I made a croaker pancake, Korean Sausage(sundae)and dumplings with a croaker that I got as a present

In the Joseon Dynasty, in order to beat the midsummer heat,
It is said that the common people ate Dog Meat Soup, and the nobles ate Croaker Soup.
It was a precious ingredient.
Even now, we don't eat croaker very often because it's expensive and rare.
An acquaintance who works at Noryangjin Fish Market,
brought in a big one weighing 7 kilograms!
He even prepared sashimi himself.
Each part had a different flavor and texture,
and the unique aroma, savory flavor, and subtle sweetness of the fish. It was delicious!
With the leftover sashimi, we made a special noble dish.
We made shrimp stuffing and wrapped it over croaker fillet to make Fish Dumplings,
and put stuffing in an air bladder to make chewy Fish Sausage!
Then, we boiled the head and bones of the fish
to create a flavored Gamjeong(Red Chili Paste Jjigae) and minced beef topped with mullet.
My acquaintance and I were both impressed that there were no wasted parts!
