  • I canned up a few pints of Malabar Spinach a few weeks back, but didn't film a video on it. Shortly after, we used a jar in it for one of our dinners, and you guys really wanted to know how I canned it. I pulled my final harvest from the garden, and we'll can it up together this time - it's really super simple. Blanch, Jar, Can, Enjoy. Pints go for 70 minutes, and Quarts go for 90.     Rachel and Todd you inspired us to take the leap into self-sustainability. Started with a small garden. Tried the canning and dehydrating. Expanded our garden. Started composting. Canned some more, established no-waste goals, added some chickens into the mix. Expanded the garden again. Now we have a “canning season kitchen”, a coop full of hens, raise our own meat birds and next year’s goal will be 90%! I need that cow, too!

    Hi Rachel thanks so much on the Michigan spinach lesson. I’ve had a garden for about 4 yrs and I’m still learning so much. After Covid I’ve much more serious about it. If there are anymore weather planting tips about Michigan please pass them on. I went to your farmers market. WOW WAS IT WORTH THE TRIP!!!
    I will be returning for sure. We are north of Ann Arbor so it was only an hour. My friends and I can’t thank you enough ❤

    I am in Ohio and have struggled with spinach too. Next season I am going to try to grow the Malabar. Oh and Just tried your roasted tomato soup and OMG! It is so good! You were are RIGHT it is better than Campbell's! Thank you for sharing!

    We love our Malabar. I struggle every year with my spinach. The same problems that plague you reduces my production to a meal or two. I have found that my Malabar grows best in partial shade here in mid-MO.

    Idea for you. Get a wooden dowel a bit smaller than the funnel mouth. Cut it the height of several inches over a quart jar.

    Thanks for the video. I’ve been growing Malabar spinach for years up a cattle panel. We eat a lot of it in the summer and add it to salads and in the late summer/fall I freeze a ton of it and add it to soups in the winter. It’s such an easy to grow vegetable, and you are so right about spring going right into summer in the blink of an eye. I’m in southern Ontario and have always struggled to grow regular spinach. Always love your videos 💚

    I'm in Wisconsin, the last few years I've had success with Tatsoi, an Asian spinach. And it's cute ❤

    Love your channel! When canning and trying to pack jars, I often use the 'pestle' from my mortar and pestle. You then control how tight or loose food is packed. It fits beautifully through the opening of the funnel. It should work on that spinach!

    I finally broke down and bought a pressure canner! Haven't used it yet, but Once I figure it out I think I will really be happy I got it! I have water bathed for years, but you always want something you can't do because you don't have the right canner. Wish me luck ;-) I love spinach.

      It's great that way! Mom would serve her canned spinach and put a little cut glass decanter filled with vinegar on the table. I thought it was so fancy I didn't care that spinach wasn't my favorite.

    I wish I would have realized sooner that I could successfully preserve my malabar😩I grow green stem and red stem! I also grew Egyptian spinach and it grew fantastic all summer in this GA heat!🥵. Watching for those seed pods to dry up now but I will most definitely be canning both next year!!!
    Looks delicious! The mixed greens sound fantastic too!
    I did make the mistake of adding malabar to a smoothie😩slime foam way to mucilaginous for high speed blender!

    My trick to pack jars was free. My husband won a bar supply basket (had a drink strainer, muddler, drain mat,etc) but we don’t drink. The muddler has a rubber flat bottom. Perfect to pack jars.

      That muddler came in really handy tonight, pressure canned a combo of honey butternut & regular butternut squash for holiday squash pies. First time I pressure canned it & didn’t freeze it. Yummy!

    So not spinach but it is green ... we made cowboy candy a month ago even tho we have never eaten jalapenos! You made it sound so good! We LOVED it. Only made 4 half pints so Saturday we went to a local farm and picked 18 lbs of jalapenos yup 18! We ended up with 28 half pints and 8 quarter pints!!! Thank you for all the recipes you share!!!! We don't have a garden but I'm in the process of begging my husband to build me raised beds :) we live on a hill of shale unfortunately.

    Rachel when you cook collards and they have like a bitter taste to them add a little amount of sugar and it will take that taste away.

    I tried growing Malabar spinach last year, it did absolutely nothing all summer until the last couple weeks.. then it was killed by the frost. Wondering if my climate isn't right for it, zone 3b. Or if I just didn't have it in a sunny enough spot for the season. Will try my luck again next year. 🌱

    I wonder if it's possible to ferment spinach before canning it? Like fermented spinach and garlic or basil, or by itself? Would it retain its crispiness that way?

    Oh this is awesome! Thank you so much! A visual of these things in action helps. I just kept thinking, they are thick, and er, juicy? How exactly does that work? I'd want a video if someone was canning purslane. Although I think this video even makes that idea comprehendible. Just hard to wrap my brain.
    Things I wanted to know also that were cleared up: do you tip those red stems off? (nope!) Chopping, and any resulting slim? (nope, therefore nope!) Still squeaky even after blanching? (yes!) All those tiny leaves go in too? (yep!) How much does a big bowl make compared to the thin greens? (answered!) Does the red turn everything into strange jarred colors after canning? (no!)
    I'm totally going to strip all my red malabars bare in mid-Nov now thanks to this video. :) Have the 'other' kind of spinach sprouting in my bathroom right now! Still too hot to get them outside, but soon! Who knows, may never bother with them again past this winter, after canning the malabar. Looks so much better than regular canned spinach.

    Rachel - I’ve been watching your channel for awhile & love your ideas & the peacefulness I feel after viewing. I’m a 69 year old woman who watched her Mother can tomatoes, pickles, chili sauce, etc., and never once saw her use a canner. She would cook her ingredients and put in hot jars with boiled lids and sit on the counter & wait to hear the “ping” which told u it had sealed. She would also push down on the lids to tell if they for sure had sealed. I’ve done this throughout my lifetime with no ill effects. I used my Mother’s method last year in canning peaches, but now am worried I’ve done something Wrong all these years! I guess I’m mostly asking this because now that the fear of God has taken over, is it too late to put canned peaches in a canner after they have sat for a year? Please just give me your thoughts on this. Thank you!

      Putting year old canned peaches in the canner now wouldn't do anything useful, unfortunately. However, if you can them, going forward, with a canner from now on there shouldn't be a reason to worry anymore. :)

    Is there a reason you can't fill the jars after packing, with some of the water you blanched it in? I would think that would use some of the nutrient rich water they were blanched in, instead of watering it down?? I love this, and can't grow regular spinach here in NW WI either, I plan to do a trellis of Malabar Spinach next year.

      The instructions say specifically to discard the water, but not why.

    I’ve been growing red malabar spinach up here in Midland for a number of years, but it often gets spots on it. Not sure what the cause is. Grew it indoors over winter last year and had green leaves without the spots, but it was a struggle keeping the plants alive inside. I hardly use much of my crop because the spotty leaves aren’t appetizing! Your leaves look so nice-any ideas why mine get spotted? Probably some sort of pest since I don’t use pesticides? I just learned to pressure can last month, and I’d love to try saving some of my malabar crop! Thank you for the idea and demonstration!

      It's supposed to be a soil borne bacterial or viral disease. We get this if the temps drop and or it starts raining. Basically the humidity goes bonkers, and everything gets icky.

    Hi Rachel, I have been watching your videos for a few months now and I have learned a lot. I do have a question.
    I have recently been given a large amount of navy beans. I want to make baked beans and the recipe from my mother contains bacon. Can baked beans be hot water bath? I don't pressure can.

      I cann beans and meat (bacon) with no problem. 100 degrees celcius for 120 minutes
      I only cann with waterbath ( weck method) and I cann everything even meat. Greetings from the Netherlands

      I tried with my first round ends up with only half a can of spinach because it's wilts down by half
