I blend that at a high speed for at least two minutes, the paste is amazing and I add it to all my baking. I haven’t made a barbeque sauce with it yet but that’s next on my list. Have you tried iced tea latte? Same concept but with a strong loose leaf tea in condensed form instead of coffee ... like a healthy Malaysian cold Teh Tarik :) it’s amazing! You can add a little lemon grass for flavour, or cardamom , cinnamon and ginger if you feel like something more adventurous :)

Cooking actually intensifies some of the nutrients and makes it easier for the body to digest them--some of the vitamin C or Bs or folate may be destroyed but others are intensified.

Hi Lena, I keep my date paste in a mason jar in the fridge for about 2 weeks if it lasts that long. You can freeze it in an ice cube tray and then transfer to a ziploc bag for 2 to 3 months.

Yes you need to remove the seeds, otherwise you may ruin your blender! I keep my date paste about 4 or 5 days in the refrigerator and longer in the freezer, maybe 2 months.

I think that when simmered long enough, the leftover liquid becomes date syrup. I was just watching a video of how to make date syrup.

I use and recommend buying seedless. Blenders aren't that great at pulverizing the seeds well enough and you will have hard bits in your paste.

There will probably be some loss. You can always shorten down the cooking time.
