Yes Martin it’s actually quite sweet if you stirred into coffee, the fibre in the dates rehydrate and you end up with this caramel delicious fudgey stuff in the bottom it’s sweetens the coffee and it’s really delicious, I finish it with a spoon but you don’t have to. i've been considering this and yours is the first video i've seen. i see some people duplicated your temperature settings and times and claimed to have ended up with burnt, bad tasting dates so it may be suggested that people bake according to their appliance capabilities and also altitude levels of where they live as that highly affects time and temp settings. thanks again.

+Nancy gibbs thank you for your enquiry. I do know you can dehydrate foods in a frost free fridge but it could takes several days to weeks to dry them enough to make this recipe. Depending on your climate you can put them in the sun, covered with a cloth or paper towel until they are dry, again this would time consuming and unless it is very dry where you live the level of success might vary. Sorry I can't be any more help. I have dried things wrapped in paper and covered with a thick layer of dry raw rice but this is a very large quantity to try this method which I've never tested. I have never used fresh dates Ridhima Singhal, I’m sorry I have no idea if they would be suitable to use. Here in Australia I can only buy Medjool or regular dried dates, which are much more economical to buy and more suitable for this recipe because they have a lower moisture content. Thank you for your enquiry Renee, you could use a dehydrator but you will need to make sure the dates are hard, dry and crispy before blending otherwise you will end up with version of sticky date paste. Oh my Marianne, I'm not sure, perhaps a nutritionist would be best to be able to advise you there. I try to stay away from artificial sweeteners and absolutely gate the taste of Stevia. Dates are still full of Natural sugar, as is cane sugar but it has lots more nutrients and fibre than cane sugar. I think it's a healthier alternative as well as having a nice caramel like taste. You are most welcome M Z. Stored in an airtight container it will stay fresh to eat for up to a year. I’ve not made jam with and because jam requires prolonged cooking, I think it will burn or become bitter before the jam is set. I have a lovely date paste recipe on this channel which is tasty, full of fibre and nutritious. It makes a lovely date jam and imparts a lovely flavour to many desserts, bakery items and even curries. I hope that helps and thanks for watching.;-))

Yes it is, there will be a little sludge in the bottom after drinking but it tastes like caramel and is safe & nice to eat with a spoon. Dates are full of insoluble fibre and this method doesn’t destroy the fibre content. Hope that helps and thanks for watching.
Thanks for your enquiry Jennifer, dates are very high in fibre, although they have been roasted and crushed to a very fine powder, the fibre will still remain. I fear you syrup may become cloudy and have a soft sediment in the bottom. This is harmless yet nutritious adding sweetness at the same time. If you don’t mind stirring or shaking up before using and are not worried about the clarity of you syrup, our date sugar recipe will add an almost caramel type note to your syrup along with sweetness. You can make date syrup that will mix easier in your elderberry syrup. Just allow the dates to soak in filtered water in the fridge until they break down. Usually takes several days to achieve this depending on the dates. The liquid will get thicker the longer you leave the dates to break down. You can then strain the liquid and use as is or reduce over the stove for an even thicker syrup texture. Gee Anjna, we have a totally different electricity supply system here in Australia, 240volts as opposed to your 110 volt supply. The Thermochef is no longer available in Australia, I am familiar with ninja products here and love them. Thermomix is a very strong, reliable blender, a vitamix or blendtec would be perfect for high powered blitzing as well. They have to be really dry like hard plastic before blending and don’t do it too quickly because the friction of the blades will heat and melt the sugar in the dried 🍇 fruit, making it sticky and not a dust. I’m sorry Charles, having never substituted fruit in this recipe, I’m honestly not sure. My advice would be to proceed with this recipe exactly as it is but to use raisins instead, keeping and eye on it to ensure they didn’t burn or not dry out enough. If you imagine eating sweet dates, now imagine eating them once the moisture has been removed, the sweetness is concentrated as the only thing taken away is water. The result is a fine caramel type powder with lots of nutritional benefits and a lovely taste. What an excellent question Victor, to be honest, I have no idea. Treating the raisins the same way as the dates until they are crispy dry should actually work. You would probably need a greater quantity as the raisins have a higher moisture content and less fibre than dates. Of course the nutritional value would be different as dates are quite high in many minerals. It’s certainly worth a try though. Thanks for watching and posing such an interesting question.;-))
I’m a cool dry climate, stored in an airtight container this will remain safe to eat for 6-12 months. I’ve not tested it longer than that, I usually just have another batch waiting to be used. Hope that helps and thanks for watching.;-))
could you not dissolve in water and strain, then dehydrate to allow the sugar to form naturally? seems like this would be the best way to get rid of the fiber for baking
Yes you probably could, although there are lots of health benefits to be gained by including the fibre. Without the final dehydration process, you will have a delicious date syrup that is great for flavouring yoghurt, shakes, custards and as a liquid sugar substitute available for cakes, muffins or as a drizzle for pancakes, waffles and I cream. Date syrup is available to buy and is a good substitute for honey, maple syrup or golden syrup. It’s also good for vegan diets. Hope that helps and thank you for watching.;-))
Thank you for your question, prunes and raisins have a much higher water content than dates and would take significantly longer to dehydrate, prior to crushing. Having said that, I have never tried this with anything but dates, so unfortunately I am unable to help you any further regarding this suggestion. We do have quite a few recipes using prunes and dried fruits in our channel if you have an abundance of them and are looking for new and interesting ways to use them. Thank you for your question Samantha, it will release its sweetness into the hot liquid and flavour it, the fibre and I dissolved residue with fall to the bottom and make a caramel like soft ‘sludge’ in the bottom. Sounds gross I know but you can scoop it out and eat it with a spoon and it’s divine. It’s like a soft gooey sticky date pudding sauce, hope that helps. Absolutely , medjool dates are much more expensive, have a greater moisture content(requiring more dehydrating) are generally much larger , which means smaller dates have a greater surface area exposing more of that area to the drying heat required to prepare them for grinding or crushing. I have no idea. Dates are so naturally sweet, I can’t imagine why they would need to be sweetened. I love Medjool Dates , they are soft plump, almost juicy and perfect for eating just as they are and I use the very cheap style, about 1/4 the price of medjool dates, they are tiny, very dry, already pitted and much darker in colour. The skin is flaky and separates easily from the flesh. These are the dates I use for this recipe because they are so much more dehydrated and much more economical to use. As for sweetened dates, I don’t believe the dates I buy in Australia have had sugar or sweetener added to them. The two distinctly different varieties have completely different moisture contents, if you remove the moisture then you intensify the flavour and naturally present sugars, probably going a more concentrated flavour. Absolutely, like hard plastic or glass otherwise the heat generated by the blender when processing them will melt the sugar in the fruit and make it into a sticky mess like fibre rich toffee lol. Sorry to hear that Stewart, I’m guessing either the temperature was too high or the moisture content of the dates may have been lower than usual. Your finished product should be dark brown in colour, a fine powder similar to brown sugar and had a sweet caramel flavour, it won’t completely dissolve in coffee but it does leave a gooey fibre laden residue as it settles to the bottom. By that time it has sweetened and flavoured the coffee. You can either discard the sediment or eat it with a spoon. Delicious! Hope that helps and thanks for the feedback.;-))
A very strong blender should work. You may need to stir it often to ensure the blades don’t heat the powder and make it stick together. Start blending in small batches first, I would make frequent stops to prevent the blender motor from overheating. I hope that helps and thanks for watching.;-))

They would go mouldy and spoil if I tried to leave the air to dehydrate them,, often our humidity level exceeds 80% . Thank you for your question Miriam, I know cane sugar gets a very bitter taste if it is overheated or cooked for too long. It is possible that your Date sugar may have experienced the same problem. Ours were just a bit darker in colour than the uncooked state and sounded like broken hard plastic or even broken glass when dropped into a plate before grinding, I wonder if your blender cooked it a bit longer through the friction action of the blades, no added heat just a very fast or powerful blender can generate quite a bit of heat when pulverising food to a powder. Your date sugar should look a bit like dark brown or Demerara sugar and have sweet almost caramel taste. When stirred into coffee there should be a sweet syrupy delicious sludge left in the bottom as the fibres in the dates rehydrate in the hot beverage. Great to eat with a spoon at the end. I’m sorry you experienced difficulties with this recipe. Thank you for the feedback and for watching.;-))

+Nancy gibbs thank you for your enquiry. I do know you can dehydrate foods in a frost free fridge but it could takes several days to weeks to dry them enough to make this recipe. Depending on your climate you can put them in the sun, covered with a cloth or paper towel until they are dry, again this would time consuming and unless it is very dry where you live the level of success might vary. Sorry I can't be any more help. I have dried things wrapped in paper and covered with a thick layer of dry raw rice but this is a very large quantity to try this method which I've never tested. I have never used fresh dates Ridhima Singhal, I’m sorry I have no idea if they would be suitable to use. Here in Australia I can only buy Medjool or regular dried dates, which are much more economical to buy and more suitable for this recipe because they have a lower moisture content. Thank you for your enquiry Renee, you could use a dehydrator but you will need to make sure the dates are hard, dry and crispy before blending otherwise you will end up with version of sticky date paste. Wow thank you for such a simple and easy instructions on how to make date sugar. Who needs to buy a packet, you can make them at home. Is Date sugar the best alternative to cane sugar? I am on the keto diet and have tried stevia and swerve which is Erythritol Both these sweeteners, give me indigestion and headaches. I am looking for a sugar alternative. Is Date sugar better then Monk fruit sweetener?
Oh my Marianne, I'm not sure, perhaps a nutritionist would be best to be able to advise you there. I try to stay away from artificial sweeteners and absolutely gate the taste of Stevia. Dates are still full of Natural sugar, as is cane sugar but it has lots more nutrients and fibre than cane sugar. I think it's a healthier alternative as well as having a nice caramel like taste. Sorry I couldn't be more help as I have absolutely no experience with monk sugar or swerve. Thank you for watching and your question.;-))

Thanks for the question, I do but that is because I love the rich caramel like flavour it imparts. You could cut it back a little if you don’t have a very sweet tooth but there are lots of health benefits gained from eating dates thank you for watching.;-))

You are most welcome M Z. Stored in an airtight container it will stay fresh to eat for up to a year. I’ve not made jam with and because jam requires prolonged cooking, I think it will burn or become bitter before the jam is set. I have a lovely date paste recipe on this channel which is tasty, full of fibre and nutritious. Is it OK for use tea or coffee?.
Yes it is, there will be a little sludge in the bottom after drinking but it tastes like caramel and is safe & nice to eat with a spoon. Dates are full of insoluble fibre and this method doesn’t destroy the fibre content. Hope that helps and thanks for watching.
I want to add this to my homemade elderberry syrup. Do you think it will dissolve or should I sift it?
Thanks for your enquiry Jennifer, dates are very high in fibre, although they have been roasted and crushed to a very fine powder, the fibre will still remain. I fear you syrup may become cloudy and have a soft sediment in the bottom. This is harmless yet nutritious adding sweetness at the same time. If you don’t mind stirring or shaking up before using and are not worried about the clarity of you syrup, our date sugar recipe will add an almost caramel type note to your syrup along with sweetness. You can make date syrup that will mix easier in your elderberry syrup. Just allow the dates to soak in filtered water in the fridge until they break down. Usually takes several days to achieve this depending on the dates. The liquid will get thicker the longer you leave the dates to break down. You can then strain the liquid and use as is or reduce over the stove for an even thicker syrup texture. Gee Anjna, we have a totally different electricity supply system here in Australia, 240volts as opposed to your 110 volt supply. The Thermochef is no longer available in Australia, I am familiar with ninja products here and love them. Thermomix is a very strong, reliable blender, a vitamix or blendtec would be perfect for high powered blitzing as well. They have to be really dry like hard plastic before blending and don’t do it too quickly because the friction of the blades will heat and melt the sugar in the dried 🍇 fruit, making it sticky and not a dust. I’m sorry Charles, having never substituted fruit in this recipe, I’m honestly not sure. My advice would be to proceed with this recipe exactly as it is but to use raisins instead, keeping and eye on it to ensure they didn’t burn or not dry out enough. Low, slow and for a long time, should provide a crushable blender ready component to blitz. Hope this helps and thanks for watching ;-))

Is it really as sweet as sugar?
If you imagine eating sweet dates, now imagine eating them once the moisture has been removed, the sweetness is concentrated as the only thing taken away is water. The result is a fine caramel type powder with lots of nutritional benefits and a lovely taste. It is very sweet, you cannot eat it near by the spoonful but it is delicious in coffee, baking and on desserts. Hope that helps and thanks for watching.;-))

Would this work with raisins?
What an excellent question Victor, to be honest, I have no idea. Treating the raisins the same way as the dates until they are crispy dry should actually work. You would probably need a greater quantity as the raisins have a higher moisture content and less fibre than dates. Of course the nutritional value would be different as dates are quite high in many minerals. It’s certainly worth a try though. Thanks for watching and posing such an interesting question.;-))
What is the shelf life of this sugar
I’m a cool dry climate, stored in an airtight container this will remain safe to eat for 6-12 months. I’ve not tested it longer than that, I usually just have another batch waiting to be used. Hope that helps and thanks for watching.;-))
could you not dissolve in water and strain, then dehydrate to allow the sugar to form naturally? seems like this would be the best way to get rid of the fiber for baking
Yes you probably could, although there are lots of health benefits to be gained by including the fibre. Without the final dehydration process, you will have a delicious date syrup that is great for flavouring yoghurt, shakes, custards and as a liquid sugar substitute available for cakes, muffins or as a drizzle for pancakes, waffles and I cream. Date syrup is available to buy and is a good substitute for honey, maple syrup or golden syrup. It’s also good for vegan diets. Hope that helps and thank you for watching.;-))

Thank you for your question, prunes and raisins have a much higher water content than dates and would take significantly longer to dehydrate, prior to crushing. Having said that, I have never tried this with anything but dates, so unfortunately I am unable to help you any further regarding this suggestion. We do have quite a few recipes using prunes and dried fruits in our channel if you have an abundance of them and are looking for new and interesting ways to use them. Thank you for your question Samantha, it will release its sweetness into the hot liquid and flavour it, the fibre and I dissolved residue with fall to the bottom and make a caramel like soft ‘sludge’ in the bottom. Sounds gross I know but you can scoop it out and eat it with a spoon and it’s divine. It’s like a soft gooey sticky date pudding sauce, hope that helps. Ive made a simple syrup with date sugar for iced coffees for quite awhile now.
That’s amazing Richard, I have just bought a brand new coffee machine, can’t wait to try your idea in my new Jura Z6 Diamond Black. I know it’s going to be awesome. I normally just drop a spoonful into my coffee and then have this delicious rich, sludge like fudge at the bottom, to finish with a spoon, when no ones looking of course.;-)) lol

Sounds lovely, I make cold brew coffee and serve it over ice in summer, very refreshing. You’re right, the taste is very different to hot brewed coffee.;-)
At suggested temperature, mine burned after 45 minutes. Another video suggests 200F for 10 hours over night. I think i'll try that.

Absolutely , medjool dates are much more expensive, have a greater moisture content(requiring more dehydrating) are generally much larger , which means smaller dates have a greater surface area exposing more of that area to the drying heat required to prepare them for grinding or crushing. How to identify whether dates are sweetened or they're pure ??
I have no idea. Dates are so naturally sweet, I can’t imagine why they would need to be sweetened. I love Medjool Dates , they are soft plump, almost juicy and perfect for eating just as they are and I use the very cheap style, about 1/4 the price of medjool dates, they are tiny, very dry, already pitted and much darker in colour. The skin is flaky and separates easily from the flesh. These are the dates I use for this recipe because they are so much more dehydrated and much more economical to use. As for sweetened dates, I don’t believe the dates I buy in Australia have had sugar or sweetener added to them. The two distinctly different varieties have completely different moisture contents, if you remove the moisture then you intensify the flavour and naturally present sugars, probably going a more concentrated flavour. Absolutely, like hard plastic or glass otherwise the heat generated by the blender when processing them will melt the sugar in the fruit and make it into a sticky mess like fibre rich toffee lol. Sorry to hear that Stewart, I’m guessing either the temperature was too high or the moisture content of the dates may have been lower than usual. Your finished product should be dark brown in colour, a fine powder similar to brown sugar and had a sweet caramel flavour, it won’t completely dissolve in coffee but it does leave a gooey fibre laden residue as it settles to the bottom. By that time it has sweetened and flavoured the coffee. You can either discard the sediment or eat it with a spoon. Delicious! Hope that helps and thanks for the feedback.;-))

A very strong blender should work. You may need to stir it often to ensure the blades don’t heat the powder and make it stick together. Start blending in small batches first, I would make frequent stops to prevent the blender motor from overheating. I hope that helps and thanks for watching.;-))

Just one doubt . If one doesn't have an oven, could one air-dry the dates for 3-4 days , within the house ? I've heard that drying in direct sunlight tends to leach overall nutrient content. True?

They would go mouldy and spoil if I tried to leave the air to dehydrate them,, often our humidity level exceeds 80% . As for nutrient value being diminished I am unable to comment as I have never done it, nor do I have the scientific facilities at my disposal to test it. Thank you for your question Miriam, I know cane sugar gets a very bitter taste if it is overheated or cooked for too long. It is possible that your Date sugar may have experienced the same problem. Ours were just a bit darker in colour than the uncooked state and sounded like broken hard plastic or even broken glass when dropped into a plate before grinding, I wonder if your blender cooked it a bit longer through the friction action of the blades, no added heat just a very fast or powerful blender can generate quite a bit of heat when pulverising food to a powder. Your date sugar should look a bit like dark brown or Demerara sugar and have sweet almost caramel taste. When stirred into coffee there should be a sweet syrupy delicious sludge left in the bottom as the fibres in the dates rehydrate in the hot beverage. Great to eat with a spoon at the end.
