    When I was little, we lived in Wisconsin but my grandparents lived in South Carolina. Every summer we would drive down to spend a month with them. We passed through the Smokies and my absolute favorite thing (and still is) was to look out the window and see the little cabins up on a ridge with their gardens tucked so nicely next to the home, clothes hung out to dry, flowers scrambling up a fence, and wood stacked up for fires. I would dream that one day I would be rich enough to live like that. Little did I know! Wait - I think I did know. The truth is how you live makes you rich or poor - not how much money you make. So now I see your cabin, garden, hear the sweet music from Danny, and listen to the birds while you can your food. How much richer is even possible? Thank you for doing your videos. They help me remember how to live right!

    I’ve Canned for 40 plus years, but watching your videos I’ve still learned things from you. My husband and I grew a acre garden and sold at the Farmers Market. I still Can some things.

    New to canning but I get conflicting information. I have a glass cooktop and I want a pressure cooker but I was told not a good idea. Is this true?

      I know people that can on glass top, it did kinda ruin the top of the stove, so I would say no, but people have done it, thats a conflicting answer too, lol

    I believe it would still contain all the minerals even if pressure canned. Also you picked and canned at peak of freshness. People's health is in peril more for lack of minerals than vitamins. Greens are loaded with minerals. You are such a good example, thanks for sharing.

      You DO loose some vit and minerals. But plenty left,Excellent source

      I hear what you are saying but I would like those pressure canned greens tested so we knew the nutrition value instead of just following u/s/d/a recommendations.
      I am going to raw pack and water bath a few to see if it's better or worse.
      Cause I'm sure folks hav been preserving food way before the pressure canner was invented, right?

    Makes me think of my mother and I canning. Seemed like everything came in at once. At the time I didn't enjoy it but would love to relive those days now. I'm such an idiot for selling my mother's canner after she died. You did a great job explaining everything. I remember my mother rubbing the rims of the jars to make sure there weren't any nicks.     Love watching your canning videos! My great grandmother which I mentioned in another comment had a root cellar and I loved being in there especially during the summer months but overall, I loved just looking at all the foods she canned throughout the years. She use to have this huge barrel that had garlic pickles inside, but oh boy , what a process that was😱 just checking to see if they were ready to eat. lol! . She had this heavy marble disc that kept the pickles submerged under the water and a heavy rock on top of the disc. These were the best pickles I ever had to date . I know this has nothing g to do with your wonderful video...I suppose your home reminds me of some wonderful times. Thank you Lori for sharing the best videos on youtube..at least to me. Your beautiful garden and of course the warmth of your kitchen... always so inviting. A nice reminder of my nonna Louisa's. home.     Gosh, I really admire your talent of canning. I never learned(even tho my mother did I), and living alone, I don’t need all that canning done. But, I am really jealous of your laundry line outside! I love hanging my clothes outside in the sun, especially white shirts. I live in the city, in a townhouse and I have a little enclosed yard. I bought a little portable laundry line to hook on my fence for a few items. But, I would have a whole line if I could. You are hard working people, and I love watching you both! Bet you sleep good at night!

    From the UK, canning greens isn’t really a ‘thing’ over here sadly.... its really nice reading the comments and seeing how big this tradition is! I’ve just started a little vegetable garden and this video is giving me lots of ideas... we were only saying earlier, we will have too many, this is awesome. Thank you! 😁🙏❤️ xoxoxo

    I put my blanched water in my jars to save all the nutrients. Our garden is just moving turtle speed, can't wait to get fresh vegetables to eat. Thanks for the video, Ms Lori and you are almost to 100,000 subs, love and blessings sweet lady

    Last year I accidentally grew kale. It was mixed in with kohlrabi. What a gift!!
    I took my kale stems, dehydrate them, put them in my vitamix and had kale powder to add to recipes! Waste not, want not.
    Seriously, after I started doing this, I found out they sell this powdered kale...so thankful for this God sent wisdom.

    God willing, I will have enough greens to preserve some. Our gardening season just started and I have turnip greens, collards, kale, Swiss chard, and spinach.
    I will be using my new pressure canner for the first time soon!

    Yes, maybe I can get the right amount of greens to a jar also, lol... sometimes its perfect and sometimes we have green soup; but both ways is delicious... thrm greens sure was pretty you canned. Blessings to Yall

    Thank you so much for your videos. I've canned for many years and I've never canned greens. Usually they just go to seed and we lose them. I ran across this video the other day and I canned my kale and my collard greens. It was so easy and so convenient. Thanks to you, I've canned dry bean, potatoes, and other things I didn't know about. I really appreciate it.

    I always fill my pantry from my garden first then start freezing.... Food in the freezers get eaten first.

    I find it interesting you don't use the stems. We always cut stems up & steamed them & added to the jars first. Then the greens.

    I love watching you can. Your garden vegetables have such a beautiful dark green color that shows how healthy they are. I've only canned a few things in my life & it seemed so tedious that I never enjoyed it. You make everything look so easy. Cooking out on the porch allows you to listen to those birds in the yard.     My grandmother would keep plastic half gallon ice cream buckets, only one came in plastic, all others were cardboard, and she would freeze them full of water for when she would be blanching her veggies. Thanks. EDIT: She always told me to use vinegar to wipe the jars off, no matter what was in them. Any vinegar left over was tossed into the canner to help keep the jars and canner clean.

    My grandma had an outside cooking set-up with a stove and canning station on her carport. She only canned jam but she was well liked in her community for all the wonderful jam she gave away and the only thing she asked was ‘you have to give me back the jars and you’ll get more’, lol!

    I love Paula Deen's recipe for cooking greens. I eat it with rice like it's soup. Is it feasible to can that instead of the plain greens? It has meat bits in it. Love your t-shirt!

    Lori can this be water bath canned and if so how long in a water bath canner because I don't have a pressure canner that you have a lovely lovely garden and I just love your videos

      I am in Michigan and when I stop and think about it I have not seen any canners for sale in any of the stores I've been in either, you might find one on Amazon though and if you have the Amazon Prime it might save you on the shipping

    I have had a lot of trouble with my mustard greens siphoning. Do you have any suggestions how to correct this. I followed the instructions completely.

    This will be my first year with a pressure canner. I have water bath canned, but not pressure canned. I have much to learn. I just bought an all american canner and a 12,000 GTU propane burner, because I don’t want to take a chance on breaking my glass top stove. I’m curious. When canning greens, could cooked bacon pieces be safely added to the jars to add the bacon flavor? I’d love advice and answers from anyone who pressure cans.

    I may have to try canning greens. I like to mix kale and collards. I have frozen them, but never thought to can them. Thank you for sharing, I wish I could cook and can outside.

    I have a two-burner camp stove I use for canning on my carport/patio. Summer, it's a patio, winter it's a carport. lol Do you take your rings off after they cool? My grandmother taught me that it didn't matter what you were canning to not store with the rings on. She told me with the rings they could unseal and reseal. My rings are hung in my pantry right now on a string. Thanks for posting. Stay safe and stay well. God Bless!!

    Considering how far food at the store travels, I would suggest that while canning reduces the vitamin level you probably have far more than items which come thousands of miles un ripe , gassed and trucked and have been sprayed with God knows what.

    Miss Laurie- is it possible to can black eyed peas with greens and ham hocks? I know greens and ham is ok and beans and ham is ok. But I can I find a recipe anywhere for ham AND beans or peas. I suppose I could can the greens and the ham in one jar and the black eyed peas in another jar and then when we get ready to eat them, Evan just open both jars and combine them. But I’d rather just do it all in one jar. Thanks for the video Miss Laurie!

    I put vinegar in my greens when I eat them. So I canned them by watering bathing them. I put I teaspoon of vinegar in the jars and water bathed. They say u can't water bath, but u can water bath anything. Just takes much longer, unless it has some acid in it, therefore the vinegar.

    I’d love to have a outside kitchen!!canning can get soo hot in the house kitchen..I’ve never canned greens tho..u did put water in the canner didn’t u .lu didn’t say..I laugh everytime u say “wash” because we r in NC And my husband is from here and he says “wash “ like u do.u guys say warsh”..not waash..lol ..when I take my jars out of the canned to cool I always turn them upside down to cool..a ole lady yrs ago told me to do that and I always listened to her.she who taught me to can...

    My husband & I raise a garden & can can every year for winter. We stock during the warm months so we don't have to go out as much in bad weather lolll I'm the 4th generation of canner's. Nothing like it.

    Can I can mustard greens with this process. I have a large harden filled with mostly mustard but have some collards and turnip. Dont see videos on mustard. Wondering if it's possible to can them or are they too tender for this process.

    I know the part about cooling things down to stop the cooking. But then putting hot water back on it seems to kill the point of cooling first. And then boiling in the jar. Am I missing the point somewhere? I don’t see the reason for the cool down! ❤️👍🏻

    Question.... You did add the salt to your jars,but why not prepare the greens with onions,bacon and other items that you may like with your greens when you eat them when you add the liquor to the jars?
    Do you add these things mentioned after you take them out and cook them futher maybe?

    Oh , never thought of using an ice pack to keep water cold in sink.
    Our freezers are plum full.
    Canning is the best thing if you have a large pantry. Or some where to store that stuff.

    I cook all my greens to the point if being ready to eat (with salt and seasoning meat/fat) then I freeze them. My deep freezer is a very small one, but when I want greens I only have to thaw and heat. We have a whole house generator if the power goes out.

    I'm in Arizona...an outside stove would be wonderful. It gets to 115 degrees and we get the rainy season in July to Sept when it's the hottest.

    Fresh Greens can be vacuumed sealed and frozen also. Make sure they are washed well and dry before vacuum sealing.

    We grow our collard greens in the fall and winter. But when I can them I don't strip all the stims off . we like the stim so i cut it all up in bight size pieces and cann all of it.

    Lori if you put 1/4 jar of liquid in with your salt, and then add your greens you only have to add a little bit of water to top them off with minimal debubbling.
