8 oz Dry Cannellini Beans
3 cloves Garlic
2 Bay Leaves
Olive Oil
1 Onion, chopped
3 cloves Garlic, minced
2 cups Celery, chopped
2 cups Carrots, chopped
¼ cup Fresh Parsley, chopped
2 Potatoes, cubed
1 qt Peeled Tomatoes
½ tsp Oregano
1-2 qts Water as needed
2 large heads Escarole, rough chop
8 oz String Beans, blanched
1 cup Ditalini Pasta, or your favorite soup pasta

Who is this lady?
Gina Petitti was born in 1935 in Faeto, Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina spends her time cooking, gardening, and being an active member of her local Church.
Where does Gina get her recipes?
Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
Why is no one helping her in the video?
Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
Why don’t we buy her a new...?
Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
Who is behind the camera?
Her retired son-in-law films, her daughter helps her prep, and she usually has one or two grandkids in the kitchen.
Does Gina read the comments?

When she sings you have no idea the joy it brings to my heart. My grandma passed away many years ago she was just like MaMa Gina. Spoke just like her! If i close my eyes it takes me back to a time of happiness... My grandma taught me everything about cooking and while cooking gave me so many seeds of wisdom i now plant the fruit of those seeds in my daughter!

Before I was old enough to go to school, my working mother left me all day with an Italian nanny married to a spanish man. My nanny's name was Maria. So, hearing you speak with the italian accent of my beloved nanny, and then sing Ave Maria, it warms my heart Thank you very much Gina. Thank you for your recipe and thank you for your naturalness.

I think a lot of us who grin and smile when we hear her singing and warm up to her so much it's because many of us lost our grandmothers, they passed on or situations change and so whether your grandmother was an old Italian woman , mine was an old Mexican woman , and I'm white....but now that doesn't reallly matter... it brings CoLOr !! Maybe this grandma is alot like Grandma we missed the opportunity to stand beside her at the stove and watch cook the watch her methods and procedures so when we get to sit by her, .... it's an opportunity to make up for time that we lost with her own Grandma's she sure is lovable very sweet and I sure do love the way she does Ave Maria! I'm an American chef trained in Italian / French cuisine with a Mexican heritage. In Mexico we do not soak our beans. My professional training always taught me to soak the beans. What I learned from this video was to add aromatics to the beans while they soak... makes total sense. Grazie Nonna Gina
Los frijoles, los parrales, los porotos, las habichuelas, los gandules, las judías, etc. Tantos nombres para un platillo tan sabroso oiga !
I sometimes soak my beans overnight so that they take less time to cook in the morning and, I oftentimes use epazote for flavoring... oregano and chile colorado (chile de ristra) is optional.
I picked that up too, adding the garlic and bay leaves. She is delightful 💜.
And another thing she grows her own food👏. We really need to do it right now.
I did not see her add any thing to the beans while they soaked. Please explain. thank u also tell how u cook your beans w/ out soaking

I am so happy I just received Gina's cookbook today. I started to watch her awhile ago. I loved her the first time I saw her. She reminds me of my grandmother. The way she acts and especially the way she cooks. I am 73 years old now and lost my grandmother in 1986. I am so going to enjoy your cookbook, it will be like grandma is there with me again. Life without cooking is like love without kisses....even in 2020.....When you come home after a full day of work, meetings, emails and customers yelling at you, you just start cooking and you feel alive, you feel like human....maybe just an egg, but try and do it.....

I am a first generation American. My daddy immigrated with his family from their farm in Catona, Italy in 1930. He was still making minestrone zuppa at 96. He used canned beans at his age. Lived to be 98. God rest his soul. Gina reminds me of my Nona Anna. I sing in the kitchen when I cook too, I am 75, love to cook. 😘 to Gina❣️

I am Sicilian and Italian and my grandma past away a couple of years ago. She made some of the best pasta sauce I ever had. Grew the tomatoes herself in her garden in her backyard. When she harvested all the tomatoes and cooked and jarred them which took a couple of days I would be playing video games downstairs where she had a second main kitchen. I took it for granted back then but I will never forgot those memories and now they are precious to me.

I spent two summers with mine, straight from the village of Venafro. Her voice/accent is so comforting to me. She's got my grandmother's voice, those cute little hands. She even walks like my grand mom. The garden, with the fig tree the tomatoes, cucumbers. My grandmom had grape vines, too. Red and green grapes.
Two weeks ago, Gina’s Channel appeared in my Recommended videos, and I immediately subscribed to her channel. My mom lived with me for her last 25years, until God, took her home four years ago at 92 years young. Momma was Queen of the kitchen just like Gina. God bless Gina and her loving family. I have an eating disorder and live alone, fairly isolated, so there's no one here to give me the kick I often need. So I watch TH-cam cooks. I have to say first that I wish I'd had a Grandma or Mother like Gina (oh how different life would have been!!). Secondly, I'm definitely going to give this recipe a try. Not just because soup is a good thing for freezing, but it's easy to digest and not too onerous to make. Having this lesson from Gina was a pure delight, as others have said you can't stop yourself from smiling. What a lovely warm soul she is! When i started to watch at her i thought, another italiano dish, so Lets see it, but when she started singing my tear drops started to flow AND i just couldn't stop crying, maybe she Is not the best singer ever!! So did we! Wonderful memories at grandmas on Sunday. Italian grandmas are the greatest. It's all about food and family. I am only half Italian but honestly, my best memories are at my Italian grandma's on Sunday with all my Aunt's Uncles and cousins.
And Gina is just like my grandma that I remember. Spoke just like her too. I'm 80 and still have vivid memories.

She reminds me of my Godparents. My Godmother was the cook and my Godfather was the taste tester!! ☺ When I was growing up, everything my Godmother made (since they lived next door to my parents) she brought over for my family to try. You never went hungry. The one of many dishes my Godmother made was her bean salad. It was so good!! I miss them terribly as they are no longer here but what a blessing it was to find your videos!! I couldn't stop smiling. Cherish her with all your heart. She's a true blessing!!

Once videos on a channel start getting a lot of views and likes, it takes on a momentum of its own. 1MM views on this one and almost 500k subscribers. That is Big Time in TH-cam World. Will get bigger.

I want to cry just hearing your voice makes me miss my Italian grandmother who cooked and baked right up until the age of 96, all my Italian relatives are now gone from this Earth, but I think about the large gatherings, the tables and tables of food and two stoves going at the same time. One stove in the kitchen and one in the basement. My grandmother would make a lemon crusted chicken, a roast, raviolis with fresh homemade pasta, manicotti, lasagna, Italian salads, minestrone soup, chocolate cakes, Italian candies, three or four different types of bread, butter rolls, and fresh vegetables from the garden. Also, fresh homemade wine with grapes from the garden. She would invited no less than 45 family members over for a Christmas dinner at different times during the same day, you eat and visit and leave all within an hour, then the next group comes over for dinner.
Such beautiful memories. Now its your turn to continue the traditions of your ancestors and one day your grandchildren will say, oh I remember Nona, such an angle to cook all that delicious food for us. I miss her so, and they will continue the tradition and so on. Blessings to you and your family.
Boy is that a dream 😊😍 I slack as a mom a lot of times in the area of cooking. Grandma passed away when I was about 12 and I left home at 16 due to bad circumstances. I wish I had that foundation for my kids. Praise God for this channel ❤️

Love this Gran's singing even though I don't understand but Ave Maria is familiar. Our old gran's had style.I am Indian our roots from India but in South Africa born and grew up here. I love vegetable stew.
