After I finished my BHM in 2002 I started working in a 4-star Hotel in Cochin in F&B Service. For every Banquet function and Buffet Lunch, the restaurant would have Curd rice & Pickles as the centerpiece. I have never bothered to taste it. But when Chef Kunal Kapoor was making it my mouth was literally drooling and brought back a lot of memories. Thank You, chef. Will definitely make it either tomorrow or the day after.
Hi Kunal Sir I am a big fan of yours just a suggestion Coconut oil is the best for tadka To keep it light on the tummy. Ghee goes best with coconut rice to enhance sweetness of the cashew and coconut Also a pinch of asafetida in the tadka makes it taste very good give an earthy and a little sour punch to the curd if you are using fresh non sour curd Traditionally this is a common man’s food so sundried curd chili or mor milagai is the classic combination 🙏🏻😊
All time favorite. While traveling my mom used to make curd rice by mixing the rice only with milk and adding very little curd so that the rice becomes perfect not gets the right texture & taste & does not get sour. So nice I got my childhood memory. Awesome. Thanks a lot.
It is called Daddojanam in Telugu states. In many temples it is also served as Prashad. But many like to eat it when they want to cook and eat something fast and also to cool our stomach. We also add Chana dal and 5 or 6 peppercorns in tadka.
It’s called mosaranna in Karnataka. Mosaru meaning curds and Anna is rice. Very very cooling recipe for this summers. Also light meal for dinner especially when the lunch is heavy. In our house, we all love to eat anytime. In Brahmins, eating curd rice indicates end of the meal and compulsory. Also we believe that it’s good for digestion.

Kunal , if you add few pomagranate it looks colourful and tasty.Further we add preserved green chilli fried in oil.( green chilles are slightly slit at the end and soaked in thick curd and salt and sun dried alternatively soaking and sun drying until chillies obsorb all rhe curd.When fully dried we can store for months together).we call it mor milagai in tamil nadu.cut these pieces, fry and add to this curd rice.

The menu offered a wide range of south- Indian meal one of the succulent dish was curd-rice which my taste n my digestive system too.served with lemon pickles 2 mop up the deliciously curd-rice. In summer, we add finely grated juicy cucumbers too for the additional cooling that it gives to our body. Thair Sadam tastes amazing with the fried Thair Mulagai (yummylicious).. i.e. chillies soaked in salted curd and sun-dried.. My best comfort food.. anytime❤

Oh no this reminds me of my sister.when we were kids our helper used to come to all our schools in the afternoon with basket for each of us Hot meals . A tiffin a napkin a plate a forke spoon and knife and waterbottle ofcourse. .There would be chicken fried rice fried fish or byraini or chapati,or porota etc Now my sisters friends would bring curd rice,tamarind rice lime rice etc .We never get to see them being prepared at home .So she would exchange her tiffin with them.All fine then , ,but the moment she would come home in the evening her throat would start irritating .She used to get sore throat very often .She had tonsillitis. My mom used to wonder how she was falling sick so often .she slowly started investigating amoung her friends and found out that she was exchanging her tiffin. Now my mom instructed my helper Velayudhan to keep a watch on what she was doing .She also send another extra tiffin for her friend .This was how she used to fall sick in Chennai. Fed up of her game my dad sent her off to the hostel in ooty.under strict control. That was a great reminder. I too love curd rice

Add ice cubes as well. They will slowly melt and keep the dish deliciously cold..
