지난번, 오골계를 주셨던 어르신의 밤산으로 갔어요.
10,000평이 넘다보니, 밤나무가 한가득!
그만큼 허리를 펼 시간도 없이 열심히 밤을 주웠답니다.
몸은 힘들었지만 정말 재미있었어요!
윤기가 좌르르 흐르는 옥광밤으로 만드는 밤간식!

[율란 레시피]
- 재료 -
밤 20개(400g)
계핏가루 1작은술
소금 약간
꿀 2큰술
잣가루 약간
1. 밤은 씻어서 물을 부어 30분 정도 삶아 남은 물은 따라 버리고,
잠시 뚜껑을 덮어두었다가 꺼내어 식기 전에
껍질을 벗겨 중간체에 내려 보슬보슬하게 고물을 만든다.
2. 밤고물에 계피가루와 소금을 고루 섞고, 뭉쳐질 정도로 꿀을 넣어 반죽한다.
3. 반죽을 모양을 빚어 밤모양으로 빚는다.
4. 밑부분에 꿀을 살짝 묻힌 후 잣가루나 계피가루를 묻힌다.

[대추단자 레시피]
- 재료 -
찹쌀가루 4컵
대추 15개
대추다진 것 1/2컵
물 3큰술
밤 10개
대추 30개
꿀 2큰술
1. 찹쌀은 깨끗이 씻어 일어 5시간 이상 불려
물기를 뺀 후 소금을 넣어 가루로 빻는다.
2. 찹쌀가루에 고루 물을 준 후 다진 대추를 섞어 버무리고,
찜통에 젖은 면보를 깔고 찐다.
3. 밤은 속껍질을 벗겨 곱게 채썰고,
대추는 씨를 발라내고 곱게 채 썰고, 밤채와 섞어 고물을 만든다.
4. 쪄낸 떡을 절구에 넣어 꽈리가 일도록 찧은 후
도마에 소금물을 발라 떡을 1cm 두께로 펴고
꿀을 고루 바른 후 길이 3cm 폭 2.5cm로 썰어, 고물을 무친다.

[두부 만들기 레시피] - 재료 - 콩 5kg 황잣 2컵 들기름 물 36L 간수 1. 콩을 한나절 정도 불린다. 2. 콩을 잣과 함께 맷돌에 곱게 갈아준다. 3. 곱게 간 콩물을 끓인 후 들기름을 살짝 넣는다. 4. 식힌 후 고운 면보에 거른다. 5. 면보에 거른 콩물을 냄비에 붓고 끓어 오르면 불을 끄고 간수를 넣는다. 6. 몽글몽글 해지면 잠시 기다렸다가 네모진 틀에 면보를 깔고 부어서 굳혀 식힌다.
