    Mrs Lori..my wife when she was young was taught by a native American how to freeze corn on the cob...cut the stalk end off but not show corn do the same on the other end ..don't shuck only the outer layer but keep enough green...put in freezer bag and freeze... when you steam or cook it..it taste like fresh corn...I was amazed

    When packing your jars Tip: fill about 1/2 full then turn on side and shake it.. It will line up the fries, so when you tip it back the fries are standing up. Do this until full, with sliding in the last one. To keep them in place you can put the jar in a large bowl, tip the jar to the side and fill at an angle. Just pick the right bowl. Thank you Miss Lori. You never know when you need this. I was at a farmers market and bought 100 lbs of russets for 20.00. Yep I canned potatoes.

    Miss Lori I use a rubber band between two fingers to get the silk off the cob.

    Ms Lorie, I am a beginner canner, my grandmother used to can every year, but I never paid much attention to how she did things. She passed away in 2012 and I sure wish I had paid much more attention. Watching your videos remind me so much if her! She as well was from Arkansas, you sound so much like her! Thank you for making these videos. Please know that you are blessing to so many people!

    mama and I would cut potatoes in long quarters, put them raw in a jar and can them, then in the winter after rinsed and dried we would flour them and fry and you have what we call in Arkansas tator logs...

    Canning is a must learn thing as they say food prices are going up Miss Laurie. Anytime I can learn canning from you I thank God for such a lovely person to have the patience to help us learn.

    Lori, you can scrape cob after you cut it off the cobb. Take cobs in 1/2 sheet pan and roast cobs till good and brown, not burnt at 400 F. Place cobs on large pot, cover with water, add onions, carrots, celery. Make corn stock.

    I actually like the “Willy-hilly” look of these fries. Time is precious too, so willy-nilly is good as gold in these circumstances.

    Just made potato soup from a pint of canned potatoes. Add a cup of milk, a sprinkle of herbs and dried onions and a pat of butter. Yummy. Better than store bought canned soup. These french fry cut potatoes would work for that. Thank you for the instructions.

    Please, bring us along for your later garden planting. The are other homesteaders that use a light weight light colored fabric over their gardens. Greenhouse and else wise, too. When making corn chowder, take the cobs and boil them for an hour and use that stock to make the chowder with.

    I so enjoy all your videos. I'm 71yrs old and have never pressure cooked. I have a presto cooker. You are inspiring me to can. I'm going to try the dry beans and also the French fries. I've had some health challenges and I feel like I'm going to be getting better. When I can I will try. Love you Ms Lori. I feel like you're a friend. My husband and I really enjoy you and Mr Brown sooo much. ❤🌻

    Miss Lori I’m sad to hear you say you are having a hard time time with your garden. I take hope in hearing someone with as much knowledge as you and Mr. Brown have are having problems too. Lots of times you see these productive gardens on TH-cam and I think what in the world have I done wrong this year? No rain here in North Texas, close to Oklahoma border. 109 heat index. Then the grasshoppers went crazy. I lost my beans and tomatoes. My squash, cantaloupe and watermelon along with my jalapeños are doing well. (knock wood). I’m also doing a big fall garden to try and makeup for summer. Pray for rain.

    Thank you for saying you don't over burden yourself canning! My husband's family is Morman and they all keep a years worth of stores in their homes. When ever I helped my Mother-in-law would start real early and we would can all day! Cases worth of everything. Thank goodness they were really good on rotation with their inventory!

    Sorry about the drought. Although this year has been decent , last year we had the drought. It's no fun at all when we are counting on our own food. Everyone around us have had huge golf ball size hail..God has kept us safe so far. Hang in there..luv u both
