    I have never thought of canning greens. I usually dehydrate kale and then I can throw it into soup but it really limits what you can do with it. Next year I'm going to try this. Thanks for another great video oh, I'm very behind and watching them but I always look forward to seeing them. Hope you are doing well.

    I have a great harvest of kale. I blanch and freeze but I need space in the freezer. Looking to can. Thanks for the video!

    I can collards but haven't canned kale. I do dehydrate it. Thanks for info.

    Ok, this feels just totally 'wrong' to me, over here in the Netherlands Cale isn't taken off the land until after the first frost. Seeing that the frost turns the bitter into sweet somehow.

      Here we eat it in salads and green all Summer long. However, it does taste a bit less bitter after a frost.

    Mom used to can everything, then later in life, we blanched and froze our greens, and they were more nutritrious and tasty than the cans.

    Excellent video. Never thought about canning greens. Do you still prefer to pressure can kale or have you now tried blanching and freezing? I’ve yet to do either, 1st year growing kale. What verity of kale is that? I’m growing winterbor kale and it looks the same as yours.

      It is Winterbor. To be honest, I like fresh kale the best. Canned is OK but it gets to the consistency of canned spinach which I don't like.

    I followed your instructions. I ended up loosing most of the fluid from the jars but the jars all sealed. I filled to 1/2" headspace, next batch I will try 1" and not pack it so tight. 1" is what the canner book calls for. Any suggestions?

      Is your temperature constant? Fluid loss sometimes happens when temperature is adjusted during the canning process.

    I am looking to find out if i can can kale without a pressure cooker. Can i do it safely with just a water bath

      All modes of cooking remove some of the nutrition.

    When my sister done hers she took a knife and ran it down each side of the stem and it all came off the stem in one swipe. Thought that might help the next time.

    70 min in a pressure canner … so can you water bath them too?

      No, not advised for safe canning since it isn't acidic.

    YUM! Don't have many greens this year because of the flooding and the cats (anyone know how to keep the cats from pooping on your greens then covering them up?) ARGH! I love my furry guys and girls, but when it comes to my garden....nawty cats!! I'm looking into a Premier 1 electric fence to keep them out. They'll probably just jump over....LOL!! Anyway, love some canned greens. I will add some bacon and onions to it when I finally get some and have southern greens! Double yum! Blessings from NE Missouri!

      I use deer fencing to keep out our cats, chickens and wildlife

    I wish I liked kale! I can't stand the taste of the stuff.
