I am a home baker. Love making cakes, pies, puff pastry and Yeasted puff pastry. Although I am keto…on birthdays and holidays I usually go off keto and make non keto desserts. At these special meals I stay on keto without difficulty, but I too find keto desserts lacking...and will enjoy a piece of cake ie., on my birthday. Given your high praise, I will try the blueberry dessert. I admit, I have a weakness for Carolyn’s Nanaimo bars.❤ must be my Canadian coming through🇨🇦😂….her Nanaimo bars give no hint of keto…such sweetness, chocolate, custard goodness.
I am making this again for the third time. It is a winner, and almost a no fail dessert. I made it for me & hubby and we were smitten. I made it for my elderly diabetic parents and they loved it. P.S. note to those who make this, make sure the cream cheese is super soft before whipping with sweetener....and please whatever you do....do not add the cream thinking it will soften the cream cheese...no no no....learn from my faux pas, you will end up with chunks of cream cheese in the dessert. *UPDATE DEC 2024* what are y'all waiting for....give Carolyn's recipe a try, it will not disappoint. My brother requested this dessert from me, I'm pretty sure that is the only reason he is coming over to visit this Christmas.😊

i had to come back and comment girrrrrrlllll this dang keto desert is one ill be making over and over again it was that good. my husband who is nottttt!!! keto ate it up and said he enjoyed that nut crust the best.. i added some almond flour to my crust because i added too much butter so to balance out the moisture i added half cup of almond flour and i used 1/3 cup of powdered sugar for the filling because i was out of the powdered swerve. also i added cool whip to the top of mine light cool whip that is. that blueberry topping was a dream on top!!! even with this small tweeks it was so freaking good i hope your viewers try this one its totally worth it 😍
I made this cheesecake last Christmas because my diabetic son (type 1) always misses out on Christmas Day desserts. No one could BELIEVE that this dessert was low carb. It was super delicious and I am gearing up to make it again this year. Congratulations to the creator

It was in a prebake pie sheel with banana slices on the bottom and cream cheese/Dream Whip fill and canned blueberry pie filling on top. I always wanted it instead of cake on my birthdays. Nice to seen a low carb version. Thank you.
I'm gonna cry. My mom died in 1992 of breast cancer at the age of 48. She always made this and called it "Easter pie." Now, I know where she found the recipe😊

It is called a muddler, for crushing limes, for cocktails such as a Mojito. If not that, I would use a shot glass as it is always nice to have things in the kitchen that are multi purpose.

I’ve been making something very similar to this for a long time. I like to use fresh ground wallet, or fresh ground pecan whatever I haven’t had. I don’t really make a flower out of it. I also then add the butter and some sort of sweetener and occasionally I put in a pinch of cinnamon. Then I put that in a pan and put it in the oven to toast up bit. Then I go ahead and pretty much make the filling like she makes here.
Not doing desserts right now, because it distracts me from my goals. I could eat pizza and desserts and skip the rest of what the world has to offer…. But I get fat doing that. 😂. But totally saving this for my maintenance the rest of my life. Recipes like this can sustain a person’s desire to want to maintain their weight! Love it! ❤❤❤

I made this immediately because it looks so delicious BUT it didn't work our well. I used an ordinary backing form with a ring you can open and close. it is really tight but after i took out the cake the next morning from the fridge, i made the cake in the evening, there was liquid all over the floor of the fridge. Next time i will use a closed backing form so nothing can pour out.
My new favorite dessert I think is KETO, don't know for sure. I like Chobani sugar free 32oz yogurt, I like Jello sugar free pudding, I mix about 28-30oz of the yogurt with a packet of sugar free Banana Cream pudding, refrigerate for a couple hours, stiffens to consistency of cake icing or cheesecake, better than yogurt and better than pudding. I tried it with vanilla pudding and great too, haven't tried it with chocolate pudding yet.
Don't know if I'm that unusual, but I have allergies to tree nuts, like almonds, hazelnuts, walnuts, pecans etc. However, peanuts, cashews or pistachios are okay. Most keto recipes use almond flour bases, and coconut flour isn't usually a good substitute. Oh, well.

Instead of using the cellulose or whatever it is you put in there I use sugar-free maple syrup. It’s delicious.

Your wooden dowel is actually called a “Muddle.” It’s primary use is crushing ingredients like fruit, mint, etc in the making of cocktails
I call it a tart press and use it to make pecan tarts 😜

I just use 3/4 of a bowl of sugar free whipping cream. I first whip in 1/4 of bowl, then fold the 1/2 bowl after it is all mixed.

I am diabetic live in the UK, allulose is not available in the UK not on amazon either , can you suggest a substitute to use please .
