a batter or slice of bread made from this would be roughly 1/4 to 1/3 cup, which when you look at the nearly zero carbs...it just does not make sense to bother with 'checking blood sugar', which if you are asking this perhaps you are diabetic, why not make the recipe and comment back here?

    I’m using the Now brand of egg white protein powder. It’s weight is different Per half cup. Should I recalculate with this brand in mind? I half a cup of the Now brand of egg white protein powder is 40 g should I use that rather than the 60 g?

    Has anyone used the "new" version (added lecithin and monk fruit) of BulkSupplement egg white protein? I had used a different egg white powder (long time ago purchase so I don't remember brand) that had no additives and had no odor. This new bag has a definite sulfur odor. I know this new version does not whip, but it may still work in the flour recipe.
    EDIT: I tried the new, not-so-pure version of the egg white powder to make the keto Dream biscuits. I made a small batch of 2.0 flour. After mixing the flour, the very noticeable sulfur odor of the egg whites seemed to have disappeared. I made the dream biscuits which turned out quite well. It will be a while before I make more reg (not eggwhite) loaf bread, but I think it will be OK. I use the bisquick blend more often. I think it will work well in that, also. HTHs.
