    Victoria's Keto Kitchen has also come up with a flour blend using Bamboo fiber. Her most recent one is New Standard Keto Flour 2.0.

      This past Labor Day weekend, Wes from High fault in low Carb did an honorable video featuring Victoria's flour that he made the America's Test Kitchen recipe using VICTORIA'S flour. Wes also did an honorable video of Milk too. Now to be a peacemaker....Can't we all just get along in this low carb world? Every creator on YT does a recipe that the creator makes their own. I enjoy them all!

      Hey, @@judysbakeryandtestkitchen1654, why the need to be so nasty?? Not sure what "craze" you're referring to about Victoria not starting. But if you mean the "keto craze", the "keto bread craze" and other such things, then you are correct. However, Victoria did spend a lot of time and work on perfecting her Keto flour. Papazjose didn't say that Victoria was first to use bamboo fiber. Don't try to correct someone if you have no idea what they're talking about.

    Hi Nili, in Germany we use the bamboo fiber for baking bread, rolls and sweet goodies 😇😊!! It makes the dough/batter much more flexibel! I love to bake with the bamboo fiber! 👍👍👍

    Thank you so much for trying the bamboo fiber. I’ve been using your recipes and using the bamboo. I’ve made a loaf and used a quarter of a cup. It’s comes out great. I’ve used less of the gelatin powder because that also makes the bread soft, When I make the rolls I have put them uncut in my air fry and crisp up the top then I turn them and crisp up the bottom. Makes amazing buns for burgers and sandwiches. Thank you again for all your great recipes.

    Indigo Nilli, we just had the focaccia bread that Mel showed on her live last Saturday!
    It was SUPERB! Hubby loved it also, and he isn’t low carb.
    The texture was perfect. I had to portion it out so that I wouldn’t eat the whole thing.
    I would suggest you make the focaccia bread

    I got my a boo fiber the other day. I bought a small bag to try it out. I used your bread recipe with the butter powder. Used 2 tbsp bamboo. I don’t think my egg whites got stiff enough but I baked it off anyway. Made a flatbread, 6 mini bagels and 2 burger buns and 1 hot dog bun. I don’t think I baked the flatbread enough as it had a big green spot on it and looked glossy. The bagels came out the best. I do really like the texture of the crumb and I think it has more of a real bread texture. I will continue playing with it. Did you see that Highfaloutin’ Low Carb made Victoria’’s flour and then some biscuits? He loved them. I am going to try making her flour but with cassava flour instead of the almond flour and see if it works. Can’t use nut flours because my son is allergic and I want to be able to bake for him.

    Ive been using bamboo fibre in my protein bread due to sensitivity to oat fibre and psylium.. Also the bamboo flour is tasteless. Loving that too. So far this has been working great for me. Loving it! 👍

    I made this recipe for pumpkin muffins. I added 1 Tablespoon of butter powder, pumpkin pie spice and pumpkin powder I had. Also a tsp of vanilla and 2 squeezes of sweet leaf caramel sweetener. Held up pretty good. Mild flavor, but it hit the spot with my craving. May need to make a cream cheese frosting. 😊 Thanks for the recipe

    I made Cook With Mel's clean keto flour, which uses bamboo fiber as an ingrediemt. I subbed pork panko in place of the chicken flour. With this, i made her pizza recipe from her vid entitled, did somebody say pizza? It was the best pizza i have ever taated, even before going keto. My husband named it Milan Pizza, because he felt that it deserved a sexy italian name! 😂 please try it!!

    I couldnt help but wonder with the texture of these buns, if you could add some vanilla and allulose sugar to make an angel food cake in a bundt pan.... any thoughts on that?

    You got to be careful with these concentrated fibers - they can become impacted in your intestines which can lead to serious complications.

      Yes.. as an herbalist, I always recommend with any fiber and many herbs... drink lots of water!

    I follow Cook with Mel who created a “flour” blend using chicken flour, egg white powder and bamboo fiber. I’ve baked cakes, muffins and cookies with the blend and they are good. Initially, while warm you can detect the chicken smell and taste but once totally cooled it dissipates. Please check her out!

      Mel’s cookie recipe is pretty basic-she made them on a live stream and the recipe is in the description box. You can modify it with flavors you like and that fit your personal goals. I add 1 Tbl cocoa with an additional tablespoon of butter. For my oven 6 minutes at 350 which yields about 6 cookies (using a scoop). Just enough for me to have a sweet treat throughout the week.

    Hello! I just tried this one out and was very successful and looked identical to yours. This was the first attempt at any egg white bread that came out great and so far has not fallen. I am in Texas and i believe challenged with the heat. But now I have an option that seems to work. I also used the same mesh bun tray and that worked great as well. I am looking forward to a toasted cheese sandwich. Thank you so much!

    I've used the bamboo fiber to make Victoria's Keto Kitchen's flour blend - and love it. I often replace her suggestion of almond flour/pecan flour with lupin flour though. Her blend uses a large percentage of the bamboo fiber to a smaller amount of the other ingredients. I use it for mug cakes, cookies, biscuits. Have not been successful with loaf bread, but I don't really need it. Need to try your buns - they look amazing! Can anyone tell me if these buns keep for a few days in the fridge? I'd like to do make-ahead egg/bacon sandwiches with them for breakfasts.

      What recipe do you use when using the Lupin flour vs Almond flour? I have some but never know what ratio per different ingredients I should be adding. Needless to say I need a full complete ingredient list. Especially the ratio for mug versions.

      @@JNante I use Victoria's New Standard Keto Flour 2.0 version. Her channel is Victoria's Keto Kitchen, and she has a recent video by that name, which I am respectful not to link to under another channel's video. You should be able to find it easily. It's a substitute for any 'regular' white flour. I simply use lupin flour in place of her recommendation of pecan or almond flour. I can't remember if I go by grams or cup amount for the lupin - but I think it's by the cup measurement, because the grams are different. Again, I haven't made bread loaves with it, so you can experiment if you want, but I know mug cakes, cookies, biscuits, work fine. Still, I can't wait to try Nilli's recipe here!

    Those are absolutely beautiful buns Nili. I have bamboo fibre. I haven't adventured too much. I have watched a few channels. I am hoping to find something without almond flour. I have a lot of almond flour but I'm only using it occasionally. The channels with Victoria and Mel both have recipes. I find that chicken flour is expensive. I don't have a dehydrator so am unable to make it. I like the bamboo because it doesn't have a flavor. Much like the egg white protein powder. Both are healthy and more neutral. Looking forward to more of your experimentation.

      I make my chicken flour using the microwave. Watched a video by Chef Fat Grams called 10 Minute Chicken Flour. It turned out great, although one rotisserie chicken only made 1 Cup of chicken flour.

    Here in the uk it is difficult to get hold of unless you go through Amazon who are charging 😅 £15 ish per 500 grams why is it so expensive - I would have thought with all the health benefits in reducing carbs it would be given out freely

    Here's the problem - I cannot find Bamboo Fiber (flour) ANYWHERE! I've been looking for 2 weeks now. It has disappeared and is out of stock - with no date about when or if it will return. So sad because it's the best. I noticed you did not use a lot of the bamboo fiber - and the rolls still look like PSMF bread. I was hoping you'd use more bamboo fiber and less egg white powder. I hope you continue to experiment with the bamboo fiber. If I could find the bamboo fiber, I would use it to make Victoria's keto kitchen flour blend. I've made the blend using oat fiber in it's place and really love it when you make that into a loaf of bread or rolls.

    May I ask if anyone has any experience using bambnoo fiber with gut issues? I can not tolerrate most fiber so I'm worried it will hurt my tummy! Thanks for any input.

      I have a sensitive gut/tummy as well. I am happy to report that my system seems to tolerate the bamboo fiber. I do keep to the lowest amount I can in a recipe. I can't use xanthan gum, oat fiber or much acacia fiber. I wish there was a small bag you could order, I ended up with 2.2# so relieved I can use it.

      I have a sensitive tummy also. I use Cook with Mel’s flor mix because it has a LOT less bamboo fiber than Victoria’s.
      So far, so good using Cook with Mel’s “Clean Keto Flour.”
      Just had the most delicious focaccia bread i made with it.

    I must have overcooked these, because I think I just made upholstery filling! Seriously a choking hazard! I even tried to save these by soaking for french toast...the egg mix wouldn't penetrate! Lol, any help would be great, as I followed the recipe to a T!

    I just messed up my buns because I got confused winging it thinking I remembered the amounts.....but I added 1.5 cups egg white powder to liquid egg white....instead of 1/2 a cup.... now what can I do with these hard chockie buns.....yikes.

      Dry them, grind them down, and use the resulting flour for cookies. Indigo Nili has done that and it was originally done by Loving it on Keto.

    Is it me, or did anybody else notice? She was using a metal bowl while using cream a target. In the baking world, that is a. No, no cause it causes a chemical reaction and your product to go flat. I'm welcome to input

    Bamboo fiber is LOADED with silica. Turns out we need it for making collagen - which means hair, nails, cartilage, skin, everything 'flexible' in the body. It would probably be great for arthritis issues. There's a flour in the UK called 'Panda flour' which is a mix of bamboo, coconut flour and psyllium husk. Not sure of the percentages of each but I would imagine the coconut and husk are low volume compared to the bamboo flour. As this gets more popular, it's going to show up in hundreds of commercial products as production is ramped up and the price should come down.

      @@alexruiz65 lol!! IT SURE CAN! I made a bagel recipe with bamboo flour, oh my, I suggest it as an add in, not the main flour. My sister said, why dont we just get some bark off the tree out back & smear butter on it?! lolol The recipe called for a mix of almond & bamboo, but I thought I'd try using all bamboo, because I didn't want the almond. Oh well, lesson learned. It was dry, chalky & bleh! It was a fathead type dough recipe, with melted mozzerela , it likely would have been fine, had I not used strictly bamboo flour

    When I first learned about bamboo flour, it was sold out on Amazon. I bought some from etsy. I'm pretty sure it was ground up paper bags. Brown. Smelled like paper bags. Made some bread that tasted like paper bags. Yep. Not bamboo flour.

    I recently tried a recipe by Victoria’s Keto Kitchen making a baking flour using bamboo flour. My oven isn’t available right now so I used the baking mix for a microwave “mug” cake and boy was it good!! I can not wait to try her bread loaf recipe incorporating your grated frozen butter. 🤤 I’m now very excited to see what you do with it ❤

    I found a recipe in Women’s World magazine….Gluten-Free Orange Loaf. The recipe called for 2 cups of almond flour. I replaced 1 half cup of the almond flour with the bamboo flour to add more fiber to the loaf plus a handful of chopped walnuts. It was really good, although a little bit crumbly.

    I bought all the ingredients to make Victoria bread flour using bamboo and pecan flour but haven’t tried the recipe yet
    However I’ve already made your recipe for bread and rolls and I’m going to exchange the fiber to use the bamboo because those rolls look amazing and I don’t mind the tops are soft makes me think of the Hawaiian rolls you make. As another viewer said just put in air fryer if you prefer toasted bread. Thank you Nili❤

    Along with Cook With Mel and Victoria's Keto Kitchen, my first experience with Bamboo Fiber was with Low carb/keto recipes and having fun Vernaz. Both her buns and loaf bread turned out beautifully.

      I love Victoria’s bamboo flour, but I’ve only had luck with the almond flour bamboo. I tried the pecan version but it was a little to grainy for me. I love the almond/bamboo flour. I use it all the time. The bread is great, cookies too. I haven’t tried the pizza dough yet.

    I love bamboo fiber! I make Maria Emmerich's egg white protein powder bread, including the gelatin she adds in but I sprinkle on top AFTER whipping, then add in frozen shredded butter (or butter powder), a half cup of cottage cheese or yogurt (whichever I have on hand), 2 scoops of bamboo fiber and only a pinch of allulose (because I don't like a dark crust) and wow, it's amazing! It even toasts nicely in the toaster on a higher setting. This is my go-to bread I make every week.

    I really want to try this bamboo fiber but the one you have linked to on Amazon is out of stock and they say they don't know if they'll get it back; the only other choice on there is so expensive for the product itself and then shipping is just about as much as the product! Any tips on where this could be purchased? I'm betting Amazon got slammed with orders for the one you used, due to you, Mel, and Victoria all using it, as well as Wesley posting a review of Victoria's recipe!

    I started using cook with Mels chicken flour recipe using bamboo fiber. It makes pretty good cookies. I need to explore more because I am too busy. It seems all the time. But I love her recipes. She just made cornbread.

      Carnivorish crisp has one that I use constantly which uses Delish pudding that I love. This is my staple for a small quick angel food cake that is fluffy using her added tweaks at the end of whipping.

      All eggs and their products have been hit with inflation, and a few major production issues. Egg white powder has been hit hard.

      The price is ridiculously high now. With a dozen eggs now back to $1.50 at Walmart, it is way cheaper just to use real egg whites.

      @skyhawk4946 Egg prices are widely varied across the country, Here, they topped out around $7/doz. Some brands have stayed there, some have dropped back to their previous prices.
      I would expect powdered egg whites to stay higher, primarily because of all the other inflated costs involved in processing. Much of the original costs of commercial egg suppliers, plus all the rest to get them out of the shells and powdered for the packaging and sale to the public.

    The price of bamboo fiber has virtually tripled since June. Makes me wonder if it can be made at home. Not sure where I would get food-grade bamboo though. Seems like as soon as several keto bloggers post about a new ingredient the supply dries up really quick. Thanks for the videos.

    Victoria's Keto Kitchen is using a whole lot of the bamboo fiber along with almond flour to make a one to one flour that equates with wheat flour to bake with. I don't like the xanthan gum in it though, it is gross, and the bread comes out a bit gritty for some reason. She uses yeast in her bread as well. Also, she makes a sourdough out of it as well. Your buns look wonderful. Do you use the same amount of ingredients to make a loaf of bread?

    I purchased that bamboo flour a while back, when I saw a bunch of ppl raving about Victoria’s keto kitchen recipes. That flour is awful, and so were her recipes. Terrible aftertaste in the recipes I tried. I asked Amazon for a refund.

    I've been wondering about those "powdered" ingredients that you often use in your videos. I've heard that the "food" producers have been making lab-grown meats and other products that have been loading grocery shelves for human consumption and often labeled as Organic yet they're created by GMO's and wondering if those can be dried and powdered. Oh and someone told me a long time ago that the fibers of bamboo are extremely poisonous. That would make me SUS of anything that comes from that specific plant even though I know there's various utensils made from bamboo I happen to utilize a few of them myself.

    I have made the keto flour from Victoria as well as many others here have. Every recipe I tried was horrible. I measured with a gram scale, used same ingredients, and nothing tasted the slightest bit edible. The breads were soggy and dense and tasted like death. $125 spent on ingredients just to make three loaves of bread that I tossed out to the raccoons. There HAS to be a better bread recipe out there!

      I've been wondering the same thing. Why not just add butter...or maybe use frozen, grated butter? I guess the reason for using grated butter in any recipe would be to more evenly spread it throughout the recipe.

    Those butter rolls look awesome! I use Victoria's 2.0 flour blend with bamboo fiber and it comes out perfect every time. Have not tried it in pie crust yet which is coming soon with holiday baking. I do not have butter powder but do have frozen shaved butter. Will try to find your other video for that recipe. Thx

    I’m curious. I used Janet’s recipe and it calls for a cup of egg whites and 1/3 cup of egg white powder. I’m wondering if we were using all fresh egg whites what the measurement would be for this recipe. I have a ton of duck eggs and that’s what I use for my egg white bread.

      Blood glucose should always be a concern for everyone doing keto. It makes no sense otherwise: if it spikes blood sugar, then it isn't keto. I'm sick of people making "Keto" claims for recipes that spike blood sugar and knock one out of ketosis. If you can't stay in ketosis, then it's not keto.

      As someone who reversed Type 2 Diabetes 3 yrs ago and doesn't "want it back" - I am extremely careful with carbs and closely follow a carnivore/ketovore way of eating. Bamboo Fiber will have 0 effect on your blood sugar. My problem is - I can't even find it, to buy it

      What about bamboo shoots? My favorite. Anything older than same-day shoots is too fibrous to be edible. I'm guessing they use the same variety, just grind it fine.

    There is a channel called Bamboo Love that I really like. All recipes include that fiber. There is another fabulous keto baker channel I just discovered called LowCarbReceipeIdeas. She is a fabulous keto baker. I made one of her cakes for my grandchildren and they devoured it. I have tried other keto cakes and they have never tasted good to me.

    I wish someone would do a single serving recipe for things like this. I hated the egg white bread and still have it in the freezer, feeling bad I wasted all those ingredients. I've yet to find a low carb homemade bread that is tolerable.

      I've been making a low carb bread with oat fiber from LowCarb/NoCarb. It's a rustic type of bread. I think I'm going to try mixing some bamboo flour in to limit the oat flavor (which isn't bad, but sometimes I want a more neutral flavored bread for sandwiches).

      Try making French toast with that frozen bread! You may find it not so bad after soaking in an egg/cream mix. Then you won’t have wasted the time or ingredients.

      The Victoria lady offers a ramekin version adding water. Very mug like just in square vessel. Although you have to make her "flour" in advance to have on hand so still using plenty ingredients.

      Definitely not simple nor single serve, but if you can tolerate gluten from Vital Wheat Gluten, Diedre's low carb bread recipe is a staple for my T2 diabetic hubby. I make up jars of the dry "flour" mix and later just add the yeast, water, egg, and butter to make it up in my bread machine. She has a hand mixed version, too.
