I might add that a coffee bean is covered in a pulp like a cherry which protects the bean from pesticide sprays for the most part. Also, the pulp is rich in sugar and has a huge influence on the taste of the coffee bean.

Letting your doctor know x y z may not be impactful because many docs do not keep up with the scientific literature or are too busy in a practice seeing patients every 15 minutes and /or do not understand foods genetics, and nutrition. I find doctors affiliated with medical schools much more knowledgeable and amenable to listening to their patients. This is why we are soooo lucky to have Dr Liu advise and teach us!

Doc, I clearly recognize you as someone on the ‘genius’ spectrum. You also have a very good vibe. However, the coffee situation seems a bit of a damned if you do and damned if you don’t sort of thing. I’m a fan of dark roast coffee, so maybe I’ll try a cup at mid morning and see what happens. I get a lot of useful information from your videos. Thanks so much for sharing your immense knowledge!

Thank you for the compliment but I am not a genius. I do love learning and sharing. However, I have been a fool for decades ignoring the impact "food", water and pollution has on our health. This is how I am making up for lost time. Frankly, if we all don't wake up, there will be even less time as our society is rapidly crushing the medical system with burdens it was never designed to handle.

I have long known about the benefits of coffee and also the genetically based individual differences in caffeine sensitivity.
What I learned from this video is how cows milk in my coffee can negate some of the benefits ! Yikes!
My question is whether unsweetened nut milk alternatives would be ok instead.
And by the way 23andMe does provide genetic tests for two caffeine related genes: CYP1A2, which contains instructions for an enzyme that breaks down caffeine, and AHR, which contains instructions for a protein that ramps up production of the CYP1A2 enzyme.
It was interesting for me to get those tests because the helped validate what I already really knew from experience, which is that I am “caffeine sensitive” and can’t really drink any caffeine after 11 am if I want to get a good nights sleep!
Thanks for putting together these incredibly informative and interesting videos. Nice work!

Excellent video, thank you! Just a note on pesticides applied to coffee. There a two equally good reasons to buy organically grown coffee: First for your own health as no level of pesticide consumption is positive and second, as referenced, the workers applying these compounds are potentially sacrificing their health for you. We are in this together. There is plenty of organic coffee out there and the greater demand the larger opportunity for farm laborers to be healthy.

A very thorough presentation and outlined. I am impressed. ❤
I finnaly made the transition from coffee to tea. I feel much better now. I will eat a single coffee bean on those rare days when I truly need a strong caffeine kick. It provides an immediate eye opener. I wish I had known about eating coffee beans when taking college finals. It is much easier on the stomach then drinking multiple cups of coffee. They are great for staying alert during long road trips. I keep a few beans in the freezer just in case.

Long ago, The New York Times did a blind test of how much caffeine was in decaf coffee. Some decaf coffees had 75% of the caffeine as caffeinated coffee. Apparently too, coffee without any caffeine whatsoever tastes awful. People who say they are "allergic" to caffeine and yet drink decaf coffee are lying.

I do not drink tea or sodas, no added caffeine only in my 1 or 2 6oz cups in the morning and 1 in the afternoon. I learned alot in this video, I may just drink morning and not afternoon. Dark roasted has less caffeine than medium and light coffee, which I will not touch.

I think if someone drinks a lot of [caffeinated] coffee they’ll get acclimated to it and then can drink it up to bedtime with major effect on sleep.*
Maybe it’s just me. I drink around 4-8 cups of black cofee per day, morning up until a couple hours before bedtime and can sleep well (7-8 hours sleep/night). But I also exercise daily (most cardio some light weight-training) which helps me sleep.
*I saw an interview with world-renowned economist Jeffrey Sachs who says he drinks coffee non-stop, all day, up until bedtime. Same with other intellectuals like the late great mathematician Paul Erdös who lived on coffee, and once quipped that, “A mathematician is a machine for turning coffee into theorems.”
