In Tamil Nadu villages, this is done every day, the left over of the day's rice is allowed to ferment overnight with just adding water.
The same is consumed with adding butter milk the following day and the water is consumed with adding salt, we call it ' neer agaram'

Thank you. Rice ferments quickly in warm climates. In cooler conditions, it may take a little longer. Usually we enjoy fermented rice during Summers in India. Where are you located dear?
In Telangana, we the telugu people make this in a little different way. We add a spoon of curd and a small glass of Milk to the left over rice at night. To the same we add, big slices of onion n green chillies. And leave it overnight.
This is taken the next morning. Either for breakfast or lunch. Its said its beneficial to have this as breakfast. But not everyone does in these times.

Even I never use white rice. We prefer parboiled rice, known as usuna chawl, or matta rice. In fact, Any variety of rice can be fermented easily.

We make fermented rice too. Leftover rice curd n milk mix n let it become natural curd with rice in it. Mix it all up in the morning, garnish with green cut chillies corriender, yaa don't forget to add salt first.
Then mustard seeds with red dry chillies neem pata, tadka. Leave to cool in refrigerator. So cooling n refreshing

In Telangana also we eat this kind of rice call as 'Saddi annam'.
And we don't throw away the starch. We ferment it overnight mix it with millet powder and buttermilk and have it for breakfast.

If you are b12 deficient, fermented rice wil take years. Please talk to a doctor and take cobalamin supplement to overcome the deficiency. Then you can maintain your normal levels with fermented foods

I cook rice in the morning. Then use the leftover rice for fermentation at noon. Rice won't get spoiled so easily. You can use the same rice for fermentation. If you want to eat Fermented rice the next day, cook it today. Then mix it with curd/ buttermilk or water and salt and mix well. Leave it for fermentation at room temperature. If it's extremely hot at your place, shift the rice after fermentation for 6 hours in the fridge. Else keep it outside.

Well, it's usually fermented with water and little salt alone. But some people like me love the flavor of curd in fermented rice. You may. Ferment rice without curd too. This is an ideal breakfast or lunch during Summer as it cools the body.

So you can't depend on food ferment for a b12 deficiency. However, it surely is a great way to maintain your b12 if you have no deficiency. I never said you can depend on fermented rice for a deficiency. But making it a part of your diet can help you in the long run.
Better to add curd before consuming - if you add curd at beginning only lacto bacteria will grow

If you are b12 deficient, go for doctor prescribed supplements. Fermented rice won't increase them quickly. It takes time and also depends on the type of rice used, duration of fermentation

Hello, without curd, i just place cooked rice ( lunch leftover)and add water n salt. Let it sit for 6 hrs at room temp and then eat everything at dinner. And thats B12. Right?
@@suzielama7286 if you are deficient in b12, then this kind of supplementation will take long to replenish your levels. in that case, please take b12 supplement as prescribed by the doctor because too low b12 can cause a number of serious problems dear. However, if your b12 is okay, fermented rice is the best way to maintain those levels. i hope that makes sense.

Dear, I will post a new short video on your query ..stay tuned...the only thing is that in hot weather, if you plan to ferment rice overnight, shift it to the fridge after 3-4 hours. Fermnetation will go on in the fridge too , but at a slow pace...fermented rice doesnt go bad easily if you add salt to it... it will only taste sour...remember, fermentation is one of the best ways to preserve food...iwill share more tips in the video.. hope that helps.

My dear, not all forms of aluminum is bad. In Odisha, aluminum is the most widely used material for centuries. They cook everything in aluminum.Only low quality aluminum is bad.
Pressure cooker is aluminium and used by most 😊
Use anodized aluminum. It has oxidize layers on the surface that don't react with any chemicals. And can sustain high heat..it acts like ceramic layer.

But if i use leftover rice, then im cooking it the normal way with the optimum amount of water and not discarding the excess water (because there is no excess water). So the starches will still be present. Will it work then too?
Well, yes, it works. However, try to get rid of the excess starches... Don't discard it though, you can use it as a hair conditioner.. It is good for skin. You can give it to plants . I never waste it.

Food ferments develop vitamin K during the fermentation process..so rice too should..but if your doctor has prescribed vitamin k, please don't take fermented rice as a substitute.you can include it as part of a balanced diet though, not as a medicine replacement

That's a wrong notion dear. We use salt for lacto fermentation projects. In fact, salt acts as a preservative and prevents spoilage. It doesn't hinder the fermentation process.

If you want to take it on an empty stomach, please start small. You ll see how your body responds. That ll give you an idea

It does not get spoiled easily. Fermented rice goes bad only if you don't change the water daily if you are keeping for long. It ll smell bad too.. In extremely hot conditions, you ll need to change the water.

Wth water alone..rice is generally fermented with water and salt alone. You don't need curd. Since I love curd and the aroma of rice fermented with curd, i add it. Otherwise there's no need. Rest of the process is the same

Earthen pots are useful in keeping fermented rice cooler as compared to metalware. That's the reason we prefer mud pots for fermentation during hot summer days.
Common salt will destroy all the good bacteria. Pls use sindha namak.
I use pink himalayan salt ( sendha namak). How does salt destroy good bacteria? My mother in law and her ancestors have been using common salt all their lives for this purpose.
According to ayurveda, normal salt will kill the bacteria. Please check. I have heard from many sources.

Metal utensils are not good for health bro especially alluminium utensils which we india use more in daily life and earthen pot are good for our health and environment, it's not about being modern it's all about what should we use that good for us like people nowadays use plastic plates for eating food and they eat micro plastic.so being modern means use something that helpful to our health and eco-friendly 👍
