  • A healthier take on the classic masala dosa with a ragi batter instead of rice or rawa.
    RAGI MASALA DOSA
    Ingredients
    1 cup finger millet (ragi) flour
    ½ cup rice flour
    ¼ cup split skinless black gram (dhuli urad dal) flour
    2 dried red chillies, seeded
    ½ teaspoon coriander seeds
    ½ teaspoon fenugreek seeds (methi dana)
    1 cup yogurt
    Salt to taste
    Oil as required
    Potato bhaji
    3 large potatoes, boiled, peeled and cubed
    1 tablespoon oil
    1 teaspoon split skinless black gram (dhuli urad dal)
    ½ teaspoon mustard seeds
    2 sprigs of curry leaves
    2 green chillies, chopped
    1 large onion, chopped
    ¼ teaspoon asafoetida
    ½ teaspoon turmeric powder
    Salt to taste
    2 tablespoons chopped fresh coriander leaves
    1 teaspoon lemon juice
    Method
    1. Mix together finger millet flour, rice flour, black gram flour, yogurt and sufficient water to a batter of pouring consistency.
    2. Blend together red chillies, coriander seeds and fenugreek seeds with sufficient water to a coarse paste.
    3. Add prepare paste in a batter and set aside for overnight to ferment.
    4. To make the potato bhaji, heat the oil in a non-stick pan, Add the urad dal, mustard seeds and when they splutter add curry leaves, green chillies, onion sauté till lightly browned. Add asafoetida, turmeric powder, salt and mix well.
    5. Add potato and mash with the help of back of the spoon. Cook for 2-3 minutes, Add the coriander leaves ,lemon juice and mix well.
    6. Mix the batter well, adjust salt according to taste and batter should be pouring consistency.
    7. Heat a non-stick tawa and pour a ladle full of batter, spread evenly and grease with a little oil. Cook for 1-2 minutes
    8. Spread potato bhaji evenly and fold in half.
    9. Serve hot with chutney.

    Further to my comments about ragi dosa y'day, wish to share my experience
    Batter fermented nicely after 15 hrs
    Curd not added before or after fermentation. Could spread the batter on hot Cast Iron tawa, thin and evenly. Dosa came out well. I have the right recipe now for ragi dosa. Thank you ma'am once again
    Wish to add, I mixed 1/2 cup brown rice powder instead white rice powder that makes it more healthy.

    हमारे घर मे रागी ,चावल, दाल सब भिगोकर रख दें देते हैं ,औऱ फिर पीस कर रातभर रख देते है, सुबह डोसा बनाते है ,उसका जायका बहोत ही बढ़िया आता हैं , इसी तरह जवार का भी बनता हैं , जवार और बेसन का ढोकला तो बहुत ही मस्त बनाता है ,एक बार आप जरूर कर के देखना , सर को आप दीवाना बना दोगे ।।।

    Hi Alyona, I really love this recipe . I am also big dosa lover can eat whole day and 365 days😜😅. I am making dosa from traditional dhokla batter as well . It's seriously very tasty 😋 .my family also love to eat it. Traditional dhokla made out of rice and mix dal .I like to add garlic and chilli powder chutney , turmeric and salt in it . I am using peanut oil specially for it ,which gives lovely aroma and make taste double of dhokla and dosa . Hope you like to try it 😊

    Lovely, I used to make it with ready mix. Henceforth, I will make it with raw ingredients.
    Try tamilanadu recipe of Adhai. Soak tuvar, chana, udad and moong dala for 4 hours. Soak rice 1/2 the quantity of any one dal with few methi seeds and red chillies. Grind dala separately. And rice separately.
    Make dosa just like any other dosa. You may refrigerate the batter for a day or two. The batter starts breaking after two days. Enjoy and thanks for Ragi dosa recipe

    *Hello Mrs. Alyona, which Tawa did you use to make the Dosa. Mine always sticks and ruins the dosa. I don't like non stick material though. It has harmful teflon coating.*

    Hi mam,
    If i want to make ragi dosa tomorrow night so can i do it tomorrow morning. So basically how much time should be kept for forgemnting.

      You will have to soak it overnight. So if you want the batter to be ready for morning then soak it in the morning one day prior. Also please note, depending on the climatic conditions that you live in, this will change.

    Instead of using the powders can we soak the whole ragi, rice and urad dal and grind.

      Soaking is actually the *original and traditional way* of making these dosas.
      Our grandmothers and mothers did exactly that.
      Further, fermentation may also be better in the traditional method.
      But in the modern day, people want to avoid elaborate preparatory work of soaking / grinding etc.
      Further, readymade powders are also available nowadays, which can be used as suggested in the recipe.

      Fermentation happens best when temperature is warm. So, keep it outside.
