Hello, just seen this video for the first time. I must say it is very close to the one I have been making for years ( I use button mushrooms). I liked the idea of roasting the mushrooms first. I prefer to take a small spoon and dig out the “ gills” on the inside. I find that when I compared one with and one without, the mushrooms with the gills were a little bitter.
Thanks for watching. Canola oil or vegetable oil would both be fine. All you need to do is get those mushrooms in the oil to moisten them up. Have a great day.
Hello Stacy, I would not freeze the mushrooms, they can get mushy. You can pre make them and hold in the fridge for a couple days though. Thanks for watching. 😀

Instead of Old Bay, I use Louisiana Crawfish boil to season the crab because it brings out the sweetness of crab meat.
