The first time I made this, the only cheese I had in the fridge was Apple wood smoked cheddar. Quite popular in the UK. The smoked cheese really added to it. I have since made it again with mature cheddar, and it was good, but it was so much better with the smoked cheese. Either way it's an awesome recipe!
Rather than adding flour to my broccoli cheese soup, I add a small amount of mashed potato flakes just at the end of cooking. It adds a bit of thickening as well as a nice note of potato flavor which is so good with broccoli and cheese.
This also tastes amazing with cauliflower. Cauliflower is less herbaceous and much more velvety. Always a pleasure to watch John... heartwarming Recipe.

I cannot wait to make this soup. I have scoured the internet looking for the best broccoli soup possible. This looks divine. I eat KETO, (diet) but it's how I always eat, so I guess it not a diet. The only substitute I'm planning on making is to use arrow root instead of flour as the thickener, which will not change the soup. I love your spice mixture and the Dijon. Thank you.
This is my first Preppy video and I swiftly subscribed. This is my style of cooking to a tee! Sneaking in extra garlic and using fresh veggies... no neon orange cheeses...(American, as I saw on other videos). I am adopting this way of finely slicing carrots and think it is a great idea. I made this today! Sooooo yummy! Thanks for sharing! I followed the recipe exactly. I used sharp cheddar and a couple of ounces of an aged cheddar I had on hand, used heavy cream, and I only had smoked paprika. I’m definitely going to make this again. Next time I’m going try to make it low carb/keto friendly, since It’s *almost* low carb anyway.
I love your descriptions & agree pre shredded cheese is terrible for melting into recipes. I'm sensitive to gluten so I try to either use cornstarch for thickening or if it's a soup or sauce, I use a potato to thicken. The starch from the potato helps add texture without altering the flavor. Can also use immersion blender to smooth out the sauce before adding the broccoli & cheese.
